Consistently gracing Australia’s top restaurant lists, the two-hatted Biota is a must-do for anyone serious about eating, or just anyone visiting the magical Southern Highlands.
Husband treated me to a weekend in the Southern Highlands as a little post-birthday escape. I’ve heard about Biota and always wanted to try it, so we built the weekend around our planned visit. We even stayed here on the Saturday night that we ate. Both of us thought from the photos of the countryside on the website that both the restaurant and accommodation would be out in the bush, overlooking a field! But it’s just a little ways from the town centre, so not quite as pretty or remote as expected. The room is very stylish though.
Great dining experience. Got a cozy spot on couch by the fire. Standout dishes of the night was the octopus with tomatoes and basil (so much flavour in the little dish) and bitter chocolate dessert (loved the smooth and crunchy textures, presentation with the dried milk bits, balance of sweetness with slight saltiness). Next would be potato with whipped roe. Loved the creaminess and the saltiness from roe. Whole fish was not a pretty dish but whatever it was that coated the skin was full of flavour. All the flavour was on top so parts of fish without it were a little bland. Lamb was cooked well and quite a big piece of meat so enjoyed it at first but then became too much meat. In hindsight, since it was the 2 of us, should not have ordered fish or lamb as these were quite large. Should have ordered more smaller dishes to sample greater variety.
We arrive for late brunch/early lunch this fine Monday. The place is still preparing for the throng.
The waiter is personable and efficient, albeit a strange, subtle discomfort with our party of 7, including 2 littlelies. Perhaps we don’t fit the white linen Bowral demographic.
Not having been here before, the waiter was helpful with his suggestions about ordering - 3-4 from the entrees, 7 of the mains. Hang on - there are only 7 mains? And we don’t really like the sound of two of them (steak tartare and fish head) - so now what? Ahh, there’s a scampi special. We’re still the only ones in the place.
The dishes arrive, and they’re lovely - particularly the scampi - superbly fresh, soft, delicious, not overwhelmed by the garlic/lemon. The croquettes were pleasant but nothing out of this world. The salumi with pickled chillis was rubbish.
The tortilla of pork belly was first class. The beef brisket burger was ok, but the beef shin was the pick. The chicken wings were all a bit agricultural in their presentation, but very tasty.
No room for dessert, but time for a very good macchiato. Interestingly, no petit fours (or indeed anything of that nature). No amuse bouche either, now that I think of it.
Space is minimalist and kinda funky with the driftwood art intrusions. Some Mum has said to their directionless adult child that they think they’re artistic/clever.
Only negative is charging for the bread - prices aren’t that skinny as to justify the desperation of such silliness. Maybe the regular patrons over-participate, but this frugality is out of place.
The pace was a little offputting. We had a team of waiters veritably running dishes to our table. Am I being too harsh? Mistaking efficiency for disdain? Hard to tell.
Great ambience and service. Staff were friendly and attentive. We came here after friends recommended it to us as a must do when in the southern highlands. Food was decent, but a little overpriced for what it was.

I visited Biota Dining in the late afternoon for pre-dinner cocktails. I am a martini aficionado and was pleased with their eclectic choice of premium gins from around-the-world. The lady bartender was most accommodating in mixing according to my specifications. I would certainly return.
The girls and I went down to Bowral the weekend of my birthday. Biota was the pivotal element of the trip. The package we booked was $285pp for a six-course dinner, an overnight weekend stay and brunch the next morning all at the one location. It can sometimes be hit and miss with degustations, even if you’ve heard many good things about a particular place, just because the menus tend to change often. Nevertheless I was excited, it being my first regional (two) hatted restaurant experience.
Biota dining boasts 2 chefs hats and an even well paced rustic environment. The staff were so friendly and accomodation and the food was lovely And creative without being too pretentious. We had the summer degustation menu. There's quite a lot of seafood but then I love seafood. I loved it and will definitely return.
I’ve previously only known Biota for its degustation menu, but it also has a more casual lunch / BBQ menu. The best part of the casual variety is you get to sit outside on the terrace overlooking their idyllic garden, pond, vegetable patch and hen enclosure.
