Review The Noble Experiment Melbourne - Collingwood

Bella Xena
Cute place. There’s an upstairs area with another bar and also a space downstairs. Both of which can be used for private functions. Downstairs has a dance space. No dance space upstairs. Games on main floor. $1 per game - you have Nintendo & seated arcade style. Not a fan of the lemon, lime & bitters. It is made with soda water instead of lemonade & there were hardly any bitters. Friendly staff.
Emily Smith
Loved it the chill mezzanine floor with ornate armchairs and chesterfield couches. Fab cocktails - the Rosie Posie is perfect Turkish delight in a glass! (Only one I don't recommend is the lavender cocktail, unless you're in the mood for a nostalgic hit of Nana's soap 😂) Nice selection of sour and fruity beers by the can as well.

Great venue, on point vibe, friendly staff, great for a function, will be back

This is an overdue review, but I have to leave comment and compliments where due. Tommy and Ellie are the scientists of cocktail making. There is a hazelnut concoction Ellie has created that is to die for- it’s like Nutella became and adult and got sexy in a drink! The Alpha Omega is delicious as well, can’t fault a sip of anything I tried! They are also just incredible people that bring good energy and are a treat to speak with. Go have an experience at The Noble Experiment!
Amanda Brown
Great drinks, great casual night out. Also, Tommy made this ripper cocktail.

Amazing venue. Love the great drink selection, and if you want something off the menu, the folk behind the bar know their stuff. There is always something new on the bar shelves as well! Also a big fan of the N64 and board games - especially during one of their Saturday sessions. Tommy and the staff are always friendly and helpful, and you can tell they all take pride in the venue.

Awesome place! Friendly staff and great drinks. Tommy and Ellie are so accommodating
Amy
A hidden gem in Collingwood, amazing cocktails and a quiet vibe. Recommend both the lavender and the Aviation.

Did not actually have any food here, because they NO LONGER SERVE STEAK. Just a note to anyone who intends to go for steak here with ZG. They only have pizzas for food (refer to the menu here). Pretty disappointing since we drove all the way to the city for a good steak as read in many reviews here!
Eat Good Melbourne
I was craving steak and after a quick browse through Zomato gold participants, I found some good reviews on the noble experiment. The venue is super cosy with a bar, pool table and arcade games. They were out of the croquettes but the waiter suggested the jalapeño poppers so we did, along with the chicken wings, pork and steak. It was my first time trying jalapeño poppers and even though I had heard about them in American movies I had no idea what to expect. I imagined spicy and tangy jalapeños but instead it was more like battered capsicum. The batter was really crisp and had nice seasoning and the sauce was creamy like an aioli. The chicken wings had a similar coating and were served with aioli and bbq sauce. Both were really tasty. The mains were both good too but it was a shame they were way too salty. The first few bites were amazing and then it just got too much. The pork is so soft and I loved the honey cabbage. The steak was cooked to perfection and had great flavour. Tone down the salt and they would’ve been perfect. Both dishes have great flavours and overall a great dinner with nice ambience and friendly service.

Beautiful moody venue, cheap and delicious drinks & tasty food.! What more could you ask for in a local bar. $15 jugs Was a beautiful surprise

Real rating 4.4 ⭐️ <br/><br/>We were lucky enough to be invited to try out dinner at The Noble Experiment! Here’s what we had!<br/><br/>For the main, we were served with horseradish cream, Dijon mustard and pepper sauce! Firstly, the meat was cooked to perfection (medium rare for me) and boy was it what I imagined it to be - soft, tender, juicy, succulent - you name it! It really felt like I was royalty eating this! I really enjoyed this with the pepper sauce and Dijon mustard which gave that extra kick! A special mention must be given to their sides such as the roasted potatoes and kale, garlic and chili! The kale was surprisingly good as it was flavored with garlic and chili!<br/><br/>For dessert, we were served apple crumble and vanilla ice cream, and a white chocolate and raspberry cheesecake! Both deserts were special in their own way! The apple crumble was warm and moist and definitely crumbled into my mouth! The cheesecake was pretty smooth and not overly sweet which gave it a sweet ending!<br/><br/>It was such a great evening at The Noble Experiment and I would definitely visit again for their sirloin steak!

The guys at Noble Experiment aren’t out to reinvent the wheel, they are out to give you a mighty fine steak and dam good sides. The steak was perfectly cooked to medium rare with all the right chargrill tastes. I had the chips, cheese and gravy side, roasted potatoes (carb up!), sauté kale & jalapeño poppers and nothing was to be faulted. I thoroughly enjoyed my Pisco Sour also! Highly recommend for when your feeling a really good steak and sides ! <br/><br/>

This is a great chill spot to have drinks or food if you’re in the area! The sirloin steak was really tender. Their green bean and kale sides were honestly so simple yet so delicious! I don’t think I’ve had kale taste so good before. Loved their warm apple crumble for dessert.
Harmony
I was lucky enough to be a part of the Rare steak night event. <br/>For entrees, we had the Jalapeño poppers (it was as interesting as its name) and Gravy loaded fries (which were so cheesy and yum).<br/>For mains, we all got Medium rare cooked sirloin steak that were served with horseradish cream, dijon mustard and pepper sauce along with extra sides, roasted potatoes w/ garlic & thyme, Kale w/ garlic & chilli and Green beans w/ mustard glaze. The steak were cooked to perfection, nice pink juicy and tender. And those sides were amazing especially the kale, loved it!<br/>For desserts, we had the Apple crumble & vanilla ice cream and White choc & raspberry cheesecake.<br/>Overall, great venue, very cosy and moody with great ambience and awesome music playlist. Food and service on the night was top notch! Highly recommended this restaurant if you’re in the area.
Goodfoodpapi
Loved the vibes here, such a chill place with a really neat interior. Their steak was really good as well as their cocktails. Super friendly staff too so I’ll definitely be back!

My partner and I stopped here for a pre drink before dinner last night. <br/><br/>The restaurant was busy with people both downstairs and upstairs, upstairs was more of a casual setting with arm chairs and coffee tables. The decor was beautiful and our waitress lovely.<br/><br/>We ordered a white and red wine both very nice. Having a look around the cocktails and food looked great, I was eyeing off a table next to us lol the food looked delicious 😋 <br/><br/>There was a back room which you could book for private functions, all in all a nice place to visit.

3.5<br/>I really hope this bar makes it, it does have what it takes. Lovely new owners, lots of space, its over three levels and a good cocktail list. I was invited to the launch, it was fabulous to see locals there as well. Will definitely visit again to update my review.
Good Food Good Mood
We were invited to Noble experiment for their new menu launch last night and it was a lot more disappointing than my first visit. Some of their new canapés/bar food we tried were spring rolls, arancini balls and bruschetta. Nothing revolutionary although I did enjoy the bruschetta.<br/><br/>The service on the night left a lot to be desired and the cocktails lacked the wow factor I had experienced when I visited 18 months ago. It’s unfortunate as I was super impressed with the venue the first time I visited <br/><br/>Original review <br/>Had to come here and have me a bathtub cocktail. It's pretty much the cutest thing I've seen since Ryan Gosling in The Notebook. $22 of gin, lillet rose and citrus- quirky and delicious. The design is reminiscent of a super sophisticated speakeasy and the atmosphere warm and inviting. <br/><br/>In true smith st style it's unpretentious and a little bit obscure. Absolutely loved my experience and the magical bartenders. Inventive, progressive, exciting; their creativity has no bounds.

