Really enjoyed lunch at Silvester's, the food was delicious. The crab and avocado roll was a great way to start our meal, the meat for our main dishes were really tender with flavours that complimented it well. Desserts were fun with different layers beyond what you could see. All topped with friendly service, I would go back for dinner!

Another awesome #firsttable dinner. Marriott hotel eatery - very spacious decor, loved the feeling of our space to move around comfortably. Open plan kitchen. Booked: 2 families- four adults and two little ones with high chairs. Our waitress was very cute, attentive and always happily smiling, who also happens to be Vietnamese. Each dish she served she knew exactly everything in it! Thank you 😊 We ordered 2 Sydney rock oysters each, they we so so fresh, a main each and two desserts to share. I had the slow cooked gorgeous beef cheeks bedded in the silky yummy mash & fig sauce. We shared two sides as well. One of the dish was a sirloin beef and it looked kinda boring it had nothing supporting it but a small cup of sauce - just saying. This night was accompanied with a nicely chilled bottle of Sav Blanc. Over all very nice fine food and service. Kids friendly is a bonus! Thank you for the complimentary desserts too. 👌🏼

Good service, fairly tasty food, some dishes were overly salty. Highlight was the matcha desert. Portion size is on the smaller side. I would expect more for the price, although it can be good valued if on a special deal.

We went to Silvester's last week and had an exceptional meal. An enjoyable atmosphere, and the service and food couldn't have been better. Jeremy booked as a great table, and our wait staff were friendly and helpful throughout with some great food and wine recommendations. I highly recommend the spanner crab and avocado entree, and definitely save room for dessert - unforgettable! I can't wait to go back again soon!

Couldn't Fault a thing! High level of service with extremely attentive staff. From the decor to the dining experience it was just perfection. A lot of the 'classy' restaurants might provide petite dishes to look more sophisticated however, Silvesters didn't skimp out on the portion size nor the flavour yet they presented it with class! BEST of both worlds. Highly recommend - will definitely be back.

Food was good. I had the short ribs and my cousin had the toothfish. But, the best part of the experience was the staff. We were greeted warmly by Andrea (hope I got the spelling right!) and she was able to get my cousin and I settled in. Our waiter took care of us and answered all questions. Thanks to Andrea and staff for a wonderful experience!

Love these food, got recommendations from foodies and feel satisfied. My favorite is the crab with avocado, duck breast cooked perfect, I will give 5 star to the food. The atmosphere is good 4 star, service 5 star, staff friendly and that’s really nice service.

At the end of September, we dined in Silvester's restaurant that is located in Sydney Harbour Marriott Hotel. From the menu design, I'm guessing they have a minor refresh every month. Interestingly, the menu item is separated by types, rather than the usual entree, main, and desserts... actually, desserts is another menu altogether.

Been here multiple times and always been impressed. Although located in a hotel, the ambience is quite nice. Food a 10/10. The matcha tart dessert is hands down my favorite dessert I’ve EVER had. Do yourself a favour and go try it

I was seated hesitantly after first being informed there would be an hour wait (I was travelling for business and dining alone), and was at first directed to another restaurant. The food was delicious, John Dory fish that melted in my mouth with a delicate jus. Unfortunately the experience was marred by the wait staff, they seemed to be rushing about (despite not being busy), when I requested some additional water (which I’d paid for) the waitress didn’t even pause as she walked on by, I got my water. Service... it’s not hard, a smile is all it takes, look at people when you talk to them. A friend also dined here the same night (separately), he had a similar experience, with a different waitress. I wouldn’t go back, which is a shame. To he clear, I was friendly, dressed in business attire and presented well.

