Wow! I had heard this place was great so when the opportunity finally arose we jumped at dining in. Service was superb. Greeted by a professional yet bubbly Morgan we were treated to a choice of great tables. Quick drinks service and a thorough explanation of the quality menu ensued. I chose a bean burrito and fries! Service was hasty and the food was delicious. Great portion size. The cheeky waitress did pinch a chip but.... she is my daughter so we were very happy to share! Loved Hudson Corner would recommend for couples, groups and families. Great vibe.
Now been twice and both times very impressed. The Beef brisket was great and the Beef and Blue burger probably the best burger I have eaten and I go back a long way when it comes to comparing beaut burgers.
Served by my regular waitress Taija (goddess and conversation connoisseur), she brought out my Shroom Boom absolutely exploding with crispy mushie goodness and packed with fresh ingredients to diiee and sauce I'd like the recipe for please and thank you! On top of this, the fries tickled all my potato fancies and one day I vow to put an onion ring on that finger � I might still be recovering from the food hangover #noregrets #mycomplimentstothechef
Dropped in Saturday for a couple of burgers and drinks. My wife had the Cheese Burger and I opted to try the Brisket & Blue. Neither disappointed in the slightest, the brisket fell apart, easily the best burger I have had in an age. Even though it was busy the food arrived quickly and the staff were very friendly. Looking forward to working through the menu.
I can highly recommend Hudson Corner. We had fantastic service and great food. They also have some of the hottest sauce available in Brisbane so if you like it spicy, this should be on your list of must-visit restaurants!

I recently had a problem with an order I received through UberEATS, after contacting Hudson's directly I have 100% changed my opinion of their food. I returned Wednesday night with friends for a dine in experience which was amazing!!! The ribs were so tender and full of meat, burgers were fresh and beat expectation, all sides were on point - chicken wings are a must as they are the bomb as are the waffles for dessert!! Restaurant was clean, survive was fast, atmosphere was pleasant and staff were welcoming and helpful. Will definitely be returning =D
Great place, just found out they're connected to the Bluegrass BBQ at Eaton's Hill. Good to know there is another place close by for a good decent meal, at reasonable prices
If you're like me and my friend, and don't think the Extra Hot Buffalo Wings are hot enough, complain to the wait staff, then agree to hear the Secret Menu.
In our hubris, we ordered the Crazy Hot Wings: We had to stop after one bite - and I definitely felt it the next morning as well.

Really nice food. Started with a Ranch Fries, they were really nice. Three of us had hamburgers and they were massive. Didn’t come with sides and didn’t need. One had ribs, they were ok. Burgers were brilliant.
Amazing authentic American food. The meat is barbequed in the kitchen. There is a fully stocked bar, including the must-try alcoholic root beer.
So many things! This was our first visit and will absolutely be going back for a second. We loved the brisket and the cheeseburger, and will totally be coming back to try the pulled pork. Wasn’t too busy so service was pretty quick, the worst thing I can think of is probably that my wine was a little warm when I got it but drank it fast and moved onto a soda and then got so involved in my brisket eating that I forgot all about it. Awesome.
FINALLY! A good ribs place in Brisbane! I’ve been searching for really good ribs in Brisbane and they places usually serve up something between mediocre and decent. But, Hudson’s Corner is the real deal. We went as a family early on a Friday night, which is good because it gets busy around 7:30. The staff were great and even gave our little one some play-doh. Friendly, competent and helpful. The atmosphere is a little different – slightly enclosed but relaxing and casual.
But what people really come here for is the American BBQ menu, and the chefs don’t disappoint. We had a chicken burger, wings and a full rack of ribs. Again, you pay a premium for the quality but it is a great feed. The burger had decent bread, nice slaw & perfectly cooked chicken. The Chicken wings were good and the dipping sauce is a perfect company. But as mentioned, the ribs were the draw card. Meat was tender, tasty with a good amount of sauce. Best of all, there was a bit of mean on them – not cut right to the bone like some places. Drinks are a little expensive but nice - $10 for a root beer.