Just outside of the Bowral town centre, Biota Dining is a fine-dining restaurant shrouded by a tall row of bushes along the main street. There is limited parking outside the restaurant but don't be discouraged by the sheer number of cars filling the car park - the spots may be occupied by people. attending a party/function in the small area next to their bar.
Biota Dining offers both degustation tasting menu ($145+ pp; requires reservations beforehand) or bar dining during lunch hours. As this was a last-minute food stop, our group didn't have a booking so we rocked up to see if they were able to fit us in for a late lunch.
Had an excellent time dining here for a wine showcase for McWilliams. The food was delicious whilst restrained- which really showed off the quality of produce which is grown on site. The highlight dish for me was the beef cooked over hot coals- garlic and preserved elder.
Great atmosphere and astonishing experience~ drove 2 hrs to get here and try biota for the first time.. Everything was fantastic! Great service! Very delicious cocktails~ will be back for tasting menu👍🏻
Went to Biota dining for a late Sunday lunch. It was a nicely styled space with seating outdoors as well. It was a sunny day so we sat outside with a nice view of the pond. Took a little while for the waiter came out but when he did, came out and engaged with a quirky and sarcastic tone, but funny. Because we were here for a late lunch, we ordered a few beverages; fresh mocktails (a fruity one and a lime and mint) and the boys got a whisky and beer. We didn't eat from the degustation menu, rather the bar snacks and got a few to share. First we got the salt and vinegar home fries; nice flavour but could have been crispier. We got the smoked cheeseburger which was also nicely flavoured on a soft bun, the meat was just a tad overlooked. We got the bowl of roasted chokes which were a generous serving on a purée. Then the fried pork katsu terrine (which was essentially a pork katsu sandwich with mayo) and nice, but again a little overlooked. We also got the home made tarama that came with potato chips. Really nice dip with the roe sitting on top. Another smaller dish we got was a bowl of fried chicken and pickles - three wings that had a bit of kick, smoked paprika to them. From the larger dish menu we got the Mac and cheese which had a fried rye through it - very tasty.
The two-hatted Biota Dining has put Bowral on the map as a foodie destination, just a 90 minute drive away from Sydney in the gorgeously green hills of the Southern Highlands. If you’re like us and want to enjoy Biota’s 5 or 7 course degustation dinner to the max and not have to worry about driving home, Biota has a good value Dine and Stay package which gives you one of their rooms in their adjoining lodge to roll home to after your meal, for just a little bit more than the cost of their degustation (more on this later).
Having the last day of a long weekend to spare the Foodie Mookie crew and friends looked around for for a foodie day trip destination. Pookie had asked “where is Bowral” a few times when looking through regional NSW dining so on this day the Foodie Mookie crew chose Biota Dining and made a booking. Having set out at 10am the crew and company arrive to Bowral right on midday at the appointed time and progress into the restaurant proper on what was quite a chill day.
Staff amazing. Ambiance is very warm and intimate for couples. The food is truly fantastic. Out of the 7 dishes I could not fault a single one. Having eaten at a lot of other well established restaurants this seriously contends with any other hatted restaurant. This is a place for real foodies.
And then there was one… and this is it! My 100th and final Top 100 to complete the 2016 list! Once again, it’s one of those places that has been on the list for a number of years but I just hadn’t made it as it was a little harder to get to being in Bowral, around 1.5 hours south of Sydney – the town where the great Sir Donald Bradman grew up and learned to play cricket.
This Nordic style restaurant is probably the closest you will get to Noma without going there. Only 1.5 hours from Sydney, it feels like a getaway as soon as you drive into thw gates of this beautiful restaurant, accommodation & gardens. Even near the car parking area are herbs ans vegetables that talented young chef James Viles uses in his kitchen. The restaurant is spacious & airy with a beautiful large fireplace at the front with stone benches surrounding it, perfect for a glass of wine in winter before you head in or for big groups. Start with a cocktail as they are all beautiful & delicious, awakening the senses ready for your meal. Then there is the food, each dish is so beautifully crafted, reminiscent of nature & the roots of the star ingredients. Like a dehydrated jellied beetroot looking like a large leaf, covering the ingredients underneath so that you need to "unearth" it to doscover your treasure. The food & wine are both so reasonably priced. The staff helpful & friendly. You wouldnt want to leave.
