The beef burger with fries, Harbourside Hibiscus and Pornstar martini cocktails were good. The staff were welcoming and friendly. There was a bit too much ice in the Hibiscus Harbourside which would be better for the summer, not for winter though.
The prices are a little high here.
Would recommend here with friends for drinks, food, friendly staff, good atmosphere and view.

It’s located directly opposite the Sydney Passenger Terminal where the cruise ships dock and we were fortunate to see the Majestic Princess there. It’s such a lovely harbour view. .
Award-Winning International Nightlife Brand Hyde has just opened its first location in Sydney; Hyde Hacienda Bar + Lounge. It is a relaunch of reknowned Bar Hacienda in Sydney, located on the 3rd floor of the Pullman Quay Grand Hotel. Hyde is known for its award-winning premium international nightlife brand, all over the US and it is the Hyde Brand’s Third Location in Australia.
I came here with my friends after dinner on a Friday evening. Because I do not drink, I ordered a guava juice. The bar staff were really friendly and charismatic. The cocktails that my friends ordered looked really pretty.
What I enjoyed about Hacienda was the ambience. The glass windows made it feel very spacious. The decorations are also very nice. Seeing the harbour bridge lit up was definitely the highlight. The live jazz music with a saxophone player was lovely to hear.

Too pretty not to visit while in the city. Cocktails are very expensive at $23 each but look at those views and the beautiful interior. The cocktails were inventive and I adored the “Jam Jar” with little tart, it even looked like a jam jar! Too cool!!
Great drinks and great service. The drinks were quite exotic. The bar tending were very friendly and had many drink recommendations as well as conversing with customers regularly to make them feel comfortable. Does get a little bit crowded though.
Ambience: Pretty pink interior complemented by greenery with a view of Circular Quay and Harbour bridge.
Service: Staff was friendly-enough but there was only two waitresses for the entire area so it was really hard to flag them down to order a drink or order food - very understaffed while the bar had 3 people ..
Ordered:
•Trio of selected dips w. tortilla chips ($17) - nice tortilla chips with avocado dip, sour cream & beetroot. I wasn’t a big fan of the beetroot dip even though I’m okay with eating beetroot but the other 2 dips were alright.
•Arancini frijol ($20) - arancini balls there delicious but were really tiny.
•Smoked fried wings w. hot sauce and pickles cabbage salad ($22) - right amount of hot sauce and can’t go wrong with wings.
•Mojito sliders w. grilled chicken, kohlrabi slaw, cucumber and mint aioli ($22) - small and expensive, taste was okay.
•Fresa spritz cocktail w. St.Germain elderflower liqueur, strawberry syrup, soda water, prosecco ($20) - light cocktails and had 2 people walk by and asked what cocktails we were drinking.
Overall: Lovely ambience, great food and views but staff was heavily understaffed and food was quite expensive.

We ordered various cocktails (around $20 each), and food to share. We got the prawn skewers, arancini, lamb rolls, fries and tortilla chips. The skewers, arancini and lamb rolls were absolutely delicious however expensive for the portion provided. Service was standard.
Absolutely loved the interior. Perfect place for early drinks and light snacking with an amazing view and nice music. Can’t wait to visit it again!!
Great venue for drinks overlooking Circular Quay. Came Saturday night and it was packed, seated or tables are hard to come by, but we managed to nabbed a couple seats by the window. Had a couple of cocktails and snacked on some sugarcane prawns & chicken wings. Both were good, the prawns were moreish, the wings were a spicy, but great with drinks. Prices are a bit steep, but you expected a premium for the location & views.
You could be forgiven for thinking you are lost in a tropical rain forest. Hacienda is a trendy bar with a pathway to a well kept garden. Enjoy a mojito baking in the setting Sydney sun overlooking the harbor.
Absolute beauty for a night out or midday drinking. The place overlooks the harbour, and the interior is gorgeous. The cocktails taste and looks amazing, but I would expect the food to be better coming from a Pullman. Worth to mention that some of the wait staff are totally gems of the outlet, but the rest of them just looked like that couldn't be more bothered.
Beautiful view paired with delicious food and cocktails! Really enjoyed the sliders and arancini balls and of course the flaming cocktail! Great service and attentive waiters.