Overall, this was a great night out for a family, but would be best with friends for a later dinner. I’ll happily go back with either group.
I found Hudson's Corner about a year ago and have been there probably half a dozen times. I usually sit outside as we enjoy the people watching. I recommend this place to everyone who is looking for a laid back, stylish hole in the wall restaurant/bar. in the times that I have been there the service has been pretty good. I was surprised to read that it has not been the case. I would like to say that I have been there with family, including children 12+14, friends and business associates and though each time the atmosphere has been different it has been very welcoming and made everyone feel pretty cool. Regarding the food. I am not a huge rib fan, but I am burger fan. When I went to Hudson's the first time, I took my children the following day to confirm that the Brisket and Blue Burger was the best burger I had eaten in Brisbane. I was right. Now I don't order sides for myself as the burger is presented towering and I enjoy it as a meal by itself. It is one seriously good burger. I think I am the only person who is not a fan of the fries. I don't like French fries so that is on me. The people who have been with me have really enjoyed all the dishes too. I have tasted a fair portion of the menu and it is delicious. The prices are right too. This is not McDonald's and you will pay a bit more but the quality is there and is worth it. The drinks are as to be expected, and there a good basic choice of beer and spirits. Hudson's is as it presents itself and I have thoroughly enjoyed it and will continue to do so in the future.
I think this place is a little bit of a hidden gem. They have a good selection of foods from smoked meats, hamburgers and wings...all the good stuff😉. The hudson wings which where a good size, crispy skin and comes with a nice blue cheese sauce. I also had the beef brisket blue burger and was very impressed. The burger itself presents well and is very large making it look like its not edible in its presented form but the burger bun can actually be squashed down to a size that is manageable which doesnt compromise any of the burger. The blue cheese sauce is a stand out òn this burger, it really ties all the ingrediants together. The brisket is so tender, could have done with a little more but i could still taste it in the burger. The shop does look it could do with some touch ups but the service was really good. We will be back.
Ordered buffalo wings and coleslaw via UberEATS. Coleslaw is delicious and not super tangy like some can be. Wings are a good portion, and just a little hot. Blue cheese sauce is to die for!
Super helpful, friendly and great food! I could eat the buffalo wings for days. We called to let them know we were coming and they were really busy so they set up a new table and couldn't be more accomodating. Looking forward to having them as our local!
My wife daughter and myself went here for dinner. I had the brisket and my wife had the ribs which were both really good and highly recommended. The outside does not look great but the inside is nice and so is the service. The jalapeno poppers have a kick to them so if you don't like spicy foods be careful. Will definitely go back.
We went in on a Thursday night and the inside was unbearably loud due to a group of hipsters, thankfully the outdoor seating was quiet and peaceful.
We ordered the share plate for two and were confused with the portioning of the wings (3 wings between 2 people) the salad plate was admittedly a little light, however the ribs, brisket and wings were fantastic, the pulled pork was ok just nothing to write home about. Overall we will definitely return just with a few gripes
From the outside this place doesn't look like much. In fact we thought it was closed when we first arrived! The interior is a little bland and a decorative aspects are a bit all over the shop. Food-wise however, it hits all the marks. We shared a pulled pork burrito with chips. The burrito was massive and packed full of rice and meat without being too much rice (very rare!) It was delicious and the chips were really great.
We also had a platter with beef brisket, chicken wings, rice, salsa and beans. Fantastic. Oh WOW it was good! The beef was so incredibly tender and melted in the mouth. I loved the blackened edges, the flavours were sensational. The chicken wings were utterly yum with so much flavour and a terrific dipping sauce. The sides were also great.
This was a good amount of food for two hungry adults and gave a good variety from the menu.
Service was polite and friendly and our meals were served really quickly. They also have a great selection of beers, two taps but mostly bottles.
I'd definitely return, this is a fantastic bbq joint with stacks of flavour and a real hidden gem. So many bbq places are bland and very average but this place is seriously great. Highly recommended!
