Excellent environment and great customer service. We were served a three course meal with our weekend Seafood Table with free flowing sparkling wine. The Seafood tower was very impressive with half a lobster each and various seafood samplers.We had Squid ink Risotto and Baraumundi for main and a variety of cakes for dessert.We were allowed extra servings last time when I came in December 20 however no extra are allowed anymore as they advised it's no longer buffet style meal.However it's still a great place to dine for that special occasion.

Stayed at the hotel over the long Easter Weekend and had the chance to dine here a few times for these experiences: 1. Seafood Table Dinner $79pp - 3 tiers of assorted cold seafood, salad, meat & cheese entree. Comes with oysters, cooked king prawns & 1 crab, plenty to share. - 2 mains. Lamb Shank & Salmon were on the menu that night. The lamb shank was divine! - Dessert Platter (Easter themed). We struggled to finish the mains & our lovely staff offered to send the dessert up to our room. Although it took a while for it to arrive. - Pleasantly surprised to receive free flowing bubbles for the whole duration of our dinner because we thought that’s only available for lunch (lunch price is $95pp) 2. Breakfast Buffet - opted in with room booking At the time of booking, we’re informed that breakfast was still table service due to covid. The morning we went down, it was back to buffet after the govt lifted covid restrictions before Easter weekend. They served typical western breakfast: eggs, bacon, mini sausages, baked beans, mushrooms, bread & pastries, cereal, fresh fruits, yoghurt & muesli, juices & coffee, even a gluten free corner. Although it was really busy, we got a table promptly on arrival. Dishes are regularly topped up & tasted good. It’s not as extensive as other buffet breakfast we’ve been to, but it covers the standards well.

Had the seafood buffet for dinner and it was overall a good experience. Each course was beautifully prepared, with a wide variety of fresh seafood; the starter in particular was outstanding. Each salad has a little surprise, a creative twist using seafood (no spoilers). The salmon main was a little salty, but otherwise beautifully done, juicy, tender and perfectly cooked. The cocktails however were a letdown, and I would strongly recommend sticking to the excellent whites on offer; the Sauvignon Blanc Semillon and Riesling were both excellent.

The food is awesome. Very generous portions to make me feel very full and I can eat alot 😂 I enjoyed every part of the courses 😍 the only let down was the crab, it was nice but I had better. The waitress is super friendly and lovely, she was amazing ❤️

Very disappointing high tea. Would try other venues before returning to Sailmaker Restaurant at Hyatt Regency. Scones so tiny, not enough cream and jam to enjoy on the scones, rest was minimalist. I feel it was not worth the money.

Had the 3 course lunch set meal it was great. Seafood was fresh, main course was cooked perfect, dessert was enough to finish the meal. Unlimited sparkling wine for the 2 hours seating. The service was great no fault at all

Superb spread of seafood and other dishes. Had the valentines seafood buffet spread which was divine. Especially enjoyed the oysters 🦪 and the chowder soup 🥣. Sometimes the dishes aren’t as warm when it was laid out which was only in some cases. Could never have unlimited seafood this fresh this cheap.

Completely underwhelmed. The seafood station had prawns, crab, mussels, marinated baby octopus and oysters. None of it was quality. The oysters were tiny, the octopus was rubbery and gross, and the crabs were very salty with a mushy texture.<br/>The hot food station wasn't any better. Not enough variety to really call itself a buffet.<br/>We thought the desserts would redeem the place but sadly they tasted like the sort of cardboard like, undercooked pastry you get on bad airlines.<br/>My favourite dish at the buffet was the coconut sago...bit sad to say that about a buffet.<br/>Nice location and lovely staff but unfortunately the food is a real let down.

High Tea was too crowded. Didn’t feel classy. Vibe was not relaxing. <br/><br/>Experience, vibe, food were all subpar, felt cheap and low quality. Only thing that tasted good was the passion fruit cake which was yum. All else were a waste of me gaining calories. Sandwiches tasted bad, filling flavours weren’t balanced, and too sweet. Scones were too sweet and average tasting, didn’t have the fresh soft center that I was hoping for, didn’t taste fresh, wasn’t warm temperature.<br/><br/>Desserts was self serve at dessert bar. They serve the scone, sandwiches, and drinks. <br/><br/>Service: friendly . Good.

we used a groupon - seafood buffet for a special dinner. we had a good meal, enjoyed the seafood and other dishes. the oysters are tiny but at least they have at that time. the ambience was cozy, dining there was a good experience.