A really pretty bar that was absolutely buzzing on a Friday evening. Really hard to find a seat but if you linger around you're bound to find one. My friend and I were waiting for another friend to finish work so decided to chill here and it was such a nice atmosphere. The drinks are yummy and pretty also and last a while. Unfortunately, a heavily intoxicated couple sat down at our table and started pestering us saying they really wanted to take a photo for us when we had made it clear we were okay. The security guards were pretty on the ball though, and one came over to tell them to calm down and stop them from any more drinks. Definitely a nice place to go for great view and pretty decor.
Popped in for some cocktails last night and they were absolutely delicious! Service was great and what a gorgeous view.
The only downside was that there were some fruit flies buzzing about the lounges - had to keep waving them away and away from my drinks.
If the insects are dealt with then I'll be back!
Great views to the harbour bridge and a great place to hang out. They do drinks and snacks well. A great place to keep coming back. A very cosy environment.
I adore establishments in popular areas that can hold their own. Perched on level 2 of the Pullman in Circular Quay, Hacienda is a stone's throw from the Opera House, meaning a pretty clear view of the Harbour and its almighty bridge from inside. Not unlike Opera bar, the vibe is rather unpretentious despite it's location and style. Once you get past the lobby, you feel like you're entering a semi-tropical, South American garden bar. There's greenery and pastel wherever you look, and ultra-comfy low level seating.
Staying true to form as a bar, expect only share plates and food to eat with your hands, if you're looking for a bite to eat. Hacienda also simplifies the operation by touting more cocktails than wine. There's a super simple wine list with nearly everything available by the glass. Overall - Straightforward, simple and stylish.
Love the renovated and highly improved Hacienda bar at The Pullman. Of course the view is outstanding and one of the best in Sydney, but the food and service is on par with this. Had an 8pm show to see at the Opera House so met friends here for a quick drink and some bar food. Was nervous when we ordered food at 7:20pm but service and production was extremely mindful of this fact and was spot on. Ordered Fish Tortillas and Jerk Chicken Sliders with crunchy Yuca fries on the side! Delicious and hit the spot! Even time to walk leisurely to the theatre! 😊
Came here just for drinks, was very hot during the day, especially from the sun. The drinks were alright. The staff was not very friendly, they told us to order the drink at the bar first because all the tables are still full and told us that they were going to let us know if theres an empty table, but they didnt let us know till we left even though few tables were empty.
Went here for dinner and drinks agile in Sydney. We were given a table and looked at the menu and worked out what to order. Then we were told that the table was booked and we had to move. We found this very rude. Why seat us at a table if it was only going to be for 10 minutes. We ordered a cocktail at the bar but the service was very slow. The cocktails were nice. Wouldn't bother again if this is what you call customer service.
cocktails are pretty good!I choose skinny B and TE AMO. My friend and I are all satisfact with them. At the same time,the view here is good to see the bridge and Sydney opera house. Although it took us some time to find the entrance, we enjoyed this night.

Hacienda is a gorgeous bar on the rooftop of the Pullman Hotel in Circular Quay that is the perfect place for a cocktail with friends. It offers amazing views of the Harbour Bridge and Opera House and in addition to drinks, also does a great bar menu.
We came here to celebrate our friend’s birthday and ordered four drinks, two of them being the Frose, which was the perfect summer cocktail. It was made out of rose and fresh strawberries, and was so refreshing and gorgeous.
We also ordered the Tropical Sour; with banana infused pisco, tio pepe and lemon, honey and egg white. This was another delicious drink, the banana and egg white gave it a smooth and creamy texture while the tart lemon flavour finished it off with a great kick.
Our last drink we ordered was a glass of sparkling wine in a flute, which is a classic drink and always great for a birthday celebration!
This location has had a few names and decor changes in my time of knowing it. I still reckon it's a bit of a hidden gem as the view for the price of a beer is hard to top. Latest visit during Vivid sees it really shine. The staff were fantastic given they must have been smashed for a few weeks. Nice spot to take visitors to Sydney if you want to show off a bit of 'we do this all the time'.
Beautiful location and amazing cocktails! The table service was a little poor as we often had to go to the bar to order drinks, even though we were encouraged to start a tab and stay at our table. Our waitress was not available very often, so that let the experience down a little.
Recently I turned 29 and how do you celebrate the last birthday in your 20s? You organise a bar crawl to end all bar crawls. Six bars, a top group of frands and too many cocktails to count.
Hacienda kicked off this booze-laced tour de jour, and with its knock-out views of Sydney Harbour Bridge, reasonable drink prices given the location and all-round classy vibe the crew never quite recovered. They were left in a Hacienda-induced slump because nowhere we visited afterwards quite compared to this cotton candy-coloured bar that’s not yet a year old.
Perched high above Circular Quay, this bar at the Pullman Quay Grand is about as far from a stuffy hotel bar as you can get. Inspired by the grand plantation architecture of Cuba, it’s got charisma, floor to ceiling windows that let in a luscious harbour breeze and a roof that’s embellished with serious plant action. The flavours of Cuba come to life through the drinks list, along with the food menu. The Pina Princessa with plantation pineapple rum is essential drinking.