This is THE best brisket I've had in Brisbane. It has a great smokey flavour and really juicy. I also had the buffalo wings with blue cheese sauce which were AMAZING! I find there aren't too many decent American style food spots around Brisbane so am glad I've found this gem in Albion.
Great little low key restaurant. I eat here regularly - the brisket is out of this world.
The house BBQ sauce is definitely the star, though. Put it on anything and improve the flavour 100%! The wings, while good, could be a bit more 'Buffalo'
I booked my birthday dinner last night at hudson cafe as i had heard great things from people at work. I can honestly say it was one of the best meals i have had out in a long time. From the accomadating staff for our big group , fast service amazing food and great drinks. Highly recommended the ribs , brisket and the brownie for dessert was amazing. Will be returning very soon.
Sunday lunch with the hubby and son - having had American BBQ for lunch the prev day at a different establishment, I was keen to compare. Decor beffiting of an American BBQ joint. The brisket burrito was smoky and possibly could have done with a bit more pico di gallo however that's just nitpicking. The flavour was there. Husband's burger apparently was "okay" but nothing to rave about. The jalapeno poppers had good flavour and a nice bubbly burnt top. Okay selection of craft beers however nothing you wouldn't have already had. Unfortunately no kids menu so minus 0.5 rating.
Love the ribs and brisket.
A few more menu options would be a treat but when you're good at what you do I guess it's a matter of quality over quantity.
We rocked up Friday night and were seated easily. We ordered the combo plate with pulled pork and wings and the pork ribs. Both were delicious. My partner complained the wings were too smokey for his liking but I really enjoyed that aspect so i think that's quite subjective. The ribs weren't the slow cook fall off the bone type but I did not mind this. The sauce on the side which cake with both meals def had a bit of zing to it!
The service was good and the meals came out very quickly. Would love to return to try some of their burgers and sandwiches!
Good here is normally good, I have had two exceptions where I didn't feel it was up to standard however felt this came back to who the cook was at the time, when the owner cooks I have always enjoyed the food
Me and my partner came and ate here last night. We've been wanting to come here for a while. The food was great. Ive read a few reviews saying the portions were too big and thats why they were bit pricey, however they let you take home what you have left over and for the amount of food you get on the plate works out a lot cheaper than it usually would be at any other restaurant. The waiting staff were lovely and had great attitudes however she did get out drink order wrong which wasn't really a problem seeming we aren't picky. I would definitely come back again. I went here for a weekend date night and had a great experience. It wasn't too busy but there were patrons, which meant that it was a casual atmosphere but still buzzing a bit. The waitress was very nice and attentive, and the seating options were nice (I chose the bar, which was a nice option). I would definitely be going back here to try a few other options on the menu, as I feel like I have only scratched the surface of what the diner has to offer. It would be better if the parking was more accessible but this is only a hurdle and would never stop me from visiting again.
Food is great. I work nearby and have had lunch here a few times but always eat in. Twice I've ordered takeaway and twice my order have been wrong. The staff are nice about it though and eager to fix the problem. Cheeseburgers and pull pork rolls are great. Yet to try the wings. But I'll probably eat in from now on, only taking points off because of the takeaway order.
Hudson's has the best pulled pork burger I've ever had and I've never had chips like theirs at any other place. The interior is cute and cosy and their menu is simple yet plentiful. Portions are huge and the pricing is great. If service was a little better it would be a 5/5, just small things the waitresses could do to make you feel more welcome and acknowledged. However, if you get a chance to be served by the owner he is warm and welcoming and can give you a bit of extra info on the food/tips on what to eat etc
Best American bbq I have had outside of the States. Brisket was fall apart tender, slaw was fresh and crisp. Service was fast and friendly. A definite must do in Brisbane!

Great American style restaurant. I had been meaning to try this place out since it opened . I finally got around to it tonight and I must say I wasn't disappointed. I ate the Texas beef brisket and the hot buffalo wings. Both dishes were superb, the best American I've eaten in ages.
