Really cool venue on a hidden entrance on the side street. The inside of the venue is very cool and the cocktail list is extensive. I love a good prohibition style bar with co Kraus and champagne flowing.
Very cool bar which imitates the vibe of the prohibition era. The basement is for people who want a loud vibe with a DJ etc and the ground floor is a more quiet chilled out vibe. Choose carefully. The drinks are phenomenal.
Does a great job of re-enacting a Prohibition era speakeasy in a dimly lit, vaulted basement, complete with live music, dramatic backdrop of criminal mugshots, and staff dressed in flapper dresses, lavish headbands, and pinstripe suits. The cocktail menu was amazing - I loved the Andalusian Sour (whisky with dragonfruit) and the Flower of the Mountain (sherry, Aperol, and blood orange). Both were fruity but not too sweet.
That being said, the wait at the bar is really long on a Friday night. There is also a 10% service charge if you get a table.
What's not to love, old school vibe, well thought out decor, lovely waitresses dressed for the period, and lovely food at decent value. I love the cocktails too. Always a highlight of an evening out. Best thing about this place ? Late hours when everyone is suffering from lock outs.

It is an excellent bar with ancient decoration located in a basement at the corner of the lane.
It is hard to find because you have to open the heavy fire door then walk long way down to the basement. But you will find every patience worthy as you can see the fantastic bar with perfect atmosphere, friendly service and best cocktails.
I ordered “the club round”($20). Without any exaggeration, it is the best cocktail I have ever had. It tastes little bit sour from the row of flower on the top, a bit decorous from the purely white and thick foam, some sparkling and sweet from the pink liquid. It has no bitter or simulation like martini or manhattan. Suitable for girls, highly recommend it.
The atmosphere was fantastic and everywhere is clean and tidy. The stuff is really friendly. I had a nice talk with one of the stuff, an elegant lady with long dress.

I went this place on a Friday. Crowded but a great place to enjoy a live music, drinks and nibbles.

Excellent service. Attention to detail was impeccable. The waiter (whom I apologise that I didn’t get the name of) checked that I had finished my whiskey prior to clearing the glasses. As I had been burnt before at another establishment I appreciated the thoughtfulness. The hostess at the end of the session was very helpful. Can not recommend this place enough.

Had a few drinks here before dinner at Mr. Wong. Amazing 20's themed bar. When we were there it was the start of the negroni week, so there were 3 exciting negroni cocktails, one of which was amazing. The waiting staff (men and women) were dressed up in 20's outfits and looked simply amazing, clothes, hair & makeup on point! Only downside was that we got some vouchers for free drinks, which we said we would use after dinner which they said was fine, but when we came back they stopped pouring those drinks.
Great cosy bar in the CBD that does beer wines and yummy cocktails and delicious share plates, perfect for a friday out with mates!
We got their cheese platter and baked cheese plate, both were so good!
There’s something sexy about a speakeasy and Palmer & Co is seriously seductive. When the light is on in the laneway above, head downstairs and be greeted by a word of debauchery and bootlegging. All timber, exposed brick and 1920s touches, the space is a study in Art Deco design, as well as prohibition era.
This rum-runner is the prohibition-themed bar that puts all prohibition-themed bars to shame. Everything is just on-point, from the flapper-dressed waitresses and dapper as barmen to the vintage glassware your vermouth cocktail is served in.
Deep underground, phone coverage is questionable. What is not is the cheese and charcuterie platters. They’re the best the city has ever seen. And the kranski hotdog with carmelised onion, mustard and tomato relish is pretty bloody good too.
Be warned: Friday nights get hectic.
This basement bar is a little gem. Overwhelmed by its vibes and nice atmosphere when we came here on the Saturday night. Nice cocktails and drinks menu. The bar food selection could be better (and the taste). But definitely worth a visit in Sydney. Will definitely come back.
Taking its name from the taxidermy business that used to be housed in this site, Merrivale speakeasy Palmer & Co. spares no costs when it comes to creating the prohibition-era 1920s atmosphere it’s going for.
Palmer & co is a speakeasy 1920s themed bar in the CBD. When you make your way down the alley and into this bar everything just fits! Settle in, order a cocktail and get lost in another world. Drinks I recommend include the Manhattan cooler and the apothecary - a gin, cherry and lavender cocktail. Be warned you will not get much change from $20 so you make only want to drop in here for one or two. There are bar snacks on offer - my tip is to grab a cheese and charcuterie board and sit back and sip cocktails whilst you watch the 1920s roar on.
A hidden gem for a late night tipple and nibble. It feels like you're stepping back in time with cozy lounges, intimate lighting and sturdy 'old fashions'... wait staff play the role well, kitted out in 1920's garb.
Although not as popular as it once was, it does have a decent charcuterie and cheese board on offer and is always a fun spot for school night shenanigans.
A cool bar underground, accessed from a lane way off Pitt Street. Another Merivale venture so all funds have been used to make it look amazing. It's like you're back into prohibition times and this business is thriving underground. They have a few different bars and plenty of drinks, cocktails, gins and whiskeys. No pricier than your typical CBD bar but steeper than a local pub. We got whiskeys and it was cool to watch the bar man personally cut a piece of ice so cleverly. I would only go in a small group as it's very busy and the seating options have small tables to sit at, mostly people were standing. Food options were amazing; massively overflowing and delicious antipasto plates from the 'charcuterie'. They also do Mac and cheese, hot dogs and pretzels. The waitresses are all dressed 1920's style so all the theming is spot on. I don't have many photos as it was packed and very dark - you'll have to trust me and check it out yourself.
Great night out here on Friday. Love the atmosphere and vibe of the place. Quite unique. The staff, although busy are very friendly and helpful.

