Chris and Greg and their team have done an absolutely amazing job with what was once the nurses quarters for the base . Transforming the old mason cafe into a rich cozy comfortable bar/restaurant , they have integrated 1920s style with beautiful and intricate furniture and dark brooding wall paints . Subtle features such as the newspaper rack
and window dressings make the atmosphere one of the best in Ballarat , aided by the hosts of course .
The delicious menu offered is served up by head chef Julie who is honestly one of the most lovely women in hospitality . The dips are to die for but you can't go past the lamb cutlets . Get in my belly ! The chicken lettuce taco cups and toasty roasted Rosemary potatoes are also worth a try as well .
The lovely atmosphere and generous happy hour Friday's make this one of my favourite places in Ballarat . Greg , Chris and Gus are happy to slow down and have a chat with you as well - another rarity .
I will post some photos shortly but I expect Bar WaT to continue to flourish . Fantastic !

Out of Towner visiting for the weekend. The atmosphere and feel of the place was cool and relaxed. The tapas was delicious. The arancini balls and lamb cutlets were cooked perfectly. Excellent service would highly recommend

Bookings are the way to go
The perfect spot for dinner on a Saturday night. The interior is beautiful, from the feature wall of different timbers to the tables made out of doors. It was interesting talking to the staff about the history of the building and you can see how they have tried to capture snippets of what it once was. Their menu is spot on with the best possible choices of tapas. There was only two of us but we wanted to order one of everything! Unfortunately we had to narrow it down so we went with beef carpaccio with chili and lime dressing which was fresh and full of flavour, saganaki cheese with brandy lit on fire for a dramatic look and taste, mini chicken parmas with a sweet relish instead of plain sauce and our favourite dish of Arancini balls which were filled with pumpkin and fetta. Everything was portioned well and we managed to squeeze in a snickers cheesecake which was rich and delicious. Friendly staff who wanted to make sure you had a good time, reasonable prices and great atmosphere! 5/5 from me
Thanks Bar WaT for great tapas , wines and service. .
We all had a fantastic time last night sampling your food, beers and wines.
Our visitors from the Mornington Peninsula were very envious of the dining experience you provided for us in Ballarat.
Great service, wines, boutique beers, ambiance - menu looks delicious and cannot wait to sample on our next visit. A big 'Yay' also for Happy Hour. Our new local spot to visit and imbibe in a lovely setting.
Friendly staff who know their wines. Great atmosphere, cozy and elegant. Great food. Loads of vegetarian options and a great list of mocktails as well.
An everchanging range of wines, and tasty dishes. The dessert tasting platter is a must. The staff are friendly and know their gins too!
Fabulous. Great atmosphere and my cheese platter was scrumptious. Will be back again.