Best Chips. The hot chips that came with my pulled pork roll were awesome. Best chips I've had in a long time. Pulled pork was good too!
Food is amazing! Had a pulled pork and slaw roll, tops the one I had at yardbird.. Buffalo wings were also tight! Recommend it for good authentic American cuisine.
Getting better every visit. I have visited Hudson Corner a few times now for dine in and take away and I will go back again. While it definitely seems that they have struggled with the transition from food truck to bricks and mortar location, in my experience the owner genuinely cares about his customers and wants them to have a great dining experience. The food has always been excellent and it is good to see that they finally have a decent drink selection. There is still room for improvement with the service and atmosphere but each time I visit it gets a little bit better.
I had the cheeseburger for the first time last night and it ticked all the boxes for portion size, quality and flavour. The chips looked to be hand cut and were crispy and well seasoned.
I look forward to my next visit.

Nice food, service slowly improving. I've got take-out 3 times now and been happy with the quality of the food each time. I'd prefer a bit more of a spice kick in the wings but they are still tasty. They have got off to a slow start in terms of service though.
First time my partner and I went it was good, but the prices were way too high for the meal pack. We also didn't get any blue cheese sauce with the wings, which was disappointing. Overall pretty happy though.
Second time the prices had been reduced to an appropriate level (yay!), but they forgot to put the chips in the meal packs and also forgot the blue cheese sauce again. If I didn't live 15 minutes drive away I would have gone back. This was despite chatting to the bloke on the phone for about a minute to ensure we could get some sauce. The waitstaff seemed off in fairy land and gave us our food and were ready to send us off without paying. Lucky we're honest I suppose.
Third time everything went smoothly, and we got *almost* everything we wanted. Still no blue cheese sauce - fooled by the little sauce containers being full of southwest or some other sauce. I hear the blue cheese sauce is good and it's my favourite accompaniment to wings - I hope to try it some day. The addition of a bit of salad and the little cornbread muffin to the meal packs was a nice touch that added some variety to the meat-fest it is otherwise.
Nice to see the owner acknowledge here that they are working at improving the service. The food is really good, and fairly unique in the area. I'll keep frequenting them for now, and I'll keep hoping they can get some consistency.
The food is good and tasty.The venue is very relaxed so if you are looking for a nice restaurant you're in the wrong place. The service can be very hit and miss. I would probably just recommend getting takeaway. I tried these guys at eagle farm markets first and really liked what they did. The restaurant is more of a cafe and defiantly needs some love. I really want these guys to do well but feel like something might have to change before they can, hope they listen to all the other reviews on here.
That Diner Experience I love :). Ok seriously, just because this is close to the city.. don't think this should be like all the other restaurants because yes you will be disappointed in that sense. This place is more of a diner from back home. You can bring your own drinks... Sit back.. Talk to everyone, and simply put.. just have a great time eating out.
The Chef here is by far the most enjoyable person to meet. His personality and charisma adds to the overall experience of eating here. He it upfront and honest.. and next is the waitress. She completes the service with her lovely singing to herself and loving hospitality. Those two are just the complete package that I truly love when I'm dining out. Friendly people, not always in your face when you're eating, and knowing how to make you smile.
My review isn't based on a one timer. This is my second and won't be my last time here. First off let me tell you why I really like this place.. You can actually order your meal for a certain time and arrive with it cooked ready to be eaten, this is perfect and I love the idea. It's like dining in take away. If you do want to eat in, call ahead.. they can book up fast.

My first meal I order Smoked Pork RIbs with BBQ Chicken Wings (instead of the fries, which they were happy to substitute), Corn Bread, and a Brownie (my goodness.. seriously have one). There was a slight problem with the corn bread.. the chef burnt it lol. He came out and explained the situation and unfortunately I had to go, but he told me I could have it the next time I came back (and I did ;) ). The Ribs, were amazing.. the bone just slid out and the smokey taste was just awesome. The wings were beautiful white meat and basted with thick delicious sauce. That brownie, I'm a sucker for home cooked bakery goods. And with an amazing bakery down the road but closes at 2pm I'm happy to of found a great replacement :).
