A very lovely restaurant with very good service. The waiters are students but they do an amazing job in making you feel comfortable. The food service was great, very nicely presented and serving portions were reasonable. Definitely feels like 5* star dining experience but not quite there yet. Price was a bit high but that's expected considering the location.

This was my husbands and my second visit to William Blue Dining. As the first time, dinner was absolutely perfect. Service was great, our waitress Janna was friendly and amazing and we have no doubt that at one day the students at this restaurant can make up the absolute top of Australia's hospitality scene. We can recommend this place to anyone who is looking for a fine dining experience, for a lower cost, and who are looking for exceptional service.

My partner decided to surprise me and bring me here for my birthday just recently. I knew what I was getting into and I was not dissappointed coming out by the end of the night! Food was divine, Ambience was relaxing and calm and despite it being a very quiet evening everything flowed smoothly as it should. Had a really great time here and definitely recommend if you're looking to get your toes into fine dining without the steep price point. The food quality and quantity was spectacular for all dishes. I also recommend starting with some oysters (half a dozen or a dozen) and trying out all the dishes if you are in a small group. the staff are friendly knowledgeable and will always keep you in check and make sure everything is okay. The toilet is also fantastic. Parking might be tough but it is very close to Circular Quay station and there are shops in the vicinity if you want to explore the rocks. The menu changes every 6 weeks but if you get a chance, the chocolate cake and the lamb loin is a must! I also recommend going in a group but definitely a good place for a date as well.

Came here yesterday for a stunning lunch. The place is very relaxing and enviting. It has a nice atmosphere and is a very relaxing place to enjoy beautiful food, wine and company. The staff were exceptional from start to finish. Very attentive and pleasant in a non intrusive way. It was fantastic to see all the chefs hard at their masterpieces in the open plan kitchen. Loved watching them all work. A very calm and collective kitchen it was!! The food was some of the best ive eaten in the world. It was 100% fine dining at its best! The presentation was superb. I will be making this place a regular from now on! Cant wait to take my family here when they come to visit this year. A very special place with very special prices! I had my birthday dinner at William Blue last night. We were greeted warmly and professionally by the staff who showed us to our table for three, where our server Ruby doted on us all night, with her sweet manner. This is well worth a visit. We sampled (between 4) most of the items on the menu and were impressed by the presentation, service and quality of food. The waiters are not quite comfortable in their roles - only a few services under their belt - but very willing and charming. They were not assisted by the use of the slates as serving platters - this could be rethought. Very good and reasonable wine list. Please add another, preferably Australian, cider. The current one is sweet and overpriced. A very good experience, well priced and well worth a visit by all.

A friend recommended we try this place. It's run by hospitality students and affords fine dining at reasonable prices. We had the tempura squid and beef tartare for entrees and ocean trout and spatchcock for mains and finished off with a shared apple tart. All dishes were beautifully cooked and presented. Service was perfect. Worth a try.

We celebrated our son's 26th birthday at William Blue and had a lovely evening. The food was fantastic and the staff were very attentive. We had both vegetarian and gluten free dietary requirements in our party of 8 people and they were so nice and made sure that everyone was catered for and ALL the meals were delicious. We did pair them with the wines and this really enhanced the meal. Overall for a student run restaurant it was impressive. Great location.

It is hard to believe a training restaurant can be of this level! The food is made by culinary students and floor staff consists of hospitality students, and most of them from overseas which brings incredible exchange of culture and personality. It is great to interact with them and their professionalism makes you forget they are still being trained. The food is excellent! The price is very cheap for a fine dining restaurant in Sydney and the quality is undeniable. It needs to be booked in advance and usually weekends are very busy. You can always try to walk in but it is not recommended.

We visited William Blue for a third time with two of our young adults. This time it was a set 5 course dinner. The food was again wonderful - the chance to try food I would never dream that I would enjoy. We also sat near the kitchen this time -which gave us a chance to watch the young chef's in action. This is a great place to host large groups. The food is delicious, the service prompt and the atmosphere is great. The food below was from a set menu so they had alternate drops of each of the three courses. Pictured below are the bavette steak with bone marrow, pan roast mulloway (fish), toasted lime and coconut parfait and chocolate cremeux. The fish course was my favourite, the sauce had such a great lemony/butter flavour that worked well with the white-meat fish. Tempted to try to recreate this at home!

What strikes you as you walk in to William Blue Dining is the lovely set-up. The ambience has neutral colours which give it  crisp clean lines. The tiered walkway gives it another dimension and you can clearly see that it is fine dining. You can see the open kitchen and this is where the brilliance happens. The College is staffed  by hospitality students. There is a wall with pictures of those that have graduated previously. This is a lovely touch - to acknowledge these accomplishments.

