Amazing bakery, the sourdough bread, especially the Bayside is sublime. The croissants are exactly what a real croissant should taste like, crispy and flaky on the outside and buttery moist melt in your mouth soft inside.
My local cafe stocks Mattisse pastries and their almond croissants are the best I have ever had. 👏 👏 . Unfortunately I can’t judge on anything else but I have every intention of dropping in when I’m next in the area.

Best patisserie in Melbourne hands down. Only negative not open on Sunday's and pricey but worth it. Cafe it ok but we go there for our weekend treat...

Superb sandwiches. Hummus on Friday is the real deal. Love it!
They're baking Mattisseterpieces. I don't know if I'd go so far as to label Mattisse's breads as works of art, but they're not paint-by-numbers either. (That would be Baker's Delight.) I popped in here for a lunch snack whilst bicycling through the auto repair shop wonderland that is Highett, just because it was so weird to find a quality food operation in the midst of an industrial zone. Lunch-bucket cafes I can understand, but a place that aspires to foodiness? (It's got a swack of "Foodies Guide to Melbourne" citations on its entry door spanning a half dozen years.)
I had their special of the day, a "Balkan sandwich" for $7.50. I don't generally like 1.) unheated bread on sandwiches and 2.) eggplant-based vegetarian sandwiches. This one, me likee! The brown-coloured bread roll it came on was airy, tender and mildly sour in flavour, even without a run in the oven. The soft eggplant wasn't bitter or slimy. Its taste and texture went well with the pickled red capsicum and feta. It wasn't tangy enough to be Bulgarian; probably Macedonian instead. I'm a feta freak, so I pay attention to these things. My flat white was forgettable, but this is a bakery, not a coffee shop.
Mattisse seems more oriented toward baking and selling bread than doing food. Service was a little disjointed but all the hipster-looking staff were friendly. It's Spartan inside -- lots of plywood, boxes and empty coffee sacks showing. This is not industrial chic pretentiousness -- it's bloody well REAL industrial. Good on 'em for being straight-up about it. I would have bought a loaf of what they have left -- by 2 p.m. Mattisse's shelves were almost sold bare -- but I still had 1/3 of a loaf of bread in my fridge from the sourdough bakery at South Melbourne Market. Next time I'm out that way...
Fantastic Friday hummus. On Fridays these guys serve the hummus with pita bread. I know my hummus and without a doubt this is the best hummus and pita in Melbourne. If you get the "Full" hummus plate with pita, pickles, olives and chili, you won't need to eat for the rest of the day. This was a very good find.
Picked up a Rustic Iltalian Ciabatta today; it was absolutely amazing! I will definitely be back. Great crust with a light bubbly airey centre, just the way it should be. It's right next door to Marko's.....two birds, one stone!
I eat banh mi at least 4 times a week and can say without a doubt this is the best banh mi I’ve had from all over Melbourne.

Excellent bread, love the Wild Rye and Olive bread, and with the in-house roasted beans, they serve great coffee. Gluten free bread is also available. As you would expect, the patisseries including croissants and danishes are yummie. The cafe serves breakfast and lunch, the Friday Humus is highly recommended.
I bought a croissant at Cleo in Elwood and really liked it. So I asked and was told that the croissant was supplied by Matisse. Long story short, made a trek to Matisse and it was worth it! Hummus and shakshuka dish was delicious. Matisse serves it with a side of pickles, baguette bread, and a chili relish kind of dip. Good coffee, wonderful pastries, great service! Excellent sourdough breads - potato and herbs, and the wild rye! 👍

Amazing croissants! Everything is perfect in them: shape, colour, buttery (but not too much!) taste, cut-out texture... Highly recommend! Sourdough bread is great as well.