My second meal was a Cheese Burger with Bacon, Corn Bread, and a brownie (yes, they really are that good). I came in towards the end of shift on Sunday, and even though it was Sunday and everyone was still waking up from hibernation .. These two workers were still working on :P. I just love how casual and friendly conversations are, it's a nice change from the "Hey how are you.. what would you like" conversations you get elsewhere..
Anyways.. The food was great. The presentation of the burger just looked amazing, just look at the photos I uploaded. I love the ketchup, mustard, mayo combo :). And the corn bread was well worth the wait, so so good especially with the chipotle butter and the accompanied jalapeño dip (i think) ;)
Overall the Scores out of 10:

Food: 10, even with the burning of the Corn Bread the first time, they knew how to make it up and were friendly about it.
Will I go back: Most definite :) ... next time I think I'll try a brisket maybe, And I seriously want to try the breakfast.. Best meal of the day

Solid food and good prices for Brisbane. Tried a special pack for origin night including the brisket burger & pulled pork burger, slaw, wings, and chips. The brisket was amazing and I can't wait to go back and try it again. The wings seemed to be on a tomato-based which might come as a surprise to some who are expecting capsicum-y based buffalo...but I really enjoyed them and they tasted good. Staff were friendly and I can see us going back. Prices will make them serious competition for The Smoke in New Farm. As pointed out by another reviewer, the decor is simple, but it really didn't bother me.
Solid American BBQ. Got the takeaway pack and as their ribs weren't ready when I got there (was just on opening time) so they swapped out the ribs for pulled pork. The food endured a 20 minute drive home so YMMV
Got it home and unfortunately the wing sauce had spread throughout the bag - luckily it was on the bottom so no harm other than the sauce. Bit of a flawed container, they should put it in its own. That said, the chips stayed crispy so a plus for chips, a minus for sauce.
The buffalo wings: I didn't rate. They seemed oven baked, and probably could have done with a bit more time. They lacked the crispiness that usually accompanies the less healthy fried wings. The blue cheese sauce (that was left) was tasty.
Jalapeno poppers: These were damn good, a good filling, with baconey goodness!
Pulled pork plates: Strangely they came with fries in a pack that already had fries! given it wasn't a normal menu option, it's understandable, just a bit strange. Also came with coleslaw which would probably be better off in a separate container much like the sauce. I wasn't a big fan of the 'slaw, but I rarely enjoy it anyway. The pulled pork itself was damn good. Nice smokey flavour, perfectly cooked and falling apart.
A solid entry to the BBQ scene in Brisbane, more a no-frills diner like Carolina Kitchen, rather than a proper sit-down restaurant like The Smoke or Mighty Mighty.
I will be returning at some point to try their ribs!
Good little business. I live nearby so decided to try it out. Was happy with my food and the service was swift. These guys are just giving it a crack and they are only 6 weeks in. They need to work on ambiance, theme-ing and some other bits which are important to most people but they have the basics working in their favour. They wings are especially good and I also really liked the black beans as a side.
Great brisket!. Some of the best brisket I have had, smoky and tender. The ribs were also great, also smoky and not smothered in sauce.
Very tasty ribs, but quite small portions for the price.. I purchased the baby bbq ribs take-away and received about 20 chips (nice chips though), 2/3 cup fried black beans and exactly 5 ribs. Though they are thicker than the standard, and more tastier, I consider the portion size far too small for the $28.00 I paid.
I understand from a review that the philosophy is smaller portion sizes, but along with a smaller size must come - I reckon - double the number of ribs.
It's new, to this may be a teething problem...
Great brisket roll!. Just opened up in my neighbourhood, we tried the buffalo wings, pulled pork roll and Texas beef brisket roll at this American bbq style place. The brisket was definitely the favourite. Looking forward to trying the ribs soon.
