I don't believe that you need a special reason to visit Sault and the new winter menu.
I tried a 4 course degustation menu and the food, the service and the atmosphere was wonderful.
From pine mushrooms to pork loin and Jerasalem artichoke, flathead to Cauliflower w black garlic, to pumpkin cake to lavender scones this was a divine feast.
Invited by a mate to have lunch here, we had an amazing dining experience and then a lot of fun walking around the estate. We tried the 3 course set and it was amazing, a lot of the ingredients are sourced from the estate or locally so it's as fresh as it can get. One of my favourite dish was the beef tartare, definitely one of the best I've tried in Melbourne. You could tell how fresh the steak was by the delicious beefy flavour. Another dish that was outstanding was the eggplant which incorporated honey from the bee hives from the estate, so delicious.
Once you have finished eating you can take a stroll around the estate where there is a beautiful lavender garden.
I highly recommend trying this place !

Wow! Sault is just a beautiful place!
We had a 3 course VEGAN meal and it was divine. They also do a 7 course vegan/vegetarian tasting menu (along with non-veg options) which I would LOVE to come back and try next time.
Before our courses we were given freshly baked bread with olive oil - amazing. The courses themselves were fresh, tasty and varied. Many of the ingredients are locally sourced or come straight from the Sault kitchen garden! Including the edible flowers which are just so pretty!
Jodi and the team are so lovely. They'll definitely make you feel welcome. Before or after your meal you MUST have a walk around the gardens - they lavender fields and lake are great for an Insta photo opp hehe ;)

Our time at Sault Daylesford is truly memorable.
We went here for Christmas celebrations and we had such a lovely time, the food was amazing, the service was absolutely wonderful and the view is stunning. Most of their ingredients are grown in their own garden, how great is that!
We started off with the kingfish, beef tartare and scallops. All three were delicious and the flavours are great! We enjoyed every bite. Our favourite out of these three is probably their scallops.
For mains, we ordered the eye fillet and quail with a side of radish. Both mains were cooked perfectly! The radish was also so fresh as it is grown in their own garden.
Finally, we had the cheese and the strawberry desserts. We ABSOLUTELY LOVED THEM. The strawberry dessert was so refreshing and perfect for summer, and the cheese one... let’s just say I was very sad when I got to the last bite!
If you are looking to enjoy a beautiful day at Daylesford, you MUST go here because this is a place you wouldn’t want to miss.
While you’re here, don’t forget to take photos at the iconic lavender field! It is the most beautiful!
The best food I have ever eaten. Went here for an anniversary dinner and was not dissapointed. Incredible menu, incredibly well cooked!
Gorgeous place nice view, the food was delicious and interesting, nice menu, fresh produce from their own garden, we had the 7 courses tasting menu, love what they do instead of using sharing plates, we got our individual plate, was really happy about our meals, besides the dessert was overly sweet for me, the wait staff was really knowledgeable and service was really nice, just one thing is our section waiter was quite distant, never talk directly to me, which made me a bit uncomfortable.
Very fine dining. When the wife booked it for our 19 year anniversary. I wasn’t that excited by the menu but the food blew me away. The casual unpretentious atmosphere was very welcome as we had the two monkeys with us. Cheers.
If you’re ever in Daylesford or even if you have no plans to go visit, just make sure to add Sault to your to go list. The venue is absolutely stunning with their lavender fields, the lake, and the food is equally delicious as it is beautiful. You can tell, the amount of care and thought put into each dish with their focus on using fresh & seasonal produce including that from their own garden. We got the 3 course meal so we could try as many dishes from the menu, with an accompanying cocktail. Thank you to the staff for the amazing service
Sault is situated on an idyllic property near Daylesford. There are beautiful fields of lavender bushes, a chapel by the lake and expansive vegetable garden from which the kitchen sources produce. Unfortunately the lavender were not in bloom when we visited but the place was still lovely.
For lunch, there are multiple dining options available including an express 2 course meal, 3 or 4 course à la carte, or 7 course tasting menu.
We opted for the 4 course lunch which we found to be a satisfying amount of food. Particular standout dishes included the kingfish, scallop and crab ceviche and eye fillet. All the other dishes were also delicious, except the mandarin dessert which was just not to our liking.
Service was wonderful and the atmosphere in the restaurant is nice. We enjoyed a walk around the grounds after our lunch too! Highly recommend Sault for a special meal if you are in the area.

Sault is so amazing! It is located in a beautiful house adjacent to a picturesque lake. When driving into the estate you’re already excited because the experience has already started - from the moment you get into your car for the road trip to Daylesford to the moment you arrive and walk onto the gravel into the restaurant. The staff were so welcoming and honestly it was unbelievable how fantastic the food was. I was pretty much using all my self control to stop myself from licking the plate clean! It was also truffle season and we LOVE truffles. It was a wonderful addition to our dishes and I would highly recommend you do it if truffle is on the menu when you visit! The mushroom parfait was unlike anything I’ve ever tasted and the wagyu steak cooked to perfection. The dessert was a dream as all the flavours paired beautifully together with chocolate, quince, lemon and white chocolate snow. You can’t go wrong with Sault. Whether it be a romantic lunch/dinner getaway or a place to celebrate, their food is delicious, the atmosphere and environment is unique and I can’t wait to visit again.

We had our 10month old with us and the staff were great, gave her crayons which she held and entertained herself while we ate. Some came by and entertained her too which was lovely. Did the 7 course meal tonight and the 2 stand out dishes were the duck breast and beef eye-fillet. We requested a minor change to our dessert which they were happy to do. Thank you Sault team!

The view surrounding the restaurant is quite breathtaking.
We arrived early at 5.30pm and there were other guests who came at the same time. However, I suspected they had a booking later since they just took photos outside the venue and didn't bother coming in until after 30 mins. Can't blame them though since the view is nice.
We ordered the 4-course meal and the foods were really good. If you are a big eater, make sure to order the potatoes as a side to fill you up.
My favourite dish was the eye fillet. It was tender and juicy.
The desserts were refreshing and we really enjoyed both the chocolate parfait and the pear pastry.
The staff were very attentive so it made the whole experience better.
A great example of a classic fine dining but with still a modern casual vibe. Each course we ordered came beautifully prepared and everything cooked to perfection. We loved that we were able to bring our 3 month old who slept in his pram and didn’t feel weird about it at all, so it was very family friendly.
Service was excellent, all the staff were very attentive and lovely, who knew the dishes well and introduced each dish in detail again as they came out. Also would definitely be coming for the views! Can definitely see why it’s a must visit in Daylesford.
My wife and I celebrated her 30th birthday here and it did not disappoint! Amazingly well thought out course of food so freshly and thoughtfully prepared. We were advised that all produce is sourced locally on their farm where possible. Great local wine on offer also. The dessert number we had with the Vietnamese coffee drops was unbelievable. Might I say, possibly the best fine dining dessert I’ve ever had. Hats off to the chef!
Delicious seasonal food presented beautifully. Exceptional service and staff had an in-depth knowledge of the menu.
Left a note when booking online that we were away on a birthday trip and the waiter brought out some macaroons with a candle after our three courses. Very nice touch!
Good place to eat a fancy lunch with your other half. Food was good, the main we choose was the highlight.
Surroundings are nice even though its off lavender season. Be careful to animal droppings though 🤣
Food and service was pretty good. I had the three course lunch menu. The beef tartare was ok, but texture had too much crunchy bits for my liking. The barramundi on the other hand was cooked perfectly and the chocolate parfait was also great. The sunflower was nice outside.