Palmer & Co. is a fantastic little venue weaseled away in the laneway beneath Establishment. Even just emerging to find the main entrance you are set up for a whimsical experience. Not dissimilar to Baxter's Inn, Palmer & Co is set underground, with a an old-world feel to it. The drinks and cocktail prices are more or less on par with those in the city and some in the inner suburbs, albeit with a stunning interior to pleasantly sit and enjoy some good laughs with friends.
The venue is superb! I came here on a romantic date night and it was perfect. I love the theme, the decor, everything! We ordered the raw veggie and dips, which we didn't particularly like, but I would definitely go back for the drinks.
What a great venue! Having lived interstate where places such as this didn't exist, I was in heaven. I love how discrete it is from the street plus it's dim and dark atmosphere below street level (some of us look better in mood lighting) . The history of the building adds to the attraction. We didn't eat here but had a couple of drinks before heading upstairs to Mr Wong's, we thoroughly enjoyed it. Another Merivale property in what seems the 'Merivale block', this one, albeit drinks a bit pricey...hits the mark. The only suggestion is if they're going with the whole speakeasy theme is to maybe have a Dixieland jazz band or similar to add to what is a "quiet'ish" atmosphere at times.

This place rocks. For all that is worth. The blarring music, and crowded and confined tables. It can be quite hard to hear the person you are with at the best of times. What's worth it, is the vibe! The mystery mood that it sets, with the dim lighting, the caged umbrella holder as you walk in. Oh! And you've got to love the table service.
Great cocktail menu, and good food menu. The only comment about the food menu is... Wishing that there were more nibbly stuff instead of just big solid meals. Ended up ordering the pretzel because the was the smallest thing on the menu. It was suffice but not exactly satisfactory. Oh well, just wanted something to nibble on when drinking.

I would return and drink at this drinking hole.
Very underground and cosy. Seats were hard to find but that's expected. Americans love this place. (On a side note, the cartoon logo is brilliant)