You walk into this venue and its 1920s themed. Great ambience and fit in with the culture of Collingwood. Got a little comfortable on the couches to then realise there was a downstairs with live music and gin bar. Tried a few canapes which were quite good and a unique mix of cocktails and drinks! Good luck on the relaunch
Timinmelbourne
I was fortunate enough to be invited to the relaunch of the Noble Experiment tonight. This is a casual bar on Smith Street serving some great cocktails. The reason for the relaunch was that this place has some new management who want to make this bar accessible to everyone.<br/><br/>This is a big bar over 3 levels. There is the street level, then the upstairs bar w some great big single and double chairs. Very comfy and private. Think dark wood, heavy furniture, very old school.<br/><br/>Then there is the downstairs bar, which has live music, and some amazing cocktails! <br/><br/>The bar food is amazing, there are some really tasty hot nibbles and finger food. What fun!

3.5<br/>We called into Noble Experiment tonight for their launch event. Three levels of 1920’s styled interior from dark and moodie upstairs to the lively music playing downstairs there was certainly<br/>A heap of potential locations to grab a drink. <br/><br/>Cocktails were reduced tonight and we got to try out the new Tanqueray Rangpur Gin in a gimlet form and were nice and citrusy. The bartender got his quantities wrong so we ended up with one much smaller than the other... still tasty mind... and I guess as long he didn’t cheat us out of alcohol right!I really enjoyed this new Gin... might even buy some for myself. <br/><br/>We got to sample a small selection on their menu via roaming tasting platters with arancini, vegetarian spring rolls and mini bruschetta. I especially liked the chorizo arancini which were still nice and hot. <br/><br/>We also got to try a sample of a new sour beer with a Japanese citrus twist. It was quite an easy drinking beer.<br/><br/>We had been invited in so hadn’t anticipated paying for food and drinks and so were a little taken aback when asked to pay for drinks and order and pay from the menu. Both ourselves and our dining buddies had left other fully catered events early to attend this one. we were looking forward to a great range of menu items to try but sadly the range wasn’t on offer. Perhaps another time. <br/><br/>In saying all of that I did enjoy the items we did sample and staff were friendly and attentive.
Karma Clarke
Gorgeous and romantic bar with fun cocktails and lovely creative food. I wanted to try everything on the menu and we ending up ordering quite a few dishes but the stand outs were the desserts. Great for a date!
Joan Lee
We had the 6 course degustation meal and it was amazing. Everything from the steak tartare to the lamb was executed perfectly and looked amazing too. It takes a while to come out but well worth the wait. The cocktails were great too.
Eating Away Melbourne
Have been to Noble Experiment a few times and they never disappoint. The atmosphere is so good there and the staff are super friendly. They all know their drinks and menu well so do ask for recommendations. Their drinks are really interesting, bath tub with rubber duck, sunscreen from a tube etc and they are all super yummy as well!

It’s fair to say this experiment was an overwhelming success! <br/><br/>Amazing, unique menu with awesome drinks! <br/><br/>Collingwood has itself a gem here! <br/><br/>

Nice place with some interesting foot traffic. The place was great in the afternoon, and clearly a popular stop off point for some in the area.<br/><br/>We dabbled with some of the food:<br/>1. lamb spring rolls were nice but quite meaty<br/>2. zucchini with cheese, oil and grapes (a lovely mix but slightly more cheese would have been well received. A delightful dish either way and I would go for seconds<br/>3. Cauliflower fritters - these were magnificent with a wonderful chutney. Absolute gem and I would go seconds for sure.....<br/><br/>Wine:<br/>Chardonnay - had some of the Xanadu Chardy which was very drinkable. Also had the Mitolo Cab Sav that was highly drinkable.<br/><br/>Wine list overall is incredible shallow however the cocktail list is extensive.<br/><br/>I am a believer and will return. Food is interesting, wine list needs work with some refinement, but overall, a good place.

Nice cocktail bar in the heart of Collingwood. It was unusually quiet when we arrived, which sort of retracted from the atmosphere a little. Plus a lot of the other areas were closed off. A group of us ordered a cocktail each and they were all presented really well, lots of effort into each cocktail. The staff were also very friendly. There is pages of cocktails to choose from, my only issue was that there weren’t as many sweet option on the menu, but the bartender made something for me instead. Nice place for a date night with the mood lighting, especially if there were a few more people around.
Soft Cheese Hard Core
Had the chefs selection as we were a group of 8 and it was really good. Clever, delicious food, great service and creative cocktails. What more can you ask for?

Walked in off the street to try the tasting menu for $65 and we were not disappointed. Highlights were the goats cheese croquettes, salmon carpachio with radish, dill and some kind of aoli from the heavens, and tortellini with peas and a perfectly matched creamy sauce. White cheese and coconut dessert was a winner too. A lovely list of reds were available and there was great service to boot. Our least favourite dish was a lamb with olive tapenade that they were trialling but the chefs sought feedback on their flavours. The staff really care about the balance of flavours here and it shines through. Loved our evening here.

The noble experiment is a nice and cosy environment to entertainment and bring your friends to enjoy the food as well. Like the steak and duck breast. Also the side dishes are also yummy.
Jin Yun
Lamb belly was impeccable, great selection of beers and wonderfully creative cocktails (bathtub gin is hilarious conceptually). The bartender who served me was an awesome guy who I had a lil chat with.
Julycheee
Wonderful restaurant fit-out with a lovely ambiance and fantastic place for fancy drinks. The bathtub gin is an especially fun and quirky novelty cocktail that brings smiles. The service was fantastic and it was fairly empty on Saturday night so it was relaxed and quiet. The food was average at best though, with good and bad dishes. The beetroot scallop ceviche had really fresh and clean flavours and worked well as a starter (not a medium dish as listed on the menu). The croquettes and steamed buns were nice too, especially the croquettes. The pork belly dish was a bit up and down. In retrospect it was so big and filling compared to the other "medium" dishes we ordered (we didn't want to get any of the large dishes as we're just not that keen on so much meat). The pork was tender but the green mango and papaya salad didn't add anything. The sauce was quite nice, especially to dress the bok choy but there just wasn't enough of it! The beef cheek tortelloni was a bit dry and salty. The Moreton Bay bug congee was the highlight of the night, with a lot of depth in subtle flavours that were incredibly strong and flavourful when combined, making it an incredibly elegant yet comforting winter dish. I couldn't get enough of this. Then the banana parfait was the worst dish of the night. Nothing on the plate seemed quite right. The ice cream texture and taste was no good, the nuts were dry and bland and didn't seem like a praline at all, and the two gels were too harsh and conflicting with the rest of the plate. It was not a dessert we cared to finish.
Antonina Sinina
The food was OK. I enjoyed the burrata the most, the rest was just ok. Good for drinks and nibbles, I wouldn't go there for dinner. The fun presentation of cocktails!
Elle
A last minute decision and we're so so happy we did!<br/>We were talking about returning after our first bites.<br/>The staff were super friendly and attentive and most importantly, knew the menu inside out.<br/>The food was absolutely delicious!<br/>We order the roasted lamb buns, croquettes, olives and bread and cheese which were all gorgeous. The food was full of flavour, presented well and came in good portions.<br/>We also ordered a snapper and the rolled stuffed lamb neck, both were amazing. The snapper was the best we had ever eaten and we have been to many seafood restaurants. <br/>We couldn't have been happier with our meals.<br/>For desert we had the cherry ripe cake and coffee which was all perfect and delicious.<br/><br/>Full of flavour, everything complimented eachother beautifully and the staff were great.<br/>Great experience, will definitely be returning!