Hacienda is legit up there with being one of my fave bars in Sydney. It's classy, it has the view, it's totally grammable, the food is tasty and the cocktails are fruity. It's a real all rounder really - and the crazy thing is you could almost walk past it without even noticing.
Tucked away in the beautiful Pullman Quay Grand Sydney, Hacienda is literally in one of the busiest spots in the city, but once you ascend the stairs and enter this piece of paradise, you'll enjoy a peaceful outlook of our gorgeous city you never imagined!
The interiors are simply gorgeous, Miami inspired, there's wooden tones, oversized pastel lounge chairs and wysteria hanging from the ceilings. It's opulent without being wanky.
It's an intimate space with only a few tables and bar stools, which makes it hard to nab a seat sometimes, but also means it's never too packed and really enjoyable for a date night or drinks with friends.
Anywhere with fruity cocktails is a winner for me. And on this particular visit we ordered:
Coco Loco - rum, coconut syrup, pineapple juice, cucumber juice and lime juice. So good we went back for seconds on this!
Mojito passion fruit - rum, lime, brown sugar, bitters, passion fruit and mint. Cocktails with passion fruit are my Achilles heel, and this one was right up there.
If the drinks and view and venue weren't enough, the bar snacks have a decent offering. I wouldn't come here for a fully fledged meal, but for some food to keep you going on the cocktails they do not too bad of a job.
We got:
Jamon croquettes with cheese sauce - I want to drown in this cheese sauce it is everything, and should be served with everything forever more. They need to bottle this stuff up and sell it onsite I swear.
Cuban Reuben - spiced homemade pastrami, smokey cheese and pickles. Um did I mention it comes served in a Cuban cigar box?!
Tapioca cheese bites - served with capsicum salsa. Sadly these were a bit of a miss. Not really tasty.
Corn on the cob - steamed and served with manchengo and lime salt. Prob don't order if you're on a date, but with friends go for it. Messy but tasty.
Overall a gorgeous venue that is set to impress both you and any companions you take there.

Hacienda is located in the Pullman Quay Grand Hotel in Circular Quay. It has a harbour view and a great vibe. I was there for lunch and it was very relaxing. Service was great and so was the menu options. I went there with no expectations and they exceeded my expectations. I like the layout of the bar and the windows allowing for plenty of natural light and a beautiful view of the Harbour Bridge. We were told that the windows do open but they didn't open it on this occasion as it was very hot which I was more than happy about. If you sit towards the front, you can also see a view of the Opera House. The interior is also quite pretty and I like the colour combinations they use. We had the Cuban Reuben, Fish Tortilla, Empanadas, Yuca fries and Jamon Croquettes with cheese sauce. The cheese sauce was amazing!!! I'd be happy eating that all day. We enjoyed all the dishes and felt that they were decent shared sizes. I would recommend this bar to everyone and can't wait to go back and try their Frose (freeze blends) on Fridays. One thing I forgot to mention was that while we waited for our food and drinks, the waitress put a white paper bag on the table. We looked inside and they looked similar to prawn crackers. We found out later that they were vegie chips which were delicious but I felt that they should've served it in something more appealing as the rest of the decor was so pretty so to have something served in a white paper bag was a tiny let down. This is only very minor. Everything else about our experience was great. #saksrecommends
I've been wanting to go here for a while, having seen pictures on instagram. It's on the second floor of the pullman hotel in cirqular quay. Great views of the harbour and both lounges and stool seating. The decor is lovely; apricot and pastels with hanging flowers and a well stocked bar. We grabbed a couple of drinks and they offered free crisps. I got the bottled mojito that had a strong mint flavour, as well as a old collins and an alcohol free colada for my friend. I didn't get food but they have mexican/carribean inspired food. I would love to go back sometime.
Bianca: Stepping into Hacienda bar you wouldn’t be far off thinking you’d been transported to an upmarket bar in bustling Cuba. I’ve never been but walking out of Hacienda after a recent Sunday session, I feel I need to book a plane ticket stat. Translated from Spanish, Hacienda means ‘large estate or plantation’. Instantly connecting the dots for us re design and concept. With floor to ceiling windows making full use of the view out over Circular Quay and the Harbour Bridge. With muted pastels and low hanging shrubbery from the ceiling. I can easily see this place becoming the place to be seen in the warmer months.
Great decor and views, however very difficult to get seats on a Friday night. Drinks are standard pricing (~$20) for cocktails and ~$13 for g&t. The old faithful cocktail was quite nice.