We had the Summer seven course tasting menu and everything was exquisite. Highlights for me were the goose ham, optional cheese platter and frozen yoghurt. Can't wait to return.
With two hats under their belt and a menu created from their own garden, Biota is leaps ahead of the competition. Naturally, I expected a gastronomical spectacle when we pulled up into the driveway of the estate.
The serenity was welcoming and the resident ducklings sunbathing by the pond were mesmerising to watch. Once we entered the double doors, a waitress ushered us quickly out to the bar lounge before placing a snack menu on the table. We queried about moving to the restaurant for lunch and after seeking permission from the chef, we were let in for service.
It was all a bit odd, seeing as we were two of only four people having lunch (superfluously prepared by 5 chefs in the kitchen). We chose to go course by course at $23 and settled on the celery, freshwater fish, pork loin and beef cooked on charcoal.
Complimentary starters of roe with charcoal and spring flowers and goose ham, kicked us off with a bang. The roe was as tasty as it was aesthetically stunning. Dark rye bread was fresh out of the oven and complimented beautifully by the slightly smoked whipped butter presented on a chilled rock.
Unfortunately we did not enjoy our chosen dishes as much. The celery was overpowered by the sour cream and a few larger peas in the bowl were raw and firm. The freshwater fish had a distinct 'fishy' taste and contained a giant bone which found its way directly into my gums. Again, sour cream was used and it just did not work at all for me.
Pork with elderflower was enjoyable but slightly salty, with the loin having a texture of smoked leg ham. However the star of the day was the ever popular beef cooked on charcoal with prune and burnt butter. The meat was perfectly grilled and the prune puree was subtly sweet. Crisp cracker added a much needed textural element and made for a winning dish.
Unfortunately we could muster no more room for dessert and sadly wasn't able to try the recommended mums roses.
Waitresses were pleasant, knowledgeable and constantly refilling glasses. Food service was efficient and prices are reasonable. Unfortunately, my meal (based on the food) can only be described as mediocre and there are no immediate plans of returning.
A friend's wedding was held near Bowral NSW which provided an opportunity to check out Biota Dining. Some friends and I went there for lunch. Biota offers either a 5 course ($125) or 8 course ($175) tasting menu which is changed seasonally. We decided it was perfectly reasonable to indulge and chose the 8 course menu. It was a gorgeous day so we were seated outside on the deck overlooking Biota’s small pond and garden.
Outstanding, hyper-local cuisine. Produce and (for the most part) wine from the surrounding area of the Southern Highlands. We had the 5 course Summer tasting menu. The highlight for me were the lamb (pictured) and local grain pasta with a rooster stock. Paired the menu to an aged local Riesling from Tertini and a Pinot noir from Orange. Well worth a trip from Sydney.
It’s looking like a warm summer, but back in cold wintry days we took a Thursday off to do a day trip to Bowral and surrounds. The main purpose of our trip was actually to try Biota. We had a taste of Biota during the Taste of Sydney festival, where we sat on the Dilmah table to watch a cooking demonstration using typical ‘leftovers’ and then taste what got created. It was pretty impressive and, sure enough, we saw the same chef again when we dined this time in winter.
Never gone anywhere else for breakfast at Pyrmont Growers Market since I tried the black sausage-egg- onion jam- white egg aioli roll from Biota. The combination is sensational and worth the queue. I always buy two and never share :) This month, I met a man who drove in high speed from Palm Beach just to get these buns for his wife and was told "Sorry, we ran out of black sausage". He even said he would have paid triple the price. Hearing that, I was tempted to sell mine for quadruple the price but cancelled the thought. I am saving Biota @ Bowral for a special occasion :)
Took my wife here for a birthday treat given that she is a good cook I want to challenge her taste buds and reading the menus it concerned us both but the creative chefs along with friendly staff had our minds at ease and delivered probably the most exciting meal either of us had ever faced. The matched wines were perfect and our young and enthusiastic waiter would fit confidently in any top restaurant as a similiaire. A night we won't forget in a hurry for all the right reasons.