William Blue dining offers an upmarket dining experience at great value, providing its hospitality students with an excellent platform to build their professional skills in a real world environment.<br/><br/>The food options aren't the most extensive (4 entrees, 4 mains and 3 desserts) but it's workable as they change the menus frequently to keep things interesting. Also, at $43 for a 3 course meal, it's excellent value for money. We didn't have dessert so I will only comment on the entrees and the mains.<br/><br/>The entrees were the clear standout as principally they were all visually appealing, with interesting textures and supported by a nice fusion of flavours. The slow cooked pork croustillant (french for crisp) was amazing and I would highly recommend it. <br/><br/>The mains were well portioned and visually appealing. However, I found the Silvery Dory was let down by its broth. The clear and simple flavours in the broth were a bit too light for me. I would recommend adding a puree to the dish to complement the wonderfully steamed fish. The oomph was missing but all the ingredients were very fresh.<br/><br/>The service is warm and friendly but it depends on the experience of the staff serving you. I would recommend going with an open mind and supporting the students by providing them with opportunities to improve. For ex: After drinks orders were taken the server cleared away wine glasses from those who weren't drinking. However, he cleared my glass even though I had ordered for wine. I politely mentioned this to him and he immediately apologised and returned the glass. Considering the students may venture out into restaurants were patrons can get quite snobby, any feedback we can provide during the formative development may be of great value.<br/><br/>Please dine at William Blue not just for the friendly service and beautiful meals (instagrammers take note) but to support the hospitality students and contribute to their overall development.

Heard good things about this restaurant, but we were highly disappointed. Starting of with the salmon entree dish, it was so bland, literally just mushy fish with no flavour. the duck entree was bit better but still wasn't great, had a small bone in it which I almost chocked on. The swordfish, it had okay flavour but fished was just mushy (not cooked well. Spatchcock was is the only half decent food on the menu, nicely cooked and flavoured. Desserts weren't average, couldn't finish it. We weren't expecting the best service from a student restaurant but this is well below expectations. They aren't willing to talk to customers, they don't explain things clearly even though our waitress was a 2nd year student. Compared to other hotel/restaurants school restaurant services. This one is far below the average. Would recommend any other higher professional hospitality colleges.

Service and food disgusting---absolutely no service we had to call the waitress to serve us, clear the table, she removed all wine glasses without asking if anyone of the 8 of us wanted wine. Totally hopeless! The fish was not cooked and smelt obviously not fresh even when sent back it was represented exactly the same. The duck dish was well presented and apparently tasted OK. There appeared to be no one in charge of these young students. Although inexpensive it is not worth going.

I went here Friday night for the first time. It is a training restaurant for Billy Blue trainees. The food was good. Service needs more training! They were too eager and when one person wanted something all three of us ended up with it too so we all got the cocktail one ordered which we all drank and paid for to be polite. Worth a visit but be patient!

This probably has the best service you can ever find in a restaurant which is pretty cheap for fine dining.At only $55 you get a 5 course meal and with $35 extra 5 different wines which accompany each dish.The food here is fabulous, this restaurant is a schooling restaurant where training chefs come to cook and learn.The staff is a lot more attentive, even though when serving the starter which is some bread they dropped it on the floor 2 times before they could actually put it my plate.My favourite is the Grilled Yama Prawn which was very delicious! I highly recommend coming here to support the students!

Located in The Rocks is an award-wining, hospitality student-run fine dining training restaurant, William Blue Dining. All staff members are students who are learning by getting real life experience in the kitchen and on the floor. I believe they don’t have walk-in tables so make sure to book ahead of time. We were quite a large group of 10 so coming on a Monday night meant we had a better chance of getting a table being early in the week. Honestly, the food and service here is professional and extremely good value with a three course meal costing $38pp, that’s hella bomb! They’re also licensed and the menu changes frequently.

Fantastic experience. Food was great, well presented and perfectly balanced. The wine was lovely as well. I must say the staff were learning fast, a little too fast sometimes while serving. But I love the effort they are putting in. If you can book a table , then do!!!