Great food, helpful & friendly staff. Top cocktails & really good vibe inside. Nice selection of both drinks & food. Pork belly was up there with the best I've had & the congee was different level
Foodandwinefan
The chefs tasting menu is excellent value for money, and the chef was very accommodating with dietary requirements. All the food was delicious and fresh. Only down side was there really needed to be one more staff member on as it was hard to get service, but would definitely be back and would recommend

I had previously rated this place higher but after dining here again on Saturday night, I was not as impressed. I'm not sure if it was because I had high expectations from the other times I had been but the food was very average this time around.<br/>The crab tortellini was dull and lacking flavour, the goats cheese croquettes were okay and although the pork belly was tasty enough, the portion was tiny.<br/>The highlight of our meal was the Frangelico mousse for dessert.
Nic D
Not a cocktail bar, but an experience. The staff are knowledgeable and friendly, cocktails are unique and interactive. The atmosphere and decor takes you back in time. Highly recommended.

We were here for dinner last week while there was an engagement party happening downstairs. We ordered quite a few things to try, soft cheese with crackers, tortellini with crab and coconut milk, short ribs and the port belly, also with some carrots and potatoes. We didn't pay too much attention about how much we ordered and we ended up so full and couldn't try the dessert.<br/><br/>The selection of food might seem little but they do it well. The tortellini, short ribs and carrots were the best things out of what we have ordered. Quite a good meal.

My boyfriend and I ventured out to the restaurant, having our friends raved about it so much. We came there at 3pm as we had a show to catch at 5 yes it may be an odd time to go eat but being a Sunday night and we have work eating after the show would of cut into our sleep<br/><br/>Let me start by saying how disappointed we were. We ordered the chef's tasting menu, funny how the menu doesnt even state how many dishes we were to get. the flavours overall were okay but as the only people there we were expecting a little more. Our main dish was NOT even on the menu it was a whole sad sausage cut into 6 prices wrapped in bacon. We were there for 2 hours ordered 5 drinks and yet this is the sad excuse for a main they decide to serve up. <br/><br/>I feel as though regardless of the turnout people are people we are all still paying the same so discrimation or being cheap doesn't cut it for such a highly rated restaurant. <br/><br/>The drinks were good but I guess that dulls my anger towards this place. <br/><br/>Overall thanks for ruining my date
Joe Tucker
This was delicious. Perfectly presented and a real success in my opinion. Also, the staff were very friendly and thoughtful. I would defenitely recommend this for a semi-casual date night.

Wow this place is the absolute bomb! There is nothing not to like. Amazing service, amazing cocktails, exceptional food as expected, but they also cater for the most demanding dietary requirements, think a table of 8 where there were requests for no sugar, no gluten, no meat, no chocolate, no shellfish and they catered for all that with a smile. Reasonably priced, I can come here every week. If not for all the above reasons, it is also great for people watching.
Jing Wang
Amazing cocktails. The Chef's menu at $65 is terrific value for an exceptional meal. Better quality and value than many more expensive restaurants around Melbourne. I'll be trying to find an excuse to come back here soon!
Dwayne Melbourne
Amazing and obscure cocktails that surely give you a bit of a surprising kick! Definitely worth the visit and the chefs board is certainly worth the price!
Foodholic
Ate lunch here in January 2016. We had the Chef's Menu in a group of family and friends. If you come here as a group and are happy to share then I would highly recommend ordering à la carte as it's better value and you can try more dishes. Overall a good feed.

I have been there several times for drinks and twice for dinner. <br/>Drinks was alright, nothing really special except the ducky gin.<br/>First dinner experience was awesome. We're four of us, we had the chef's degustation. We were greatly impressed with the taste, selection and portion from the degustation. Because the experience blew my mind off so I invite a few more friend to join me for dinner after two months.<br/>That was 10 of us and we had the degustation again. <br/>To be honest it was very disappointed. The side dishes we got were just chips instead of maple carrots, the portion were extremely small and some of my mate need to drive-tri McDonald after. <br/>Non of us enjoyed the meal. I was quite embarrassed as I was the one that introduced my mates to this place. <br/>It is only suitable for small table, if you are going in a group maybe try else where. <br/>
Food Dine Roll
Wow. EVERYTHING.<br/>Extensive list of cocktails and drinks.<br/>Ordered 4 cocktails between us and all were so good and coolly presented. Would love to go back and try more.<br/><br/>One of the best food i had in a while! Great modern australian food at a very affordable prices. Kapfler potato (side dish) was like omg. SO GOOD. Both mains we ordered (pork belly and lamb belly) was amazing. Everything comes in a very good size too!<br/><br/>Service was beyond expectation. Very friendly. Not up their noses at all. Very fast. Very attentive while leave us enough space to enjoy ourselves. Thank you so much.<br/><br/>Would love to come back! Keep up the good work! :)

Super good staff, really interesting stuff on the menu and the food was exceptional with not a single dud amongst all the dishes that we had. Great small atmosphere worth returning to.
Victor Cheng
We ordered the cod, lamb belly and zucchini tempura. The staff were friendly, and kept emphasizing that their menu was 'designed for sharing'. However, their mains are pretty much entree sized, felt more like a degustation. Flavour wise, different, but light and rather forgettable.

This week I’ve been raving about my experience at The Noble Experiment, a drinking and eating house located in Smith Street of Collingwood. The experiment is undoubtedly a worthwhile and memorable one and I’d highly recommend it for anyone to give a go with a creative menu in food and drink that really delivers.
Annie Lu
The restaurant has a lot of interesting cocktail options which are quite creative. Order the bathtub gin, it is very cute! You literally have a little bathtub and a duck straw! I didn't order it myself as I need to drive, but saw the orders keep coming from the bar! The foods taste good, but portion is a bit small. You will at least order 3-4 dishes for two. Victor Cheng

Came here for an anniversary with my boyfriend. Lovely joint - very relaxed and staff are extremely helpful. The low light helps with giving leisurely vibe. The food was quite nice, however not to the standard I was expecting with the rating. Don't get me wrong, it was still enjoyable. However, in each dish there would be one element that would be really amazing, and the rest of the dish wouldn't quite hit the bar. Portions are a bit on the smaller side I feel, as with most share plates joint. <br/><br/>Cocktails are delicious - definitely try one!

The Noble Experiment has for a long time been a stand-out choice in my world for fine dining at affordable prices in effortlessly trendy Smith St, Collingwood. The beautiful thing about this restaurant and bar is that you could get away with a fancy night out or a casual dinner and drinks, bringing anyone from your Mum to the future love of your life along with you and whether you are a fussy eater or a legitimate food snob you would find something that would tickle your fancy. This is a spot that could work equally as well as a special occasion family dinner, a casual week-night feast, a romantic first date or cocktail evening with friends.

My partner and i came here for our anniversary and i must say i was impressed.<br/>The food was amazing, not a single fault! Highly reccomend the beef cheek and the lamb bun!<br/>Our waiter was amazing, very helpful and knew what he was talking about which is nice for a change! Thanks guys will deffinatly be back!

The noble experiment has some best staff I've ever had been served by they are friendly and helpful. They know drink and food menu very well. It adds to the great food and super cocktails here. It may not one of the cheapest places in the area but the food is amazing.