Beautiful and delicate food. Wow! Each bite was an explosion in my mouth. Flavours and textures worked wonders together, creating delicate and intricate dishes that looked more like works of art.
The freshly baked rye bread was warm and fluffy, with the soft yet cold butter complimenting it perfectly. The egg dish with milk curd and ravioli was probably my favourite while my partner loved his lamb breast dish.
Service was helpful and informative. We enjoyed being able to watch the chefs cook in the kitchen, with the organic atmosphere created by the dining room decor a perfect compliment to the food and ethos of Biota.
Can't wait to eat here again next time I am back in Bowral!
Good Food, Equivocal Service. The food was imaginative and really very good, although I'm sure I had a tinned peach as part of my desert. The space itself was delightful, and has a calming ambience with clever use of lighting and pistachio green, which kind of compliments with the name 'biota'. My guilty pleasure was in arriving early and looking at my fellow diner's bemused faces as they were greeted with dried squid paper on a spike sticking out of a pebble. No one seemed to know quite what to do with it: some gallantly chewed through, others ignored it and one lady hid hers in her handbag.
The disappointment was the under informed staff, who generally look a bit miserable. One of my dishes contained oxalis and having a hunch that this was a herb, I asked the waitress: 'That's a herb isn't it?' To which she replied with a stutter, 'mmm...Its...vegetation', 'Yes, but what kind of vegetation?' With a slightly upset look in her eye she rushed off to the kitchen and came back minutes later to say that it was 'citrus, like sorrel'. Fair enough. Whatever. I guess the important thing is it did work well with the charred beetroot and vegetable peelings.
Would I go back? Yes. Would I recommend to others? Yes, but download the pdf menu first and do a google search of the ingredients, that way you'll know for sure what you're getting.
THE CHEESE. The cheese is just AMAZING... That's all for now.
Amazing desserts. The savoury dishes are also very good, but I feel the standout is Biota desserts.
Was to be a Romantic Dinner. Biota's food was very imaginative and special. Unfortunately, being seated facing the kitchen, I spent the entire 5 courses listening to the chefs and staring at a very large photo of a naked woman's back, boobs and arse covered in seaweed, rather than being fully focussed on my wonderful partner as I normally am when we are spending time out together. I mentioned many times throughout the meal that he should have been sitting there instead of me. I would recommend that if you are going to go to Biota, eat first (I was still hungry when I got back to our accommodation regardless of how many glasses of water the waitress gave me) and book more than a month ahead, so then you may be able to request a table that is not in the middle of the room staring at the kitchen and which may be quiet enough that you can hear your dining partner speaking. The experience of the food combinations, detail and flavours was still worth the visit.
We are locals and have been to biota dining a few times. And I must say we have loved it each time. The food is interesting and beautiful and it is inspiring to see chef James Viles attempting something so contemporary and innovative in this usually highly conservative area. The service was attentive, if a little inexperienced, but we were really here for the food, which definitely delivered. Will absolutely go back and wish James and his team the very best in the success of this venture.
Incredible country dining. Hands down the best country restaurant we've visited, cute and charming but smart and sleek. The food is innovative, fresh and fun with some truly brilliant dishes like the sweetened root vegetables with artichoke gelato for dessert we were blown away. To say the service was impeccable would be understating it - they really were flawless. Highly recommend for any occasion, courtyard with a more casual menu is just gorgeous.
Grazing in the sunshine. Enjoyed a great lunch far from home (Perth) on the holiday Monday. Great salad and humus and fresh and zesty prawns and squid. Service was very helpful and considered for some of our GF requests. Great local pinot. Left very satisfied and relaxed to the winery to find mor of that pinot.
This is a rave review! It couldn't really get much better. Sensational,interesting food brilliantly complimented by glorious wine in a fabulous roomy comfortable space with friendly,witty, knowledgable, attentive and unpretentious staff. Park in their grounds. How much better can a restaurant be?