We've actually been wanting to try this place for a while but since it's 3 course dining at a bargain price, it was a bit difficult to get a booking for a big group at short notice and it took us a while before we finally went there.<br/><br/>Loved the complimentary house made bread though the butter didn't feel much different from normal butter. Wasn't sure if it was actually Pepe Saya butter.<br/><br/>I had salmon pastrami for entrée and also had some of my friend's chicken liver parfait. They were both good but the toasted brioche felt a bit too hard.<br/><br/>For main, I ordered the seared lamb cutlet with slow braised shoulder croustilant. That was really delicious. Thought the accompanying dutch carrot didn't add anything to the dish. We also had some steamed greens and cauliflower gratin as sides to share and they were good.<br/>We ordered all of the dessert and a cheese plate to share. The orange and cardamom brûlée and the chocolate mousse were good<br/>Didn't really enjoy the rhubarb tart and the cheese platter was alright.<br/><br/>Was an enjoyable dining experience. I've been told the menu changes regularly so am keen to go again and try out their new dishes.<br/><br/>P.s Google maps seemed to be giving wrong directions for public transport from town hall to the restaurant so we caught the train to to circular quay and walked up George street till we hit the address. It's actually quite easy to miss William Blue Dining at night since most of the window blinds are down.

Most of the food we ordered was quite lovely, except for the seated kingfish which was overlooked. The slices of cheese were also quite thin. As this is a training school, it reflected in the wait staff however they were all still very lovely and friendly. Perhaps more attentive than even some of the other fine dining restaurants. William blue is a chefs training college. To be able to support the culinary education of a chef and at the same time enjoy a lovely 3 course meal without breaking your wallet is a great idea.<br/><br/>We were a group of 8 on a quiet Monday evening. I started off with the salt cod croquettes. Crisp batter, tightly packed cod, with a lovely bernaise sauce. Croquettes was mildly over with salt but no complaints otherwise. I also stole a chunk off my friends chicken liver parfait and found it to be divine. Really soft on the palate in flavour and texture. <br/><br/>For main, I had the seared lamb cutlet. The lamb was cooked very well with a good sear on the exterior and medium rare in the middle. There was a great accompanying jus but a lack of it! <br/><br/>We were quite full and had some dessert to share. I was able to try the creme brulee and the rhubarb tart. I think there is room for improvement as the tart pastry was not sufficiently crumbly and the rhubarb was a tad too sour and sharp for my liking. Creme brulee texture was great.<br/><br/>Great quality to be had for the price of 38 bucks per person (even with a glass of wine). I hope this place churns out more budding chefs to support the vibrant sydney dining scene.

Great wine list (and affordable), good service and nice food - just don't expect it to be super-duper fancy. They are in training after all!<br/><br/>Really enjoyed our 3 course meal here on a Friday evening. We made a booking for 7 PM and were promptly shown to our table, offered water, bread and the wine list. The specials were carefully explained to us and the service attentive albeit a little unpolished (however, full points to all the staff for trying as I can only imagine the pressure they are under as students).<br/><br/>As we were close to the entrance, our dedicated waitress also had to deal with walk-ins and turn them away as they were fully booked for the evening. She did this with just the right level of politeness and regret.<br/><br/>Pork belly entree was well presented and delicious. My main which was the tuna steak which had a delicious quail egg and croquette accompaniment and the lemon tart I chose reminded me of something homemade. The pastry was a bit soggy and although neatly presented, it lacked the wow factor. However, we had a really enjoyable evening bearing in mind that this is a restaurant for trainees!<br/><br/>It is great value and if you keep an open mind, you will have an enjoyable evening. Just remember it is not your typical $200 per head fine dining restaurant. Also, be prepared that ingredients may be substituted at the last minute and so may change slightly from the menu.

From the service, interior, wine and to the food, everything was phenomenal. <br/><br/>The price is surprisingly really cheap for this fine dining student award winning restaurant. <br/><br/>Definitely recommend it!

One of my first meals back in Sydney was with some friends of mine at William Blue Dining. Another friend of ours who has since gone overseas often raved about the good value of a meal here. It’s not hard to see why when $38 gets you a three course meal with complimentary bread to boot. Entering William Blue almost half an hour late (sorry friends), here’s a pro-tip for you. Make sure to key ‘William Blue Dining’ and not just ‘William Blue’ into Google Maps because while they’re both located at The Rocks, they’re not in the same location. The former is the restaurant while the latter will probably take you to the school of hospitality and management. This is the reason beyond the affordability of the food, both kitchen staff and waitstaff alike are students in-training for the hospitality industry. Full menu can be viewed here.