I have been here for a few times, like it every time! I actually had my 21st birthday party there so I booked a room upstairs. The manager was very helpful and the staff were so polite. Very nice to provide all of us recommendations. One of my favorite places to have dinner in Melbourne
Fangmaster
Had an enjoyable evening meal on Friday night. Pre dinner drinks upstairs was good. Had set menu and enjoyed every dish especially kingfish and beef cheek. Would highly recommend. Service was good.-Thx to Rico.

Expected quite a bit after such a high rating and was somewhat disappointed. The food was good, but should be great at those prices. Service was attentive but a bit pushy as well. Don't know if I'd go back.
Mistermister
Great find. Disappointed the signature cocktail on the website was not on the menu. The pig head crochets were a great starter. Whisky cured salmon was well presented. The crab tortellini was a bit cold and there was not enough sauce. Beef cheek was very meaty. Pork belly delicious!
Lime N Coconut
This is definitely one of my favourite restaurants/bars. We tried the chef's menu and everything was beautifully presented and very tasty! The cocktails were delicious, with stand outs being: rumlet, bath tub gin and the avocado gimlet (my favourite). The service was impeccable and the staff was able to make some great recommendations. Can't wait to come back :)
World In A Bite
Love the decors, atmosphere, cocktails and foods (some of the dishes could be better) ... Lovely service , thank you! 😄☺️.
Jeff Cause
Nice ambience and service but we were very disappointed with the quantity of food offered. We ordered the chef's special which costs $130 for 6 "SHARED " courses. After five courses we were still hungry because each course was so small. Eg.  One course was 4 pieces of tortellini - ie 2 for each person at a cost of over $20! When we told the waiter we were still hungry the response was "alot of people say that, but your always welcome to buy more"! In short we walked away much poorer and hungry enough to have to go to the nearest cafe to find something more to eat.
50% Coffee 50% Food
fantastic food, service and atmosphere. went there through accidental. we discover this hiding gem. the cocktail we order was the bathtub which was awesome. the highlight of the meal was the glazed carrot with burnt carrot puree which one of my friends who dislike carrot also enjoyed it. will be back again

Love this place. Amazing food - banquets seem reasonably priced and are so delicious. Cocktails are sooo good and so nicely presented! Great ambiance. Staff were good too.

We were so excited to try the Noble Experiment after many good reviews, however were left a little disappointed. <br/>Pros - great cocktail lounge upstairs, inexpensive wine list, attentive and welcoming service<br/>Cons - the food just wasn't great. The smoky carrots were undercooked and sickly sweet and the mains (whilst designed to be shared) were so tiny that we only had one bite each. <br/>Overall an OK experience but way too expensive for the quality of the food when Smith Street has so much more to offer.
Kelly Chernishov
I stumbled across this place by accident & thought I would give it a go. Will definitely be coming back😊 staff were very friendly and service was great. I had the Mango Splice Marshmallow & I loved it.

Many will be surprised at the rating I'm giving this place - to be honest, I am also after all the great reviews on Zomato and seeing their photos of the food. I came here on Friday night with two others with very high expectations and excited to try their menu. The greeting and service overall was good and we were explained how things worked eg. its designed for sharing and we were fine with the food to come out whenever it was ready. <br/><br/>We ordered the pig head croquettes, smoked duck breast, hanger steak, lamb's neck, smoked asparagus and kifler potatoes. The croquettes came out first, and then after about another 10 minutes or so, the rest of the dishes came out together. The standout dish was the hanger steak - cooked beautifully with great flavour and tenderness. The dishes that really disappointed were the smoked duck and lamb's neck - both were on the luke side - so not very appetising to eat (especially the lamb's neck). Both the hanger steak and kifler potatoes were served hot, so I imagine the duck, lamb and asparagus were held back to wait for the rest of the dishes to be up... which we didn't expect. <br/>Overall - quite underwhelmed by the consistency of the food, and may struggle to come back for a second go given the quality of other places around.

Score: 79/100<br/>Cuisine: Contemporary Australian<br/>Cost: $65pp <br/><br/>Wow! Not only do they know and make their own whisky, but their cocktails and food is delicious! They had yamazaki sherry cask which I had to try!! Caught up in the moment of excitement, Daniel offered me a sample of his own Bootleggers PX cask whisky, which I must say was a pleasant surprise! Similar to Starwards but with the characteristics of the Pedro Ximenez shining through.<br/>Came here with friends and decided to go with the chef's menu, and it did not disappoint! Our dinner consisted of kingfish ceviche, then the amazing green sauce burrata, seared scallops followed by lamb steamed buns, smokey asparagus and beef cheeks finished with sloe gin compressed watermelon.<br/>Loved my experience at the noble experiment, will be looking forward to a bottle of the good PX cask whisky later on and will definitely have to come back!
Lily_Lieu
Very classy place that has great service, inventive cocktails and food that seems like it should be Hatted. Great flavours, attention to detail and reasonably priced. Don't miss the chips (better than most) and the mango sorbet splice. Would definitely go back.

After having walked past this place several times we went in on Friday night to get (I think) the last available table.<br/>The service was very friendly, which is a big plus. We started with the burrata, which was very nice and different. You get plenty of bread with it, which was good because I was hungry :) Good value for $19. Then we wanted to go for the crab tortellini, but that had coriander in it, which they couldn't take out. We took the sea scallops instead. This dish was a bit smaller than I expected, it had 7 scallops. I suppose scallops are just expensive. Then we had the smoked asparagus and the beef cheeks. Both were really nice dishes. The smoked asparagus is very different and with the beef cheeks you get a decent amount of meat.<br/>Good food, will be back for experimental Thursday.

My boyfriend and I came here on sunday night for our three monthversary and completely fall in love with this place. The service was excellent. Food came promptly. We ordered chefs menu, the beef cheek was so tender and tasty. The slow cooked lamb was also yummy. Overall we really enjoy every single menu that the chef chose for us and would recommend our friends to this place. Worth the money and worth the trip !

Where do I begin? We were there for Experimental Thursday Night and that we did. From the starters of lamb steamed buns and pig head croquettes, to mains of pork neck, succulent lamb neck, duck breast, John Dory, kingfish; to veggie dishes of fried green tomatoes, 3 way cauliflower, honey glazed...

Absolutely delicious, lovely food and friendly staff. Loved the atmosphere. <br/>All round, an awesome night for dinner and a great experience.

I like this place. Like really really like this place. The atmosphere, the decor, the food, the service it was all brilliant. We had the 3 course experimental dinner. Amazing value and delicious food. I'll be back!

My boyfriend and I went to The Noble Experiment on Saturday for his birthday lunch. We had a really great time, and the food was fantastic. I had pre-ordered half a friend chicken, which was delicious - super juicy but also perfectly crunchy. We then ordered the hanger steak, cauliflower, and friend green tomatoes. Everything was amazing. The biggest problem was that the portions were so generous we couldn't finish everything! The staff were super friendly and made it a really fun experience, and the chef even came out to talk to us after we asked the waiter to pass on our compliments. On top of everything else, tasty cocktails and really nice (and reasonably priced) wine. We will be back for sure!

Found this restaurant after reading Zomato reviews. We tried the Chef's menu & it was amazing! The waiter told us it was highly recommended & I wasn't disappointed. Good customer service and friendly vibes from the waiters. I can't pick a favourite from the menu but I would say every dish is distinctly flavoursome and nicely presented. (I really loved open prawn tortellini & the dessert! ) Pricewise - it was $65 for 7 courses which I thought was well worth it!
Amimi
Quite over priced for little portions of food. Compared to other fine dining restaurants. The food also didn't seem that hot when served. Service was exceptionally good.

