Smiley service and cosy interior. I enjoyed the rock music soundtrack. There’s the option for a few Japanese beers and plum wines. There’s a number of options to make the ramen suit you. The vegetarian option is only dry noodle.

We have often waxed lyrical about the excellent ramen at Muso Ramen, but somehow have not updated the blog entry on it since a visit years ago, not long after it opened. Given that we often refer to it, holding it as a benchmark standard for ramen deliciousness, and that it has had a renovation and expansion since then, a new post has been long overdue.

Ramen had always been good but inconsistent. Some days you get heaps of soup in the bowl, some days you get a small amount. Definitely a place to go for ramen on the GC.

I enjoyed Muso Ramen so much. Loved my Tonkotsu Spicy Miso, I should have gone with level 3. Hubby’s Tonkontsu Original was alright. Friends had Tonkotsu Black Soy, Braised Pork Rice Bowl and Chicken Karaage. Broth was strong but not too thick (which I dont like). I’d definitely go back again next time we visit GC.

Hands down, one of the best ramens in australia. I have been visiting for 3 years. The soup and the noodles all hand made in the store. It has an excellent vibe throughout the store. The spicy miso is my favourite coupled with few sides. It is definetly my go to place and one of my favourite. The only downside is there is always a wait!

This ramen and gyoza bar in Mermaid Beach on the Gold Coast is definitely frequented by the local Japanese so I had a feeling it would be a good place. We were hungover the day after our friend’s wedding and all craving some slurpy goodness. . The gyoza came out first – fresh and handmade – delicious. I could eat them allll day.

This simple eatery only has 2 dishes on the menu - several variations of ramen and gyoza - all of which are made in-house.  We were very impressed with the tasty rich tonkotsu miso broth and the yummy noodles.  The staff were very friendly and the food came out super quickly!

The Verdict:
Muso may not be the best ramen deal in town, but with its solid (and chewy) fundamentals, somewhat alternative vibe, and flexible-ish operating hours, it might just become the hang-out in the sitcom of your life.

The Context:
So, I finished work late last night, wanted to check out as many ramen joints and noteworthy food-spots during my time on the Gold Coast, so I rushed over to Muso.

The store's closing time was 10pm, and there were still 6 tables when I arrived at 9:30pm - which was a good sign for me (receiving food) and the shop (that they're any good).

The Vibe:
The space is quite small, with seating for 20 to 30 people inside, and maybe up to 10 in the front street-facing outdoors area.

On the inside, western music posters adorn the wider wall, while graffiti-like black-on-red wall-art lives on the other side, and western heavy metal and rock music fills the airwaves, which work to give the joint a more youthful and less traditional feel.

The Logistics:
Muso has the good graces and flexibility of a popular restaurant: A pair of walk-in customers was able to order eat-in less than 5min from the advertised closing time; and some Japanese-speaking customers came in after closing time, and were able to order takeaway (although by the way they bantered with the counter staff, they seem to either be old customers or friends of the staff).

I'm not saying to wait till the last minute possible to cave into your ramen cravings (FACT: Ramen-Edging is a dangerous art, which can backfire from events as trivial as not running that red light) - but should the urge hit late, you should be able to Crazy-Taxi it to the store, and score a take-out at the very least.

It's 10:17pm now (at the time I wrote this note), the sit-downs are scoffing down their fill, and the final customers are receiving their takeaway order and bantering with the kitchen staff. The atmosphere is quite laid back, and there is no real pressure to down-your-fill-and-buzz-off.

The Deal:
This is another place with no free extra noodles ($2.5). There is the option to upsize your bowl ($2) - which I got out of curiosity (since no other ramen places I've been to offers the option): By comparison with other customers, the upsize just seems to be vaguely more soup and maybe more noodles (the bowl is 80% full instead of 60%) - it's still just 2 pork slices.

On the topic of things that are not free, you also have to pay extra for the red pickled ginger, which some venues (e.g. Ramen Champion) have free as self-serve.

The Feed:
So, I ordered the Tonkatsu Original to assess the fundamentals of the joint, which took 10-15min to arrive (other guests received earlier orders first).

The soup was thick and flavoursome. At the check-out counter, there is a boiler for self-serve soup base, for customers to (a) dilute their soup to taste, (b) add soup, or (c) reheat their ramen.

The store apparently makes their own noodles, and customers enjoy the option of thick or thin noodles. The noodles were chewy (this is starting to become a trend, isn't it) - I liked it.

For the sides, the seaweed is notable in that it's thicker and chewy, and not the crunchy sheets that most places have. The bamboo shoot slices are well-marinaded and deliciously... chewy.

The pork slices are tastily well-marbled, about 2mm thick, and 10cm x 5cm (I specified the dimensions, since the slices seemed to be portioned quite uniformly), which is generous as individual slices, but somewhat stringy for an upsize.

The Punchline:
It seems that the essence to Japanese ramen is umami and chewiness.

Love the Ramen!! It's not as salty! The soup base is awesome! It can definitely be compared to the real Japanese local Ramen! This is a must try if u are in Gold Coast!