Essentially, the restaurant is a ‘classroom’ for hospitality students of William Blue College of Hospitality Management to gain real-life experience and undertake all the duties in service and cooking.<br/><br/>We were greeted very professionally, promptly and warmly when we arrived for our 7pm seating. The interior is neat and tidy, and it does give a sense of a fine dining restaurant.<br/><br/>We were attended pretty quickly; received our menus, served water and had our orders taken down without any fuss. You can tell the students are really wanting to do well and trying not to make a mistake. But as a result you can sense their unease and nervousness, which in effect caused a few bumbles here and there.<br/><br/>The complimentary house made bread was warm, soft, and delicious to eat with the PepeSaya butter. All the dishes were surprisingly served super quick and the dining experience lasted for about 1 hour.<br/><br/>We started off with the entrees, having the braised pork belly with apple slaw, pickled cauliflower, spiced fennel puree, and the kingfish ceviche with blue swimmer crab, baby coriander, lime, chilli, mustard cress. I was really impressed with how it was plated, both entrees looked beautiful. The pork belly was one my favourite dishes of the night, being tender, succulent and tasty. The apple slaw was dressed nicely and tasted delicious. The kingfish ceviche was not bad, but it could have done without the lime. I wasn’t expecting the whole segment and it was really off-putting to eat, as you can imagine it was pretty sour.<br/><br/>On to the mains, we had grilled ora king salmon fillet with crispy skin, pink pepper sauce, sweet corn, prawn, chives, braised witlof, plus the smoked spring chicken breast and confit leg with celeriac cream, compressed watermelon, potato croquette, pepper jus. Both the salmon and the chicken were cooked well, the salmon had nice crispy skin and the chicken confit was tender and moist. The watermelon was questionable and seemed out of place on the plate, and the jus could have been a bit punchier. Both dishes were, ok. But the highlight was the potato croquette, which was pillowy soft on the inside and had a nice crunchy outer coating.<br/><br/>Last but not least, the desserts. We ordered the orange and cardamom crème brûlée with brandy snap, citrus salad, and the dark chocolate and honeycomb parfait with meringue, dried raspberry, lemon balm. The crème brulee did have that notable top layer of hardened caramel, but it was a tad too thick. Again, it could have done without the sour lime segment on the plate, and maybe need a little more time to set. The dark chocolate and honeycomb parfait was the dish of the night for me. It was absolutely delicious and it was texturally really enjoyable to eat. However, there was a lot going on, on the plate – maybe one or two elements too many.<br/><br/>I absolutely love the idea of a training restaurant and with more confidence and training I know some of the students will go on to accomplish great things in the future. ...the food itself is almost always excellent and their menu changes with each semester, possibly so that the kitchen trainees have something new to learn each time. This is actually a good thing cause there’s always an excuse to go at least once every few months to try something new. This time around I got these dishes.

I have to admit I was a little bit hesitant at the thought of students running the restaurant, but those fears were quelled the moment we walked in and found a lovely interior with quite a professional presentation and attentive waiters

For a bargain price of only $32, you can enjoy a 3-course fine dining meal which sounds too good to be true. It’s a bit confusing to find the restaurant because it is situated on level 9, but little did we know that the street level entrance is actually level 8 instead of Ground level, so you only need to go up one flight of stairs. Once we did find it, we were greeted by very professional and polite wait staff who took our orders promptly.

My choice for entree was the baked goats cheese "en croute" with a pear, witlof and hazelnut salad and I couldn't have been happier with this dish. The presentation was immaculate. The goats cheese was served on a toasted baguette and was just a little melted. The cheese was deliciously salty and had such an earthy "ripe" flavour which I think was enhanced by being served warm. The salad added a fresh counterbalance to the richness of the wonderful cheese and I loved the addition of hazelnuts to the salad - fancy.

Fantastic 5 star food!. Great restaurant, which is staffed by students under the supervision of trained professionals. Fantastic food! We tried two entrees ($9 each) of goats cheese and gruyere souffle with waldorf salad, and a rabbit and pork terrine. Delicious! Then a main ($16 each) of duck breast with root vegies, and swordfish with vegies, and a side serve ($4) of potato gratin. Topped off with a chocolate mousses with berry compote to share ($7). The food was top notch, and a great wine selection as well. The wait staff were also students, and are doing a fantastic job at building up their skills, ready for the hospitality world that awaits! We dined on a Thursday evening, and it was just about full.

Great Food at a Training Restaurant. Great service and good fine dining food. The Molten Choc dessert was to die for and the apple tart wasn't too bad either!

Great!. Fine dining prepared by students under the watchful eye of professionals. This really is a fine dining experience at a fraction of the price. Remember that you are surrounded by students who are learning so the experience will feel a bit strange to some but I think it's fantastic. The menu changes roughly every 6 weeks. Our meals were truly spectacular, the price is amazing and our wine was lovely. Well worth a visit.

It's a training restaurant so you get fine dining (the food is amazing) at a fraction of the cost ($32 for three courses) and get to watch the students learn serving skills for the 5 star restaurants they'll soon work in. I love this place!