We ordered one of the Noble Feast of Beef brisket to share between the 6 of us and it was amazinggggg. <br/><br/>It came with the most delicious potato salad, coleslaw and steamed buns. The beef brisket came in a huge platter and there were about 3 large pieces of meat each. The beef brisket was super tender and the sauce was tangy with a ever so slight kick to it.<br/><br/>I wish they would give us more of the steam buns though but in terms of portions, it was extremely generous.<br/><br/>We also ordered these amazing potatoes and carrots as a side.<br/><br/>For dessert, we shared the yuzu marshmallow & a watermelon gin granita dessert. We all voted for the granita dessert as it was light and refreshing after the very rich meal, and we all found the yuzu marshmallow a bit too sweet.<br/><br/>The service was super friendly and as we dined quite early (5pm), the food was quick to arrive. We will definitely come back.

Came here Sunday night for dinner and it was nice. We ordered the croquettes to start which were delicious. Has a bit of a kick though so if you don't like spicy, don't order them. We ordered beef cheeks and duck for the mains with carrots and asparagus for vegetable sides. The beef was delicious and the carrots were amazing. However, the duck wasn't as good as I thought it would be. Overall, the food was nice and I'd go back there again as there bbq menu looked delicious.

This has to be up there as the best Dining experience in Melbourne. The Place itself is such a nice warm fit out that you feel instantly relaxed and comfortable. From there the service is second to none with genuine staff who care about their workplace and it shines through in how they interact with customers. The food could do no wrong everything we put in our mouthes took us to foodie heaven. To take something simple like carrots and make it a signature dish like they did was something special and the duck was simply superb. They also have a cocktail for everyone i personally loved the clockwork orange if your looking for something a bit sweeter. Overall this place was one of my favourite dining experiences to date.
Gnart Gnat
Highly recommended. Loved the drinks on offer. Food was adventurous and different, but it worked so well. E.g pigs heads croquettes, fried green tomatoes....so much more
Mistletoe
Great ambience, good service, and amazing food!! Only thing that I wasn't happy about was the fact that the menu advertised the cocktail drink to be served with a house made lollipop. What came out was a generic orange lollipop which tasted plastic-ish. Server already knew that they were out of the lollipop but did not share this information with us when our order is made. <br/><br/>Having said that, everything else about the meal was spot on. Flavors were tantalizing on the tastebuds and we were well taken care of. Would definitely be back to this establishment.

Excellent value! Not being able to get into St. Crispin, we chose this place for a birthday dinner and were very pleasantly surprised. We went with the chef's tasting menu, which is ordinarily $60 but is reduced to $50 on a Sunday night. It consisted of six courses: raw kingfish, fried scallops, bork puns (gao bao), fried green tomatoes, slow-cooked beef check, and passionfruit souffle. All were delectable, with perfect sauces and exquisitely plated. The only possible minus was that the amounts were on the small side, so we ordered Kipfler potatoes with the beef check, which were delicious and filling. We didn't try the cocktails but they looked very creative, and the space is open and light filled. Service was friendly and competent. Definitely a great value choice for an upscale meal!

Thought that this place was virtually perfect. Service was far more polished than the average place at this price point. The food was excellent and interesting variety and presentation. Nice looking place too. Really would struggle to find something to fault.

Very good. The Pig Head Croquettes were extremely nice. Also the smoked asparagus was delectable. The prawn stuffed squid were beatiful and I wanted more. The duck was also nice.

I have to say that recently I’ve kind of gone off cocktails. I much prefer something neater, and a little less sweet, like a refreshing gin and tonic or a deep and mellow whiskey, or a glass of vino. . However, a little while ago, I was reminded just how fun cocktails were though, and how well they could be done, with a visit to Noble Experiment.
Michaela Watson
What great surprise! Walking down smith street with my mum and stumble upon this for dinner. We ordered the scallops, prawn stuffed squid and fried green toms. All looked amazing on arrival and tasted amazing too. Perfect amount with wines for the two of us. Fried green toms could have used a little more goats cheese but that's only because it's my fave! Will have to round up a group to come back and try the feast option.

Sous vide corn-fed duck breast, duck skin crumble, candied radicchio, balsamic & beetroot gel, parsnips, with cranberry jus. As history would have it, prohibition was actually an incredibly creative time for barmen. With limited resources, they came up with ingenious ways of manufacturing and distributing all manner of highly sought after liquor, making law breaking that little bit more exciting, the irony of which is quite laughable. This controversial time in history was referred to as the Noble Experiment, as the intent of the restrictions were a noble and very much experimental way of addressing societies issues. Fast forward to modern day Melbourne and a Collingwood bar of the same name is keeping this creative spirit of prohibition well and truly alive. Offering what can best be described as a mature, inventive and very progressive cocktail menu, the team at the Noble Experiment are definitely setting a whole new standard in the local bar scene.

Alchemy is a seemingly magical process of transformation and creation. The team at the Noble Experiment draws its inspiration from experimentation, transforming simple ingredients into an exciting and quirky menu. You may observe the gentle swell of liquid nitrogen, cocktails served in miniature bathtubs and the finest collection of barrel-aged cocktails – all served with meticulously plated food that is modern and tasty. I guess you could call them

Amazing, relaxed ambience, great food and drink, friendly staff, it is recommended to all people to at least try it once and you will go back.

This is such a cool place. The atmosphere here is unreal, the staff are friendly and knowledgeable. Absolutely loved the cocktails here. I will definitely be coming back to try their food.

Went to this restaurant for a special occasion with my girlfriend, had a lovely meal and enjoyed the vibe inside. Was served by a male waiter (brownish hair, 30's and seemed like one of the head waiters on the floor) he seemed to be very polite, however after we finished our food I went to the toilet while my girlfriend paid. While I was in the toilet he inappropriately said to her "what are you doing with a guy like him, when you can do better".  She was very upset by him saying this and when she told me this when we got home, I was shocked and appalled by this sleazy waiter. Very upsetting experience after enjoying a good meal.

So amazing! Very relaxed environment with relaxed, helpful, friendly wait staff.<br/><br/>Food was fantastic. Between two people, we ordered the kingfish, scallops, stuffed squid, asparagus, Brussels sprouts, pork jowl, and quail. We were stuffed to the brim but the bill only came to about $150. The pork jowl was out of this world! Sublime. Everything else, were too, delicious... sans quail. Could have done without the quail as it was a bit bland, though the idea of pouring on the consommé was a nice touch. <br/><br/>Would definitely be back. Perfect alfresco setting alongside Smith St in these warmer months! Very pleased with this place.

Great intimate atmosphere !!! <br/>Cocktails are a bit pricey but worth the experience !! Awesome cauliflower 3 way and super good fried chicken !

Amazing cocktails! And the Pork croquette is Delicious! Great service. Great bar to sit up at. Nice place to chill and kill some time in style 😜

This place is nothing short of amazing. The service is impeccable and the food... THAT FOOD! All of it was amazing. The cauliflower, pork cheek, beef ribs, beetroot parfait and meringue were all absolutely sublime. They could not be faulted at all. A wonderful dining experience.

Favourite bar to go get a late night coffee or espresso martini. Have returned back here many times for the cool, vampy and lounges atmosphere and the great drinks.

Had the best experience last night at Noble Experiment. The staff are outstanding, so bubbly, knowledgable, and nothing is a problem. The food is just incredible! Highly recommend the squid, smoke carrots, pork and beef rib. Heaven! Thanks guys :)

Came here recently with my girlfriend and loved it! The best thing about the bar/restaurant is the staff. They're extremely welcoming and have a great knowledge liqueurs and cocktails. The drinks are quite pricey but you're paying extra for the great service!