I LOVE this place. Even when it was ECQ Bar it was my Bar of choice at the Quay due its chilled atmosphere and lack of pesky tourists practically jumping into your grave mid bite of sip. None of that annoyance here. The refurb is spectacular and I loved the Cuban inspired menu. The cocktails are even better than before. Views of the harbour bridge and sheltered from the elements but still in the thick of the precinct.
This cuban inspired bar has a great location to take advantage of the harbour views. Comfortable seating and friendly service it's an easy place to sit back and relax when it's not too crowded. For a boozy cocktail I'd recommend the 'Old Presidente' with Havana Club aged rum, orange curacao, house spiced raspberry syrup, angostura bitters ($20). Complimentary housemade cassava chips were provided which where really good. So tasty and addictive I'd buy these in a packet to take back home.
Cuban inspired Hacienda opened with a lot of hype. It comes with sweeping views of circular quay. Cocktails here are really good. I had the salted coconut espresso martini and the salt vs sweet flavour was well balanced and I liked the hint of coconut.
They also work on share plates here. We were all big fans of the cheese bread, relatively fluffy and not dense or too heavy on the cheese. They served it with this slightly spicy red pepper sauce which was divine and felt like cuban sriracha. Jerk chicken sliders were also a big hit with the group. Who can argue with slaw and chipotle mayo? The bun was also a little crispy. Yuca fries were quite good with soft interiors and just slightly crisp exteriors. Jamon croquettes were nothing to shout about. The empty empanadas were disappointing for me as there was almost no filling in the centre and the exterior was not crispy. It really felt like I was just eating semi deep fried flour.
Whilst I get that its bar food, portion sizes are incredibly small and service was slow. One waiter was a little harsh which is a shame as the experience was quite good.
In summary, will come back for the cocktails and I quite like the relaxed atmosphere but definitely not for the food.

Went here of a girlfriend's hens. The place itself was a little bit hard to find however, when you walk in the interior is really pretty. We had 16 girls but were seated on the other side of the bar. At first the tables and seating arrangement were a little bit uncomfortable but they managed to bring us another round table to fit all of us comfortably. The cocktails were delicious and we were surprised by their warhead shots! Those were delicious!! However, the food were average. It wasn't wow. Great place to head out with the girls for some delicious cocktails though!
This place was a little confusing to find, but once we got there it was all worth it. We were given a seat at the window with an amazing view of the Harbour Bridge by Camila, who was amazing and extremely attentive whilst also making the experience fun. Drinks came quickly and were BEAUTIFUL as well as tasty, the bar was just at our right, so we could also see the process and time that goes into making each drink. When we were given our second drink of the night we were also surprised by Eisha, who topped our night off with free shots, on the house. This place seems a little pricey at first, but would do it in a heartbeat again after witnessing the care and passion that the staff have for their customers nights out. Well worth the money and walk up the stairs. Thank you so much for making our night so special, especially Camila and Eisha. We will be back!
Went here for a friends birthday brunch. The cocktails were really good and reasonably priced. The staff were all amazing, Justin in particular went above and beyond with the hospitality and came through with shots on the house for all 6 of us which were also the best shots we’ve ever had. Can’t recommend this place more especially with the view.

offers plenty of small share foods, i got the sweet potato chips with chipotle sauce. it was a good size, though there are some dishes i saw which were essentially snack sized.

Stayed pullman quay grand syd harbour motel which treated us like family... and what an Experience at the Hyde hacienda bar!!! this place ❤❤❤ every moment of it!! the views were spectacular along with the food and drinks...😊😊 manager what can I say what an awesome guy!!!
I had my birthday there yesterday and it was amazing. The staff were very thoughtful, the cocktails were very nice, they kept my cake in the fridge and brought to me later with the candles on. The view is awesome with the wharf and Harbour Bridge. I really recommend the place 😊 Thank you so much!