The Tapas is great, however that is within the talent and capabilities of the chef. The food in the fine dining is an overly ambitious effort by a chef who has very little understanding of food marriages, all effort is put into presentation and the shock factor of the ingredients chosen, I seriously dout anyone taste tests the menu after it is written. My wife summed her dish up nicely :- "he has put this with this and then this (I can't remember the ingredients), as an artist he has created a big blob of purple". As said though the Tapas is great, wine list is excellent and I love the Siera Nevada Pale Ale. The service from the openly gay waiter was exceptional, and a nice guy to boot. So in summary having been to both parts of this establishment several times, I can highly recommend the Tapas but forget the fine dining.
I have been to this establishment twice now... And both times I can only say amazing things about everything and everyone. The food was impeccable... Flavours were delicately balanced and presentation on the plate was like looking at a masterpiece. The staff were attentive and knowledgable on all the items of the menu.
I can definately say that this is one of my top 5 restaurants and encourage others to try the biota experience.

We thoroughly enjoyed our dinner at Biota. We ate in the lounge from the tapas menu & everything was delicious - from the duck crepes, hand cut fries, delectable pork belly & cute mini wagyu burgers, it was all so yum. We also had the churros with chocolate sauce for dessert, a great warming finish to the meal. Service was excellent as it wasn't busy ( we were there on a Monday night). Would definitely go back!
Return visit, even better than the first time. We checked out biota not long after they opened. were very impressed at the quality of their dishes and the restaurant itself. this time around, we checked out their 'lounge' menu - between the 2 of us, we order the school prawns, the calamari, the caramel pork, the risotto and the mini wagyu burgers and oh, the hand cut chips! i have to say, there was nothing i didn't like! great service, elegant dining room, child friendly as well!

Something different. Two of us went for breakfast quite early one Sunday. He ordered poached eggs on toast, I ordered the truffle cheese toasted sandwich, coffees and churros and chocolate to share. Small portions, big on flavour. Next week one night, four of us arrived at Biota for the Tapas Menu. We sat near the fire enjoying our drinks and ordered dish after dish of the tapas on offer. I think we tried (almost) every plate on the tapas menu, then the dessert selection plate and coffees all around. High marks for taste and ambience. We all loved it and hope to go again. It's different, I like it and I recommend going to Biota. For something deliciously different, try it.
March 15, 2015 18 Kangaloon Road, Bowral NSW For Valentine’s day this year, Belly 2 was feeling romantic – he organised a surprise weekend away at Moss Vale, NSW. He booked a dinner for two at the infamous two-hat restaurant, La Maison Du Thé Regional Restaurant of the Year 2014/2015, Biota Dining restaurant for our Valentine’s dinner and we stayed at the enchanting Old Nunnery BnB . Located in the quiet and charming outskirts of Bowral, you will find plenty to do in this region of NSW including visiting Li-Sun Exotic Mushrooms Tunnel , Fly Tree Top , or even if you just want to sit back and relax, this region has magnificent hilly views. Back to Biota again. As a special for Valentine’s Day, Biota designed a beautiful four course set menu for $95 , $150 with matching wine or $140 with juice. The matching juice sounded interesting to us, we never had matching juice with a meal before so Belly 1 decided to give it ago whilst Belly 2 stuck with the matching wine. To start we were served a Dark Rye Oat and Yoghurt bread with a perfect quenelle of butter. The bread was not our cup of tea – it was a little unusual. Rye bread is denser than normal bread but this was denser again and the yoghurt topping was not needed. A nice, warm slice of sourdough would have been perfect as the butter was wonderfully luscious.