Previously visited this place for drinks and decided to come back here for dinner with s few friends. Great decor. Excellent service. At the time I visited I was vegetarian and the dishes I had were great. The highlight was the Jerusalem artichoke and wild mushroom soup with a slice of brioche. Was a celebration of flavors, even though the quantity was on the smaller side. The cauliflower cooked three ways was nice but not as impressive as it sounds. The desserts were excellent. I had the beetroot parfait and it was an experiment I enjoyed. Will visit again to try the slow cooked meat feasts.
Scotty
Wow and wow. Came here some time ago for a quick drink and thought I would come back for dinner. We tried the Chef's plate and it was amazing, food was fantastic. Desert was a bit to rich for my liking. The staff were amazing and faultless. I would highly recommend this place and recommend the Chef's plate and you must try the cocktails.
Nelly
I've been 3 three times now and tried something different each time. The staff are ridiculously friendly, it's just a joy just being here. Food is really good, really good. More please!
Madeleine Scerri
Cool place to grab a drink! We didn't eat here as we already had reservations however we were warmly welcomed at the bar. I ordered the 'One free hour in candy store' cocktail and it was delicious! Mango, peach and passionfruit with a passionfruit lollipop on the side. Great friendly service with a great bartender. Will be back to try their food!
Kelly Belly
Go for the brussel sprouts. I'm not joking. Sweet, bitter and sour. The much maligned brassica comes alive at The Noble Experiment. I have visited a few times - food is always excellent and staff attentive, with the added bonus of barrel aged cocktails. The pork jowl is sinfully soft, the hanger steak full of savoury satisfaction and the pig's head croquettes lip smackingly good.

Prohibition: America’s “Noble Experiment” in the 1920s was aimed to be the solution to fix all of American society’s problems. The Noble Experiment is inspired by this era, decorated to transport you back to a speakeasy of the time.  Exposed bricks gives the place a rustic feel and as you walk further in, with the bar on one side and a wallpapered library on the other, there’s a sense of sophistication to the restaurant.

Found this place on the app and really wanted to try it out as soon as I saw it. We didn't order the $55 chefs selections because I read a few bad reviews about it so I just ordered a few bits and pieces to share from the menu. The food was not bad, very different and experimental hence the name of the place but for me, it wasnt anything spectacular. The atmosphere and ambiance of the place is pleasant and very stylish, the staff were friendly and the price I believe is pretty reasonable. Like the other reviewer Ted said, I really wanted to like this place more but it just didn't wow me. I'm a big meat eater and i enjoy anything, I'm not saying this place was bad nor am I saying it's fantastic, maybe we just went on an off night but I will be back to try again.
Deb Taylor
Really wanted to like this but just didn't knock my socks off. Some good dishes but some misses as well. Staff were inattentive and missed out on lots of upswell opportunities. We even went to the bar to order more drinks as they took too long. The banquet menu wasn't a lot of food but friends said they had been before and been fed at least another two courses on what we had this week.<br/><br/>That said, cocktails were amazing!!

Designed for drinkers and diners, Aloha Sailor is a newly opened underground tiki bar in the heart of Collingwood. Housed in the Noble Experiment’s basement, you can expect luscious cocktails Tiki style as well as a decent food menu. Think coconut prawns, crispy roast suckling pig and 12 spice pork ribs. Now who’s feeling hungry?
Cool_cat_loz
Lifetime Fan. Have been multiple times and will always come back to this superbly innovative, high-quality restaurant - particularly for the chef's menu which is great value at $55 and allows you to try new creations that aren't even on the standard a la carte menu. Top dishes are the slow cooked pork, slow cooked beef cheek, brussel sprouts, and the flour less chocolate cake. Cocktail creations are just as wondrous, especially the barrel-aged concoctions such as the espresso martini with warm vanilla foam. With bars upstairs and downstairs (Aloha Sailor), it will cater for a special dinner, a quiet relaxing drink, or a more upbeat gathering with friends.

Underrated gem. Really great food, service was super friendly and attentive, and space was nice.<br/>All dishes were cooked perfectly, loved the brussel sprouts, the burrata with the addictive 'green sauce' and the farro salad. Superb value for the quality of ingredients and level of deliciousness.

Virginia. Awesome cauliflower! Slow cooked lamb delish!<br/><br/>I will definitely go back.

Noble Indeed!. You won't find a more gregarious and welcoming staff than at The Noble Experiment. <br/>Sitting at the bar is a treat watching the staff concoct the most amazing looking cocktails. Such effort and precision in presentation. No detail too small.<br/>Foodwise - definitely a place to share dishes with friends. They're huge servings, especially the cauliflower! <br/>When I grew up Brussels sprouts were punishment food. I was told I'd like them 'Noble Style' and I'm a convert. The lamb fell apart and the juices ran over the plate. Perfectly cooked and just delicious.<br/>The cheese platter would have been acceptable in a 'normal' restaurant but in this place looked quite plain against the circus of food and drink being served. Great cheese...just not excitingly presented. I was expecting something...I don't know....MORE!<br/>High praises for this place. It's not often you meet the owner whilst he's drying glasses out of the dishwasher. Lovely man and can't do enough to make his clientele happy.<br/>Unusual and highly recommended. <br/>Enjoy!

Fiancé didn't leave a tip and feels guilty so..... We chose this place with no real expectations, but whatever those expectations might have been, they were exceeded on all levels!<br/><br/>Food was excellent (we had the chefs menu), covering a great range of food types culminating in the best dessert I've had for a long time. For me, great value money! Could not have wanted for another mouthful of food but didn't dare leave one on the plate even at the end. Cocktails great too. Service was friendly (certainly not hipper than thou) but never outstaying its welcome. Setting/decor felt unique but without the nauseating self-awareness...<br/><br/>If you're in doubt for your next place to try on smith st, give it a whirl. You'd be a grumpy bastard if it disappointed.

Second time here. Second time with high expectations. Second time not disappointed.<br/>Caremelised Brussel sprouts charred beautifully, and both the beef short ribs and chicken(white and brown meat) cooked to perfection.<br/><br/>Melt in my mouth. Yum yum YUUUUM.

Wonderful service. The staff were great and service was excellent at TNE. Went as part of a group of 3 and tried a few different items off the menu. We loved the scallops, cobia, beef rib and beetroot parfait (YUM)...the cauliflower head and pork cheek were not to our taste though. The pork cheek unfortunately wasn't edible as there was no meat, just a piece of gelatinous fat.
The City Lane
The Noble Experiment Collingwood is an eatery and bar that’s been open for about a year now, operating under the radar and without the hype that accompanies most new openings on Smith Street. When The City Lane was first contacted by The Noble Experiment and invited to experience thevenue, we weren’t quite sure whether it was a place we thought we’d seen before or a new place altogether.
Gastrology
The Noble Experiment presents an exciting departure from the mainstream by serving exciting cuisine influenced by Head Chef Cameron Bell’s haunts across North America and Europe. Bell’s Michelin starred background brings a finesse and understanding of flavour combinations.

Wow Wow Wow!!!. This place is awesome on all levels, great atmosphere, perfect service and sensational food. We got a mix of everything for dinner - but this is the sort of place to try something new and you know your going to like it. Cocktails are really nice and the cocktail lounge upstairs polishes off a great night out. Cant fault this place at all!
MM
The best food I have ever had. Unique combinations of flavours and beautifully presented food. Would highly recommend this place.