It gets so packed but it is very cool here, love the vibe and the decor. The drinks are great however we did not get to try the food so next time we will definitely be ordering everything off their menu.
Discovered this place with my sister and we loved it. From the moment we walked in, we felt as if we were part of the 1920's scene. It was a little pricey for our student budget but worth the splurge as we spent hours there embracing the vibes and chatting away.
Great place to come for drinks and a bite to eat.Although we only had the pretzel and some olives, the drinks and the service was wonderful. the staff really know how to make you feel special and welcomed.
we really want to come back and try the food. they seem to value quality and service. the pretzel we had came with a beautiful mustard which i could eat on it's own and a nice cheese sauce that was beautifully seasoned. It went great with the pretzel. as for the olives, this was any ordingary olive snack. it came with sliced capsicum which i believe was marinated and the olives were delicous and not too over powering. cant wait to try their charcuterie board.
as for the drinks....they were absolutley delicious!! not too strong but not too weak and creative ingredients. this place is a must and right below establishment. would go here instead of establishment and cozy environment as well.
What a hip little bar in the underground building of Establishment. The minute you walk in you're greeted with friendly bearded waiters and bar tenders. They had a jazz band playing which really set the mood. Cocktails were great and about $20 a pop - the standard these days. Go here with a group of friends on a Friday or Saturday night, they have a late night food menu :)
Palmer & Co emulates speakeasy theme - which has seemingly captured Sydney’s imagination for five years - beautifully. Tucked away on Abercrombie Street in the heart of the CBD, you descend down the stairs to enter a delightful basement bar. As you approach, you can hear laughter, arrogant conversation interwoven with the sweet accompaniment of jazz. Beautiful waitresses greet you in flapper dresses as they swan gracefully around the tables.
The bar itself was another revelation. Everything was supremely polished. The way the garnishes were set up, the glassware, the spirits -- everything was absolutely immaculate. The backbar was beautifully lit and the spirits proudly displayed on lovely timber cabinets ...
The cocktail menu is short, featuring their signature list, long lost forgotten drinks and prohibitionist cocktails. What impressed me was the variety on offer. Palmer & Co doesn’t purport to be a “speciality” small bar, such as The Barber Shop or Baxters. The prices were all at the $19 mark, which is reasonable considering the standard of the venue.

Had a great time with a bunch of friends here, it's a very cool prohibition feeling place. You have to find the entrance by following signs painted on the side of the alleyway and head downstairs. The drinks are quite pricey, but after watching the effort put in by the bartenders you feel better about it.
We also gave the soft pretzel with mustard and cheese dip a try which was amazing in our drunken state. Great spot to take some friends or people you're trying to impress if you've never been.

Awesome prohibition styled saloon in the heart of the city. The bar itself is beautiful - you really feel like you have travelled back to the 20s. The cocktails are tasty, if a little overpriced , and the service is friendly and knowledgable . Perfect spot for an after work drink/ great for groups. Can get busy , try get there early if you can!
When it's good, it's great. But when it's bad, it's terrible.
Cocktails are excellent, service is hit and miss in terms of helpfulness and politeness, but in my experience, has always been incredibly slow. Not because the bartenders are slow, but because they need more bartenders to deal with the volume of cocktails.
Hendrick's is too expensive, but Negronis are a stand out.
A wonderfully decorated and whimsical prohibition bar located at the back of the Establishment and Mr Wong's. The Strawberry Hills (Marios Pick) and Baltimore Buzz cocktails were decadent and delicious. The warm German pretzel with ale and cheese fondue was the perfect accompaniment. Too loud to hear anyone though but great service.

Time travel exist in the heart of Sydney. The stairs leading down to Palmer's is lined with prohibition era pictures. As you go past the lobby you will be transported with servers and bartenders with New York 70s outfit. However if you are not in early just like prohibition there will be a tough time to enjoy your drinks as the venue is relatively small. The drinks thought are well made with each of the spirits well represented making finding a favorite drink relatively easy.

Difficult to find underground bar with the entrance in a side alley behind the Establishment.
Once inside you get the typical hidden basement with a hint of sophistication. I spent a good chunk of my night oggling the shelving around the table.
Stopped by on a Tuesday so no lines in sight.
Grab a drink from one of the small holes in the wall or flag down a waitress. But be prepared for some not-so-1920's prices. There is also the option of food – it’s simple but not spectacular.
When I went to Palmers Co, I didn’t realise that this was a merivale joint.The realisation that is; made a lot of things quite clear – the level of polish, the stylish digs, the rather fantastically dressed waitress who put on the speakeasy/mod look. Merivale does small bar; and its quite wonderful. Located down the side lane that connects establishment to the other side (tank – assuming is now MR.WONGS as I haven’t gone round), lies Palmers Co. You enter via a tiny doorway and descend into a “oldish” vaulted prohibition styled speakeasy. Its also already quite packed and the night we went, we couldn’t get a seat. You will immediately note the vault ceilings and the cavernous space, It really looks and feels incredible. I personally don’t think much of the interior is real – they do this laminate type product that looks like brick and the air diffuser/ducting coming out of the vault (you can’t cut an arch and have it be structural) indicates to me that i’m most probably right.