A wonderful fine dining experience with beautiful modern & refined food. They use quality ingredients in creating their dishes, such as British breed Aylesbury Duck, MSC certified Glacier 51 Toothfish and Yellowfin Tuna. Service was top notch with friendly, attentive & professional staff. 🙂 <br/><br/>All the food was cooked to perfection & full of flavours. Never had a beautiful fish dish like their Glacier 51 Toothfish. Loved the broad scalloping flakes texture & the snow white oily flesh. The clean sweet flavour paired perfectly with the light Japanese ginger dashi broth. 🙂 <br/><br/>Aylesbury Duck had a succulent pink flesh accompanied by smooth & silky carrot purée. The only drawback was the sautéed witlof, it had a distinctive bitter taste which I didn’t like. 😌 Desserts were superb, everything was beautifully presented. I particularly loved the liquid nitrogen demonstration that came with the Blood Orange Sorbet. It was amazing to have a theatrical experience in a dessert. 🤩<br/><br/><br/><br/>

One of the best breakfasts I had in Australia is at this place, Marriott at Circular Quay. If there is one word to describe it, that would be “Selection” as they do have tons of options for everyone, whether you are vegan, vegetarian, on Paleo diet, on Keto diet, gluten free you name it they have it, while I don’t have any of those dietary restrictions I was so amazed of what is on offer. Having said that meat eaters have a good selection as well so you won’t be disappointed.

Came here to celebrate a friend’s birthday and the food was good and unique. The design and atmosphere of the restaurant was really mesmerising! Definitely recommend getting the Spanner Crab Roll wrapped in Avocado (third photo). Was overall a good experience. <br/><br/>P.S. This was actually too much food for 2 girls (we barely ate the last meat dish) as everything was quite filling.

This place is absolutely divine: exquisite food (especially the seafood), impeccable service and a very good wine list. We enjoyed everything we ate and the highlight for me was the grilled pineapple dessert which was teamed with an olive oil cake and ginger beer sorbet. #finedining

More like a 4.5!! <br/>The interiors and atmosphere of the restaurant are perfect for a romantic evening out! <br/>The service was a bit slow between meals and inattentive, however, the waiters were all very polite and knowledgeable.<br/>Highlights were definitely the spanner crab, kingfish crudo, glacier toothfish and braised short rib! The tandoori flavour complemented the toothfish surprisingly well, whilst a very generous amount of fresh crab meat was served in the spanner crab entree. The sides of baby corn, heirloom carrots and mixed mushrooms were delicious as they were cooked and seasoned so well! <br/>Unfortunately I wasn’t the biggest fan of the blood orange sorbet as I did not agree with the coriander and blood orange flavour combination.

[invite] Bianca: Sydney Harbour Marriott received quite the facelift early last year. And part of that redevelopment was the flagship restaurant, Silvesters. Long gone are the days of sub-par hotel dining, Sydney has really stepped up its game. All within a few km’s of one another, you have, Silvesters, Mode at the Four Seasons, 117 Dining at the Intercon and Altitude at the Shangri-la. What a time to be alive!

Positive love this place. It's such a hidden gem in Circular Quay. But what's really unique is the food. Their French chef developed his unique style as a combination of French and Asian techniques and flavours. This means the menu features some pretty intriguing (and delicious) dishes. Plus, their servers really know their stuff - when it comes to the food, wine, and recommendations - making sure we've had a stellar time, everytime!

Had a very pleasant dining experience here on a Tuesday night. Some dishes like the Morton bay bug and scallops were very nice. The wagyu flank lacked flavour and was a bit cold by the time it reached the table and the risotto didnt stand out either. What brought up the ratings and experience was the little touches, the complimentary amouse bouche and petit fours, superb service and the offering of a decwnt kids menu. The place also looks very modern compared to the marriot a few years ago.

