Peking Duck is one of the world`s most popular dishes, and you will not experience more authentic Peking Duck anywhere in Sydney than here at The Plump Duck. The origins of Peking Duck dates back to the Ming dynasty, during a time when chefs from all over China travelled to Beijing to cook for the emperor. Peking Duck uses a special bread of duck, with only one company in Australia - Pepe`s - supplying this particular breed. We proudly co-operate with this supplier to bring you the finest quality, authentic Peking Duck. After we receive the fresh ducks from our supplier, early in the morning, we clean the duck with warm water and then blow it with air, which alters the skin structure into two layers, like a honeycomb. The duck is then quickly dipped in boiling water for few seconds to seal the air into the skin. The duck will hang up in a room with an industrial fan, dehumidifier and air conditioner to keep the temperature below 16 degrees. The last step of the process is to hang the raw duck in the freezer for at least 50 days, where it will maintain this skin structure and integrity. The duck is defrosted 12 hours before the roast process, again in the room below 16 degrees. It takes around 45 minutes to cook the duck in a specialised Peking duck oven at 250 degrees

Cucumber brings the texture and flavour of the roll to another level, while adding freshness
Pickled Cucumber
Our chef found a local ingredient to match with our Peking Duck roll - pickled cucumber. It`s inspired by burgers - just try it!