Love this joint. My friend spent a couple of years in Japan and said this was as good as she'd had. I don't care too much about authenticity, but this is my favourite ramen.

Tasty ramen at this little restaurant. The miso broth was really flavoursome. My only complaint was that the servings are a bit on the small side. We also had the pork rice, but that was a little bland with only a few pieces of pork on a bed of white rice. Go for the ramen! The heavy metal background music was a bit much ... not quite to my taste

A nice little ramen shop found at Mermaid waters along the GC highway past Broady. I love this restaurant, their ramen and soup bases are delicious! I don't like the Robina franchise but this one at Mermaid waters is always 'DA BOMB! '

Better than Hakataya ramen 😂 I tried their pork rice too , the portion size is small, but it's delicious. I like the broth of the ramen, but this place is always full and close on Monday night :(

We've been looking for a good ramen place for a long time. Stumbled upon this little shop while we were checking out Itoshin next door. Decided to go with this place instead. They have big meals for great prices and the ramen is amazing, so delicious.

I've heard about this place so much that I decided a trip down was probably worth it.
I was not disappointed at all.

One problem with most Ramen places is they don't offer SeAbura 背脂 in the Ramen, which translates to pork back fat. SeAbura really gives Ramen flavour. It gives the broth a richer flavour and really brings out the tonkotsu 豚骨 flavour.

I found that most the reviewers on here hadn't really mentioned it so a big tip to all and one you would overlook when reading the menu!

The SeAbura is offered as a free option and I totally recommend it with the Soy Tonkotsu Ramen 醤油豚骨ラーメンin combination with the thin noodles 細麺

Ive also tried their Spicy one. Just right! I would have preferred an egg in there also but the broth made me happy.

Delicious viscous broth. Beautiful simple pork and fish flavours. I couldn't stop eating it, even finished all of the broth in my bowl. Recommend adding a touch a dashi as broth is super rich. The noodles were the perfect texture as well.Had the pork pan fried goyoza and the boiled beef goyoza also, both were delicious. Super cold beer and the owner Akira is a legend, super nice guy and helpful. I'll be back for sure

The best ramen I had in Brisbane. The broth is thick and authentic and the noodles are delicious! I suspect it's handmade with such great texture. Many options to choose for broths and you can have rice too. Must go!

Exceptionally brilliant food. Exceptionally brilliant ramen. Gyoza is wonderfully amazingly tasty and juicy! My go-to ramen here is the black garlic miso with thick noodles. The broth is on the fattier side which I do enjoy. Very very very tasty. Definitely a chef's noodle place.

Choice of the GC Rameneries!
Still a fan and Patron of both Ichi-Ban Boshi & Hakataya, but Muso is worth the trip further south. Super friendly staff in a chilled atmosphere, whereas hakataya is a bit more kthanxbai. Ichi-ban to their credit isnt a ramen-only joint so is only fair enough they dont do the best. The Cheese Gyoza, however untraditional is oh so delicious! And the real connisseur will get the free serving of pork back fat in their ramen bowl.

A laidback atmosphere with friendly staff, you will be enjoy this place even more if you are a fan of rock music as it appears the owner has an appreciation for this genre with Pink Floyd and ACDC posters decorating the walls and rock music playing. It is the richest soup base we've ever and can nearly taste the hours it must have taken to get that flavour intensity.

Muso is usually packed with Japanese diners and deservedly so. It’s spotlessly clean and you’ve got to love that everything is made from scratch by Chef Akira Takagi: noodles made in house using a machine especially imported from Japan, ‘Tokotsu’ pork stock cooked for hours to develop the rich flavour, even bamboo shoots made in the traditional way!

Best ramen on the Gold Coast and rivals Taro Ramen in Brisbane in my opinion! 🤩❤️ From making their own noodles to the thick cut of meat to the rich broth, every bowl I’ve had at Muso has always been high quality and are extremely filling; you’ll really get your money’s worth! 🤤🤰🏻 🍜 🍜✨💕 The sides and cocktails are amazing as well!! Definitely get them but only if you can share so there’s enough room for the main attraction 🤣😋 They’re best for dine in but I’ve gotten takeaway before and it was still equally good. I’d recommend booking a table ahead around dinner time as they can get busy.

Can't believe it took us this long to discover Muso - it's the real deal. If you're a ramen enthusiast, put this at the top of your list to try out. The food was delicious, the vibe very cool and the staff super friendly and laid back. Perfect to bring a small group of friends as it's on the noisier side. If you're coming on a busy night, good idea to book ahead of time as the place is really popular. Taste: ⭐️⭐️⭐️⭐️⭐️/5 Value for money: 💰💰💰💰/5 Customer service: ❤️❤️❤️❤️❤️/5 Atmosphere: 😍😍😍😍😍/5 Will visit again: ✅

Friendly staff, food was ready quite quick. Tried the new Takoyaki and it was absolutely amazing. Ramen was nice but broth was a bit too salty for my taste. I ordered thick noodle but I think I may prefer the thinner one instead. After all it was a great experience and I recommend the place!