Palmer & Co is not really your after work establishment, at least not in the area where it is located, but it will no doubt encourage further small bars to set up nearby which are seriously lacking amongst the male suit dominated drinking holes in the vicinity.

You enter another world when you go down these stairs to the Justin Hemmes version of small. And you can go down or stay day later at Palmer & Co than at most other CBD joints. Here, “until late” means just that. While you’ve got to take your hat off to Merivale for the curiosities - the step forward into flapper, bowties, old-fashioned glasses and the retake on a prohibition theme - the cocktail list is the hit. (Who’s watching now?) The daily cocktail specials are often served prohibition style in teacups. Classic cocktails are a good bet when they are made with premium spirits. The list of spirits (gins, tequilas, whiskies) is worth a look just on its own. There’s beer or wine if you must. Be warned: it can get pretty busy. And that can mean queues.
Beautiful prohibition era decor, seriously attractive staff, cool tunes. Corned beef sandwich was really tasty. Wines great. Ok it's expensive but if you can't afford it, tough titty.
Underground coolness. We had two hours to kill while waiting for a table at Jaime Oliver's Restaurant and Palmer and Co was recommended. Ryan our waiter was so awesome! the atmosphere was fun...cocktails tasty and great cheese platter!
Great Food and Cocktails. Didn’t really have any idea what this place was like until we arrived, it got good ratings on reviews so though we’d stop in here on a Saturday night, it was really busy but we managed to get a table. Loved the theme of prohibition and the live music which was on was great.
There was table service in the area we were in but that was a bit hit and miss and took a while to order some food. Once the food did arrive it was really good, very tasty and plenty of meat on the charcuterie!
Cocktails were very popular and after having some you could see why!

Love the place! Love the decor and the band and Dj have always been good when I've been in. Can get quite just, which makes it a task getting to the bar. Good place or after work on a Friday night. Don't have to wait too long for toilets as there's plenty. Toilets are clean as well. Haven't eaten here, so can't comment on the food. Goods wine and good atmosphere.
Funky bar. Very funky bar. The staff were very friendly and even offered us table service, which was a plus. The drinks menu is huge and ranges from cocktails to wine and beer. I love the beautiful old fashioned wine glasses at this place! Definitely worth visiting

This is a hidden gem, located in the CBD, in an anonymous-looking alley, and underground. The decor is 1920s, flapper, Art Deco and classy. If you’re looking for great cocktails, stylish ambience and a cool scene for the discerning, this will not disappoint. Open till late.

This venue is great for any occasion, catch up with friends or drinks with work colleagues. This is a hidden gem in the centre of Sydney, which offers you the quality, service & food which is next to none. The decor really compliments the atmosphere. Probably the best underground bar I have been to. The cocktails are amazing & the music gives the venue an electric ambience. We have been here a few times and they never disappoint. The food and the staff are wonderful & the service is outstanding as always. A special thanks to Carmen who always goes above & beyond to ensure we always have a wonderful evening.
Prohibition style speakeasy in an old brick water storage tank. Love the architecture and decor, live music was amazing and service was great. Drinks perfectly balanced but boozy.
Quite good. Security staff were happy to grant us entry despite the place being pretty full. Quite a delicious range of drinks, probably slightly overpriced but I guess par for the city. Will return to try some of the cocktails, yum yum. I think that the gin and tonic range is great.
This is a great hidden gem. I love the 1920s vibe of this underground bar. The staff are attentive and the ambience is warm and inviting. A very good selection of drinks and one of few bars in the area that trades past midnight. Great tunes as well.
