Best beef broth I ever tried in Melbourne and quality brisket and shiitake mushroom, While the ramen itself tastes like instant noodles, assume it wasn’t the fresh made one.
Overall if you are searching for good soup, worth trying.

Friends suggested we visit this pop up restaurant that is Texas and Japanese Fusion. We booked in for Wednesday Dinner and it was a lovely experience. 

There were 7 of us so we decided to do the feed me menu. It was $59 each the best part is the chef is very flexible. A few of us have the preferable main dish in mind which happened not to be the one on, chef was nice enough to swap to the dish we wanted as long as we all agreed on the same dish. Entree we had Karaage Chicken, Schnitzel sandwich (our fault to swap to Karaage chicken then everything is fried chicken), a couple skewers. Main we had the pork baby back ribs, they came with corn and a Japanese salad. Dessert is a mix of 4 dishes, all beautifully done.

The only complain is the drink menu is quite limited well not as good as some other fusion restaurants. Service was really friendly. Worth giving it a shot!

Burn city pop up is back and better than ever!
With a quirky take on classics like the “chiko” roll and amazing options for those veggos out there like the smoked mushroom and haloumi burger, meat lover or not your definitely going to enjoy your meal! The highlights for us were the incredible 8 hour smoked beef short rib, and dare we say the smoked cauliflower too? The humble veg was just so tasty! Skip the jalapeño poppers and make sure you leave space for their wholebaked apple - it’s like nothing you’ve ever tasted!

If there was a 3.5 star rating, that would really be more precise. Came here for the Smoked Brisket Burger and it did not disappoint, that's for sure. You really get your 17$ worth of meat there and it really just falls apart when you bite into it. You can really taste the smokiness and the amount of effort put into making the burger. I will say, I would've added a tad bit more seasoning to the meat. The sauce can be a little overbearing. Also tried the truffle fries, which was standard fries and nothing to boast about. Quite stingy with the truffle salt. Would not recommend ordering it. The staff was extremely observant and constantly making sure my drink water was filled. Super friendly and attentive. This would be a great place to bring your date. We sat by the window and it was cozy and private and really nice. The dark ambiance of the place really brings out a fine dining experience without the price tag.

Seriously good! I'd been dreaming about the brisket burger from when I landed and it did not dissapoint, coupled with the mac n cheese I was a happy girl. I went with a group which included a vegitarian, who raved about the mushrooms, another just had dessert - the smoked apple (at the recommendation of our excellent waiter Angelo) which was a win. The service was a cut above. I hope this pop up becomes permanent

There are good pop-ups, but then there are great pop-ups. It doesn’t get much more opulent than it does inside Burn City, the current tenants of Collins Kitchen inside the Grand Hyatt. Exquisitely appointed, with all the fine details well looked after. It’s a pleasure just sitting down and taking it all in.

The Brisket burger for $17 ($22 with a beer Mondays-Wednesdays) is the place you have to start. Well you can do whatever you want but this burger, like Burn City in general, isn’t going to be around forever. The brisket was almost perfect. The Dear Luncher found it to be just a smidge on the dry side. But this dryness was quickly alleviated by applying some of the Burn City BBQ sauce located on the table. A superb condiment. Every other aspect of this burger was first class. Also tried: sweet potato crisps, the herby ‘slaw and some cut chips. All of a very high standard. Service was prompt and attentive.

Get down there before it’s too late, Lunchers.

Burn City Smokers has been in the BBQ business since 2006. A common fixture at functions, festivals and pop-ups, mainly in the Mornington Peninsula, they’ve now secured a residency at the Grand Hyatt. Whilst initially only planned for Winter, the pop-up was so popular that they’re staying on for Spring.

Tasted the burger at the Mould Cheese Fest today and it was hands down, the best burger I've ever bloody tasted. Big props to their house made hot sauce too. Very keen to try the rest of their menu!

A great pop up inside Grand Hyatt Hotel, Burn City is giving smoked meats new life through their sufficiently varied menu. Open now until the end of November, you can't visit here without ordering their 8hr smoked Tasmanian short rib, which pulls straight off the bone with minimal effort. Other must-order's include the brussel sprouts (slightly crispy with a sweetness that goes so well with the accompanying aioli), mac and cheese and the not-so-pretty-but-oh-so-tasty Portobello Mushroom starter. The chips are good, but not the best I've had. Not cheap, but in a way, reasonable for the quality of food you get. I would definitely come back for their meats, and maybe to try their burger!

So it was a Saturday night and we were hoping that getting to super normal at 6:15 would be early enough, we got a table for 830.. Anyway so we watched for somewhere to sit and snack while we waited.

We walked past this interesting sign for a pop up, and decided to give it a try, besides it was in the beautiful Hyatt building, it couldn't be that bad.

We were started off with some complimentary bread rolls. Weirdly we were given two between three people, so we asked for another thinking it was their mistake. We worked out later that the small dense bread roll we were given was actually to be shared between two people.

We decided on the sweet potato chips, beef tartare and cured salmon to start and the smoked chicken and smoked duck as our mains. We ordered a side of the creamed corn and Brussels sprouts.

The sweet potato chips were actually quite tasty, they were ultra thin crisps, paired with a delicious cream cheese dip. The dip was a winner and you can get refills of the crisps if you happen to want to finish the dip like we did. The beef tartare was okay, not quite what we were expecting (a more balanced French style). The tartare was made with good quality ingredients, but tasted too much of barbeque sauce for my liking. Perhaps that's how the Americans like their tartare..

Next was the cured salmon which we all found delicious. The fish was fresh and the flavours well thought out. We all wished the dish was a little bigger, but if you weren't sharing like us it would be fine.

Moving onto the mains, the smoked duck came out, in prisons obviously made for two people, the duck was cooked very well. It was very tender however lacking seasoning. It was paired with a sweet sticky vinaigrette type sauce which reminded us of Asian flavours and served with a side of Asian style pickled carrot. While I didn't mind the duck I thought they could have done more with the flavour, there was so much potential in the meat which was wasted.

Next came the smoked chicken. Usually when I think of chicken I think tender juice flowing from the meat and abundant flavour. We had none of that, the meat was dry and it lacked seasoning. The only saving grace was the nice smoked smell it did have and the mustard sauce it was paired with, which was actually very nice. However if you don't like mustard then you should skip the chicken.

Onto the sides, the Brussels sprouts were something I was looking forward to, usually when their charred they're quite delicious, this side wasn't too bad however I've had better. The creamed corn was very disappointing, it was over sweetened and spiced which overpowered the delicious corn taste we were actually after. Once again I haven't had it in America before, perhaps that's how they like their creamed corn but I wouldn't know.

So overall the service was decent, food was a bit slow to be served but we weren't in a hurry. The atmosphere was beautiful as the Hyatt has a great dining area. I didn't really enjoy our meal that much, the entrees were okay but I won't be back. It's disappointing because I see they have a lot of potential to be great.

There’s no doubt Burn City has their smoking skills down pat, as they undoubtedly dished out some of the best smoked meats we have ever sampled, Melbourne or internationally. The flawless execution, the impeccable service, the quality produce, all made for a simply unbeatable experience.
I’m gonna have to call it, this was THE best Beef Short Rib we’ve ever had, to date. There is no doubt that Burn City delivers traditional Southern American BBQ at its finest.