A terrific gem in Collingwood!. We had a fantastic experience here last Wednesday night. The service was impeccable, the wine very good, but what was best was the food. We had the Chef's choice, $55 per person, and it was a memorable meal. Every dish was a winner! <br/>We will definitely be returning! Thank you TNE!
Napes
Great food and amazing service.. One of the best restaurant experiences we've had in a while. Food was amazing - we had the chef menu - quite a lot of meat and it was all delicious. Service was faultless and noise level and music was just right.

LOVE IT!!. My favourite restaurant in Melb!! The food is amazing!! So unique, tasty, balanced and deliciously slow cooked. <br/>I had my birthday here with a group of friends and loved it. The experience is particularly good if its with a group of >4, so you can share dishes, graze on dishes and taste lots of different things. Food will also come out sporadically and at different times, eg. the meat and its side dish. Its also good and possible to pre-order some slow cooked dishes days beforehand!
Evie
Simply...the meat...all of them DELICIOUS! Definitely coming back.

The Experment is a success. This location has had many incarnations over the years but I hope The Noble Experiment is here to stay. The fit out and look of the restaurant is good and the staff are friendly and helpful without being overbearing. The food was excellent, we started with the Lamb Steam Bun which was fantastic and followed with shared plates of the Murray Cod (could have done with a touch of salt) and Beef Short Ribs (so tender) and complimented that with the potatos and Heirloom Beetroot. To finish off we had the Maple Custard which was divine!<br/>Al in all an excellent night. If you and your partner feel like experimenting one night, try the Noble Experiment
Margo
My Daughter's 21st Birthday Party. OMG words cannot describe the amazing time we all had at the Noble Experiment last night for my daughters 21st. Everything was amazing the venue was the perfect location, our party was held in the underground experiment room, the atmosphere, food, staff, just everything helped us all have the most amazing night and best of all the birthday had a blast. I can not recommend this place highly enough Kristin just made everything easy for me during the planning phase and then on the night everything went off without a hitch. So thank you, thank you, thank you one and all at the Noble Experiment, I will be recommending your venue to anyone and everyone I can. xoxox

Delicious. A couple of friends and I went here for a few drinks last weekend after I kept seeing the place popping up on a few of my favourite sites. The service was so friendly and attentive from every person we came across. The interior design is gorgeous and reminded me of Brooklyn. The drinks and shared salads we had were amazingly delicious. I definitely recommend trying the Smith St Fizz cocktail which is super sweet but the excitement of having the pop rocks explode on your tongue is a fun giggly experience. And the Walking Dead Head was quite an experience and super tasty! Can't wait to go back.

A surprising gem. Walked in off the street and been amazed by the food. Really interesting menu, flavour combos of brussel sprouts and coconut (yum) and a kick asse wine menu. Will totes come back.

AMAZING!. We have been here twice and had different "feast" options each time and could not be happier. Will return. Staff are attentive. Food is fresh, delicious and different. Never though brussel sprouts or cauliflower could taste so incredible!

All Killer No Filler....Exceeded high expectations. I booked my husband and I in to TNE for his 30th birthday to check out the dinner menu and their extensive whisky collection as my husband loves scotch. We weren't disappointed, although they had been busy we were attended to quickly and cocktails arrived shortly after. Starving and being spoiled for choice on the dinner menu we opted for the chef's menu because we couldn't decide. The first dish crispy brussels sprouts arrived in no time and reaffirmed my mission to prove that they can be delicious when cooked properly. As the title of my review suggests the dishes kept getting better and better, having done several chef's menu's/degustations all over the world I was impressed with the quality of the dishes and the beautifully rich flavours-there was no carb heavy dish that you often find in share menu's to fill you up. Then came the dessert, we opted to order all three desserts at the recommendation of our waiter (one dessert was included in our chef menu) and again we weren't disappointed they were all beautiful but the chocolate and bourbon fudge brownie cake with peanut butter ice cream was the icing on the cake (pardon the pun) of a beautiful meal. I could go back just for dessert and cocktails it was that good but for such good value for money given the quality of all the dishes and drinks it would be rude not to go back and do it all again!

So many yummies... Went with eight friends and had the banquet. Every course was just incredible- the cauliflower and the brussel sprouts were a group favourite. And so reasonably priced considering the quality and amount of food.<br/><br/>Dietary requirements were very well catered for. And the cocktails! Oh the cocktails. Such care and presentation.<br/><br/>For the final course the lovely chef came out and described it to us. <br/><br/>We will be back!
Stevan Pavlovski
Disappointing is the word that all 4 of us used to describe dinner here. We opted for the Chefs Menu as we normally go for whatever banquet type option is available when trying a new place and after hearing some very good things about The Noble Experiment were excited to see what all the fuss was about.<br/><br/>While the venue looks great and the staff were very friendly and attentive with the drinks the food service was horrible. The place was less than a third of the way full and our 6 courses took over 2 hours from start to finish. <br/><br/>As for the courses themselves everything tasted really good, however the portions left a lot to be desired. The vegetable dishes were fairly plentiful but you can only really eat so many Brussels sprouts or so much cauliflower. The meat dishes were tiny. The lamb shoulder gave the four of us about 2 bites each and the steak just under 3 slices each.<br/><br/>Might go back and give it another shot one day, however with the options along the same street being plentiful I don't see that day being anywhere in the near future.

We were walking along Smith Street finding a place for dinner and found this place, a perfect find for the night. <br/>A plate of broccoli heads made delicious! A plate of baked Brussel sprouts made amazing. And a beetroot salad that had all the right balances of flavor and colour. <br/>Thankyou for a delicious meal of experimenting with flavours, and I what I thought was cooked and presented in a very healthy way too.

Still Experimenting?. I'm still confused... I try to think very hard about my dinner here.. chefs $55 tasting menu.. <br/>I think about each individual dish. They were all cooked well, nice choice of ingredients, strange variation in size of the dishes, but I finished my meal unsatisfied, truly the food was in-cohesive. Started with a huge plate of green Veg, onto raw fish, strained to remember the other dishes, and a lovely dessert. Wine was good, but had to pour it myself ( perhaps a bit snobby but I'm not at home and wait staff weren't busy) cocktails were made beautifully, and I like the layout of place. got to speak with the owner, and the chef, always interesting hearing how it is put together.<br/>I didn't have a bad experience... just a strange one..<br/>Give it a go if you like experimenting - as I said the food was cooked well. Keep an open mind, and enjoy share plates :)

Smith Streets greatest treasure. One of the greatest bars in Melbourne, which in itself is an accolade. Amazing food, and if you ask for a drink they won't give you any old alcoholic beverage they will tailor a refined and delicious refreshment that will keep you coming back for more. Book a function, have your Christmas party here, basically pay a visit to the Noble.

Came here a few nights back, and wow amazing! Great atmosphere, good selection of cocktails, and the food to die for, simple yet sublime!

Do yourself and others a favour. Brilliant service and the food is incredible. Some of the best in Melbourne ! Not to mention cracking drinks and cocktailsz. Will be back for sure! Hard pressed to find better. Recommend booking .

Delicious! Great atmosphere, service, food and drinks. Comfortable and all round enjoyable experience. Highly recommended!