Biota Dining is located in the town of Bowral, in the Southern Highlands of NSW. The only time I have been to Bowral was to have a quick walk around the town centre and that was many years ago. This time around, we walked up and down the main street, and browsed through some of the shops. The Gumnut Patisserie was very busy and I could see the numerous awards the patisserie had won over the years, there was a lovely organic store in town and numerous cafes. Bowral has certainly thrived over the years. Biota Dining is located only a few minutes out of the town centre. There was so much green around the restaurant, with lovely ducks and geese hanging around the pond, a herb garden and a vegetable garden right next to the restaurant. I was excited to get the chance to dine here. I have heard so much about the restaurant and their emphasis on supporting local farmers and growers. Biota Dining is a true gem tucked away in this magical little town of Bowral in the Southern Highlands. They grow their own vegetables and herbs and farm their own eggs and meat. At Biota Dining it is about enjoying food fresh from the garden and serving quality dishes that is sure to delight the palate. The verandah It was such a delight to watch the chefs weave their magic through dishes. The complexity of each dish was remarkable. However, I must say it took nearly thirty minutes for each dish to come out. Service can be slow. Nevertheless, we did enjoy a fantastic meal with a nice relaxed atmosphere in this Scandanavian inspired setting. At $124 for seven exquisite courses it actually feels like good value for money and I would definitely be keen to return to sample the menu at different times of the year to examine how the menu changes with the seasons.
Hidden behind the green shrubbery is a haven for culinary charm headed by Chef James Viles who uses ingredients from local producers and from the lush Biota kitchen garden. It’s an establishment for an enjoyable dining experience amongst nature’s glory.

The sourdough is a pure craft. The best sourdough I have ever had. Complemented with cultured butter, it could be a meal by itself.

Biota held a pop up at Chippendale and we had an amazing time. Their modern Australian, rustic, delicious meals are designed to be eaten with your hands and create an intimate dining experience. We had an amazing time over dinner with whimsical waitresses and moorish food. The only thing I could fault was the lack of wait staff and parking but that didn’t affect the meal or experience.
Biota is easily one of my top 5 favourite restaurants in the world. I’ve dined here over a dozen times for breakfast, lunch, dinner and even just for drinks at the bar. Biota is also where my wife and I held our wedding reception, so this restaurant is a very special to venue to us. Their new EMD menu is superb, and the quality of produce is second-to-none. The creativity behind each dish is extraordinary. FOH staff are friendly and hospitable. To sum it, Biota is worth the long pilgrimage drive, and a place I will always return to.
I loved everything but I just wished there was MORE of it! Or rather, a-la-carte options. Perhaps it was because we visited on Easter Friday but I’d def come back if their regular dinner menu is not a tasting menu. Although this was a SPECTACULAR tasting menu.

Where to begin...? I had been looking forward to this for weeks! Suffice to say, you need to book weeks in advance. Our table was perfect, far enough from others and the quiet atmosphere allowed for my partner and I to engage in great discussions (unlike most loud eateries). You know we’re enjoying a restaurant when it becomes an addition to our list of potential wedding reception venues.
The host and waiters are delightful. A great balance of interaction and non-intrusiveness. Ash (the host) was an absolute blessing. She tended to our every need and ensured there was always a drink in my hand. The waiters comprehensively inform you of every ingredient in every dish and leaves you salivating before they’ve finished speaking. And you know a bartender is talented when they make an impressive espresso martini! The chefs also runs food which adds to the experience and emphasises their team culture.
We decided to bump up to the 7-course set menu. It wasn’t the most consistent menu, but there was some winners! i.e., kangaroo jaffles, 48hour roasted pears and the delectable assortment of entrees. There is a variety of locally sourced wines and inventive cocktails... something for everyone. The elderflower cocktail is a great palate cleanser to start the celebrations.
For those who complain about pricing... do your research first. It is expected, and there is no way you can enjoy yourself if you are enveloped with such inhibitions.

Such a delightful place almost in the heart of Bowral. Food was magnificent and the service was delightful. A perfect place for a celebration or an intimate dinner. The chefs menu was divine and it was very handy to have neat and comfortable accommodation on site. Would recommend to anyone that asks.
If you want to try some delicious and slightly experimental meals, this is for you. Not all dishes were winners, but each one is exciting and interesting, and you can tell that a lot of effort went into them. The dish we both liked most at dinner was the Kangaroo Jaffles, but the baked eggs for breakfast were phenomenal. The cocktails are likewise very intriguing and highly recommended.
Staff were fantastic, and the ambience was great. The breakfast was also amazing, and if you need a place to stay in Bowral then the rooms attached to the restaurant were very comfortable and beautifully decorated (although the shower floods the bathroom).