We were promised “Silvester’s award-winning restaurant will be showcasing unexpected, experimental global flavors” at the recent Chaffey Bros 5 Course Wine Dinner, and that was exactly what we got. Every month, Silvester’s in the Marriott Hotel at Circular Quay showcases a winery by pairing a five course meal with six wines. This month, it was Chaffey Bros winery from the Barossa and Eden Valley with their sparkling wine, two rieslings, a grenache, a shiraz and a dessert wine. I won’t comment on the wines and pretend to be a wine connoisseur because I’m not – I will say though that I loved the Eden Valley Shiraz (paired with the 4th course) and the Eden Valley Riesling + Gewurtztraminer + Kerner (paired with the 2nd course). But now, onto the food…<br/><br/>1st Course: Butternut Squash / Passion Fruit<br/><br/>I really had no idea what to expect with this course based on its mysterious description on the menu. The passion fruit puree came out first at the bottom of the bowl, before waiters came around pouring the hot butternut squash soup over the top. I’ve never had this flavour combination before but surprisingly squash and passion fruit go together really well. I really loved the soup itself as well – a really deep flavour with a lovely smooth texture.<br/><br/>...<br/><br/>4th Course: Tajima Wagyu Striploin / Jus<br/><br/>This course was my favourite of the evening. Three components – all beautifully executed and paired with a glass of shiraz, my favourite wine, what was not to enjoy?! The wagyu striploin was so so so tender and well seasoned with quite a moderately flavoured jus that didn’t detract from the taste of the beef. The bone marrow was salty, creamy and melt in your mouth. The grilled mushroom was delicious in its own right and was a nice accompaniment to the meat.<br/><br/>5th Course: Sea Buckthorn / Tofu <br/><br/>If you found yourself googling ‘sea buckthorn’ just now, you aren’t alone. It is basically a species of shrubs with orange berries so on the photo above, it is the orange sorbet on the top. And to be honest, everything below the sorbet was a mystery to me after tasting it. I assumed that fluffy white thing was made from tofu but couldn’t quite work out what it was as it wasn’t really a meringue, it wasn’t icecream, it wasn’t cream. Then there was a cakey-type component at the bottom which didn’t really have any flavour. Overall, it was my least favourite dish and that was also the case for my two dining companions. This was disappointing as apparently Silvester’s desserts are usually pretty good.<br/><br/>Overall, the five course dinner definitely met my expectations of “unexpected, experimental global flavors” with some innovative and adventurous dishes but there were definitely also some items which didn’t quite hit the right note.<br/>For the full review - see imhangry.net/2018/05/27/silvesters-sydney-cbd/

Outstanding service, lovely food with an emphasis on fresh Australian ingredients<br/><br/>Silvester's is a modern Australian restaurant located on the recently renovated ground floor of the Sydney Harbour Marriott Hotel, conveniently located in the Rocks and a stone’s throw away from Circular Quay station.<br/><br/>Food: Great. There is a focus on fresh Australian ingredients. <br/><br/>We ordered:<br/><br/>Hervey Bay Scallops Black pudding, salmon roe, yuzu kosho:<br/><br/>I particularly like the use of Harvey Bay saucer scallops, this particular species (Amusium) is the best you can get, and far superior (sweeter) to Tasmanian commercial scallop. You get 5 scallops, they were cooked well on a bed of cauliflower puree and comes accompanied with black pudding, salmon roe (you can ask for these to be removed - I did)<br/><br/>U10 Mooloolaba Prawns Baked in salt, coriander & scallions dipping sauce:<br/><br/>Nice prawns, simply grilled and served lengthwise on rock salt. Whilst nice, I would have preferred these to have been split and deveined.<br/><br/>Dry Aged Flat Iron Steak 500gr, Duck fat kipfler potatoes, Arugula, Parmesan cheese:<br/><br/>This was another lovely dish, ordered a medium rare, the meat definitely benefits from a side of jus or mushroom sauce, however those with more mild palettes may enjoy the steak as is.<br/><br/>Choi Farm’s Mushrooms Parsley & garlic butter:<br/><br/>Lovely mushrooms, a mixture of button and enoki. This was very tasty.<br/><br/>Grima Brothers Farm Vegetables Seasonal collection of baby vegetables <br/><br/>The mix of vegetables varies, however I prefer the turnips that they sometimes have, but there wasn't any tonight. It was mostly beetroot and kale, which I don't like due to the bitter earthy flavours. I would prefer turnips and carrots, with zucchini or broccolini.<br/><br/>Roasted Peach, Lemon cheese cake, peached ice tea sorbet, oat crumble, melon:<br/><br/>Loved the sorbet, didn't really like the lemon cheese cake, but that's more a personal preference. It was interesting to see them grate the melon into thin slices.<br/><br/>Pavlova 2.0 white chocolate & passionfruit nitro mousse, meringue, raspberries:<br/><br/>It was fun to see the use of liquid nitrogen in the preparation of this dessert, which was tasty and good to see fresh raspberries being used.<br/><br/>Atmosphere: Great, you feel relaxed here as it is not too crowded. The open kitchen theme is lovely as you can see your entrees and desserts being prepared.<br/><br/>Service: Great, the staff are really friendly and explain the dishes well.<br/><br/>Conclusion: Definitely will be coming back here!, the new renovation is great, it's uncomplicated food to highlight the quality of ingredients. Service and location is great.