Fantastic food and service. Read a review from the local paper and thought I'll give it a try. Was surprised they open for brunch, as it is a bar, not your usual cafe environment. But greeted by lovely waitress and the food was delicious! Definitely want to try other items on the menu.
Psi1971
Was expecting this to be pretty special but my cocktail (Light at the End of Tunnel) was watery and flavourless and the bar food (beef brisket, artichoke salad) was oily, tough and pretty ordinary. There are 2 world-class cocktail bars in the area (The Everleigh and Thomas Olive) so you need to be very good to survive. They're not bad, just not good enough. A half-empty bar on Saturday night is proof of that.
Nick Gazeas
Wow!! Dan and the gang certainly know their stuff!! Amazing food, great setting and the staff are simply perfect. Wouldn't hesitate to recommend to anybody!

How is this not more popular?!!!<br/>Came in on a Friday night,<br/>Greeted by the most lovely hostess, and then the table service didn't fail to disappoint! ... Water topped up continuously! <br/><br/>And did I mention the cocktails!?? <br/>Try the pork cheek!

Exceptional. I came here on a Sunday night with 3 others, having looked at the menu online and expecting deliciousness. Was not disappointed. Our waitress Shakira was knowledgeable and super friendly from start to finish and our cocktails were great, the most amazing thing about the restaurant was the quality, value and inventiveness of the food. We spent around 40-50 each (including tip!) and had several dishes, all of which we're amazing. It's hard to pick favourites but I would have to say the sunchokes, the pigs head, the wagyu tartare and the incredible beetroot parfait - I'm usually not a dessert person and I loved it. Oh, and the oxtail poutine, I had to seriously restrain myself to not lick the gravy off the plate. The sophistication and the quality of each dish was great given the price, especially given other restaurants in the same area charge way more for dishes that aren't nearly as tasty as these. Can't wait to come back and try one of the steaks! Do yourself a favour and eat here!

Great atmosphere, love the style and decor. We had brunch, the Hunter. Lovely food, beautiful smoked bacon and chorizo. Mushroom was awesome! Will be back.

The noble experiment. look no further on smith street. fantastic hidden gem of a venue.. Recently dined here for a family birthday and was blown away. Everything about this place is comfort and welcoming. from the trendy decor, double chesterfield lounges, quirky and very accomidating staff, and a list of whiskeys from bartender dan that will blow your mind, this is a big contender in this area. and i have not even mentioned the food.<br/> tjhink of share plates of slow cooked meat that will surely impress, as well as a list of share plates with dishes so different from a normal restaraunt menu of this style - you feel like you need to be back in a hurry to try what you missed. the third feather in the cap of this place is the cocktails, very resonablly priced - wicked flavours and even one with pop rocks on the side, do i need to say more?<br/><br/>oh and by the way, there is two more floors to this venue - a upstairss cocktail lounge, and a downstairs function room.<br/><br/> You should get down to see Dan and the team without hesitation. You won't be dissapointed.

A case of terrible service ruining what could have been a stunning meal. Food took over 2 hours to arrive and was so staggered in its arrival that some had well and truly finished their steaks before their side orders of vegetables hit the table. The food was lovely but the shared dining experience left a lot to be desired. A noble experiment but an ultimately unsuccessful one.
Sasha
Amazing steak and definitely order the chefs selection Hanger steak and you will have no regrets!! It's amazing!! The burata is like bliss from Italy and even if you don't like Brussels sprouts, order them because they are from another world. Definitely my favourite restaurant in Melbourne!
Lisa
Exceptional food and service. We had dinner last night at The Noble Experiment. Wonderful food. Great service. Good wine, well priced. Small thoughtfully constructed menu, meaning they can concentrate on quality. Very very good. Only one area on which they could perhaps be better is the fit out - it still looks & feels like the old café it once was and could do with an update. That's a very small point compared to the sheer quality of the food which will have us back there within a week or so.
Dale LesZcYnski
Amazing venue, great staff, great cocktails and the foods pretty good too boot! They have a new 90"s and 80"s night that everyone with half a brain should check out! Biggest commendation to all the staff all of them are there to make sure your night is the best it can be! Whether it's just a sit down dinner or a few drinks they're very happy to give you the best experience they can! <br/><br/>Get on down

Amazing experience. Went as a party of four and decided to do the 'till you burst' menu where they just keep brining you food until you scream for them to stop. The food and service were top notch and the desserts to die for. Even at the end the chef insisted we have another dessert just to have the full experience. A fun highlight was the smith st fizz cocktail complete with small bowl of pop rocks. Fully recommend it to everyone

Love this place and love the refurb. New menu is amazing, especially the deep fried Brussels Sprouts! Great service and really friendly staff.

The food is pretty good. But service was soooo slow. We had the chefs menu- $55 for all you can eat & we had to wait 20-30mins between each little dish. They need more staff.

Had a great function last night in the Upstairs Bar. Great space for diverse groups of people. We were well looked after as always with great food, their exciting barrel aged cocktails and we highly recommend that Whisky lovers chat to Dan about the great options to savour behind the bar.

Lovely food, great ambiance, would definitely go back. Had the lamb which was amazing, loved the sauce. Also, a cheese, I don't know what it's called, but was like mozzarella, also incredible tasting. I very much liked the menu, my friend had the duck nachos, which were very good also.

Excellent time and excellent food. Be careful of the Russian roulette of peppers; tests the most hardened chilli aficionado. All good fun though and oh so tasty. Service was very friendly too.
Finer Diner
Fantastic Experience. Forget Rockwell and Sons, Jimmy Grants and St Crispin - The Noble Experiment is the new kid on the block at this end of Smith Street and delivering in spades. Upstairs cocktail bar rocking with some incredible barrel aged cocktails. Also had one downstairs before hoping in to dinner. Not sure who the chef is but they are bloody good - food was impeccable, service attentive and bright. There is nothing snooty here, just good, honest and authentic service, sensational food - and all really affordable. <br/><br/>friends were in there as well last week, ate until late, and had a cracking experience also. <br/><br/>I want to know whats going on downstairs! <br/><br/>Big Arnie said, I'll Be Back - and so will we.

“One of three restaurants we dined at for our one year wedding anniversary was The Noble Experiment. We obtained a recommendation from one of my good friends at work who thoroughly enjoyed her experience. Although the menu changed, the degustation was amazing. The restaurant itself was very cultured with its decor. The price was more than reasonable with the Sunday night $45 pp degustation, with 6 courses. My husband and I couldn’t be more happy with this dinner selection.”

...will emerge in different incarnations every nine months or so. To start they’re going back to the hedonistic 1980s, complete with flashback-inducing dance music, neon lights and classic Eddie Murphy flicks on rotation (get your perms and Lycra ready). The bar has commissioned young local printmaker Naomi Laudani to create a series of hyper-colour pop culture portraits of  pre-Wall-Street-crash icons like Ferris Bueller, Princess Leia, Madonna and Bill Murray. The cocktail menu aims to reclaim kitsch recipes and improve upon them with modern techniques like atomisation and jellies; get a bit silly with a no-longer-cringe-worthy Sex on the Beach, a Grasshopper or a Zombie in a weighty tiki mug. Bendy straw garnishes are still essential ho
Steak Me Out
I went to the Noble Experiment with intrigue and excitement. I knew from the beginning I was ordering a majority of the menu (because it looked so good) and I invited several people to accomplish it. I ordered everything and told them to stagger it however they feel it should be done. In no particular order, baked Cauliflower, fried Brussel sprouts, Beef short rib, 12 hour slow roasted lamb shoulder, twice cooked pork cheek and the wagyu tartare. I also opted for a steak to finish; the wagyu 7 hanger rare for my main, served with aloit potatoes and a fantastic sounding whisky and wine jus.
