Geez you walk around ballarat sometimes in search for decent sushi and Japanese food in general and you keep getting disappointed. One day though, a little gem popped out of no where and hit me with the best sushi and Japanese cuisine I've had in a long time... great customer service, great food and just a wonderful experience overall.. This ones here to stay and as much as my wallet would hate me saying this, I'll probably go back everyday for some more of that sushi!

I had a raw wagyu beef bibimbap and it was really delicious! The texture of the beef and lots of vegetables with sweet spicy sauce mix was well balanced. Good price as well!

Amazing presentations with the sushi's and the quality of food was brilliant! Great and fast service, we were also given a surprised compliment side dish of chicken dumplings from the chef whilst waiting for our orders. The Bulgogi bibimbap and the ramen's were also absolutely delicious, we will definitely be back for more!

Good food, great place to eat - but the opening hours are impossible to make this a frequent place to eat. Please change your hours to be open after standard business hours? Edit: Updated to 5 stars after news of additional opening hours! :)

Deliciously fresh sushi, both handrolls and packs. Small selection which means everything is freshly made and you can tell -its SO DELICIOUS! You get soy sauce AND ginger AND wasabi with all Sushi which is awesome Some hot dishes too which ive not tried yet but they look fantastic and also seem very popular. You must try! Love it.

Due to the queue during lunch break, I tend to call and order for pick up- works great! Food is great too! I love their sushi, bibimbap and bento box choices! Vegetarian friendly as well.

Sushi Nova is great value straightforward Japanese that doesn't skimp on flavour. Really delicious menu items with a good level of variety. Sushi is top notch too, probably the best in Ballarat.

Best Aburi Salmon in Ballarat, the Spicy Chicken Karaage Donburi bowl is also good, could do with more rice :)

Authentic Japanese restaurant. I love it so much. The Japanese curry with chicken katsu was so delicious. Agedashi tofu had a great texture and seasonings. Veggies Tempura and tofu bento was a bargain! Additional miso soup for $2. Limited dining area and the place get crowded with long queues once they opened. Friendly staff and delicious food at an affordable price. I will be back for sure.

This is definitely the best takeaway Japanese place in Ballarat. And best Korean too I guess. Since hearing about it 3 weeks ago, I have been back way more than I should have and have tried as much of the menu as possible. The great thing about Sushi Nova is the attention to detail. Everything is simply done right. They don't try to do too much; what they serve (whether it's a shoyu ramen or a bibimbap) is a great version of what you expect.