Within the Sydney Harbour Marriot is Silvester's restaurant, it is easily accessible through the hotel lobby. They have a Parisian Chef Raphael Szurek with experience working in Michellin Restaurants around the world. With an open dining area and kitchen you can see the chefs in action.Silvester's restaurant is dedicated to using fresh local produce, we enjoyed a a glass of wine with our tasting, including a Seppelt Wines reisling, a Fickle Mistress pinot from central Otago NZ and a Saltram Barossa Shiraz. The wine paired nicely with a quality charcuterie board with a mix of cured meats including a delicious bresciola and fennel salami. We also tried the spanner crab and avocado roulade topped with grape fruit. It was nicely presented, however a little pricey for an entree.<br/>For the main the toothfish and braised beef cheeks were both tasty options and prepared to perfection. For dessert a deconstructed pavlova, an Australian classic that would appeal to International visitors.<br/>It does feel like you are dining in a hotel, the dining space is a little generic. However the open kitchen adds to the experience as do the waitstaff who are personable and provide quality service. There are quality menu options with experienced culinary skills on display and be prepared to pay a little extra for this.

The tuna was seasoned with ginger and soy, basically it's like a raw fish salad. I wish the tuna was marinated more though.<br/>.<br/>🍽️Byron bay berkshire pork belly🍽️<br/>I think this is my favourite dish of the day. The skin was very crispy and yet doesn't stuck in your teeth. The pork belly itself is tender and soft. Great combination of different texture there. The octopus on the side was palatable as well.<br/>.<br/>🍽️Darling downs grainge beef eye fillet🍽️ Fillet served with watercress and bone marrow crest. I'm was not particularly fond of the eye fillet but I enjoyed the watercress here.<br/>.<br/>🍽️Dry aged flat iron steak🍽️<br/>Along with duck fat kipfla potatoes, arugula and parmesan cheese. This is a very filling dish with all those potatoes and steak. Still, wish there was more seasoning.<br/>.<br/>🍽️Grilled Tasmania salmon fillet🍽️<br/>Ah, nice grilled salmon fillet with skin grilled golden brown to perfection.<br/>.<br/>✏️Note: nice restaurant with good vibe and excellent presentation

Silvesters is the new flagship restaurant within the Marriott Sydney Harbour hotel at Circular Quay Located right in the lobby and connected right into its sister venue, Customs House Bar.  Silvesters serves up a variety of Modern Australian dishes with a big focus on quality ingredients sourced within Australia. Just outside in the cosy laneway is another new al fresco bar, Three Bottle Man which serves up a great selection of drinks.

The place is really nice with open kitchen. I was so impressed with the customer service here, staff knew well about what they serve and they did good eye contact with customers. In terms of food, you guys must try smoked salmon for entree, it is super delicious with cream on the side. Steak- I chose medium-rare, it is super good, but the sauce is quite salty for me, if u dont like salty stuff, just ask them to separate sauce. They are having 50% bill for lunch. MUST TRY 👌🏻👌🏻

It is a hidden gem. The place is beautifully renovated now, with open kitchen<br/><br/>We went here for dinner. It was a quiet night, even though the online booking stated we could dine only for 1.5 hrs. <br/><br/>We selected 3 seafood entrees and the charcuterie platter. Every dish was great with presentation and flavour. We loved yellowfin tuna poke.<br/><br/><br/>The lamb rack for mains was beautifully cooked with interesting complements. The dessert was simple but tasty. Every single dish we enjoyed. The serving speed was spot on too.<br/><br/>The service was great as well. The waiters gave quick response to our request and were knowledgeable about the food they were serving. <br/><br/><br/>We are happy to go back to the place on occasion.