Came here for the Easter lunch buffet with my husband. The selection of food was very limited, not disappointed; desserts were delicious and lots of a variety, I guess it’s their advantage. Came here with the Groupon voucher otherwise would not come at all. Maybe the breakfast buffet is better.

A lazy Sydney Sunday Brunch, it’s how we Sydneysiders roll! Add in seafood, bubbles, an extensive dessert table and you have won me over. Sailmaker at Hyatt Regency Sydney has you covered with limitless Chandon and a dessert spread to make Willy Wonka jealous. Sunday brunch suits me down to the ground. It means I can sleep in and the first meal of the day can include alcohol without judgment.

Sailmaker Restaurant can found on the ground level of the Hyatt Regency Sydney. Pass through the grand lobby with marble floors and high ceilings past the bar and up the stairs. The Hyatt is an expansive hotel, just off Sussex Street on the CBD side of Darling Harbour. Under the Hyatt banner for over 3 years, it is a sophisticated hotel with amazing dining locations including Sailmaker restaurant and also Zephr rooftop bar. Sailmaker, named after the original purpose of the building, creating sails for boats in the 1800’s has a long history in the area and we love that whilst dining, you can look out over Darling harbour and all of the boats. Sailmaker restaurant has a large open dining area sectioned off into two areas.

My friend and I ate something light for lunch. I ordered the Korean chicken pop and vegetable tempura (fried eggplant, beans, squash) with dipping sauce. Then my friend ordered the fries and oysters. We shared everything. It was good! I enjoyed it!

Had high tea here with the girls, great atmosphere with a seat near the windows and overall enjoyable but a few hits and misses. Hits - coffee eclair, dark choc dipped strawberry (can't go wrong), curried egg finger sandwich, white choc scone, smoked salmon on rye. Misses - eggy overcooked creme caramel, dry brioche bun on the Turkey slider.

Located in the Hyatt Regency In Darling Harbour, The Sailmaker is off the lobby and overlooks the harbour. The best tables are right next to the window to take in the views. <br/><br/>Service is pretty good although a little slow at times, they were friendly and attended to our needs. <br/><br/>We came here for their high tea with Chandon sparkling wine. We were seated quickly and water poured and wine served. <br/><br/>As we were early the high tea stand was not brought out for a bit. I noticed a few diners asked to switch tables to be near the window which also had more comfortable chairs. We didn’t bother asking to switch as already settled in but thought they would assign those tables first if they weren’t full which they weren’t. <br/><br/>Once the stand was brought out, the server explained the items on it. The top tier had our desserts on it. Highlight was the Creme Caramel which had a smooth custard in the cup with a sweet caramel on the bottom. Coffee Eclair was a bit dry and may have been sitting out for a bit. Filling was<br/>nice though. Middle tier had the savoury items. The best tasting was the Turkey & Cranberry Slider however all of the bread tasted dry (again possibly due to being left out for a while) and not as fresh as what we would’ve liked. Bottom tier contained the Scones which came in a white chocolate and raisin variety. They were pretty good and came with a generous serving of jam and cream. <br/><br/>Finally Tea was offered and both had English Breakfast. It was a tea bag in a pot which was T2 variety. Nice but wish we were served leaves in the pot to impart more flavour and strength to the tea. <br/><br/>Overall it was an average high tea (closer towards 2.5) but the views were nice. There are definitely better high tea offerings at other hotels.

Sailmaker at Hyatt Regency is one of my favourite places for seafood buffet, needless to say it’s food coma every time i go. Even the wait staff was impressed by how much food this little girl could eat haha!

Taken here for a work lunch meeting, the Sailmaker buffet offers a lighter style buffet compared to the traditional style buffet most people think of. <br/><br/>Focusing around salads, the buffet has a variety of salad choices, including a make your own salad section. There was also a few fruit base salads and others with protein. A chef manned a roast pork station for something a little heavier. <br/><br/>The dessert section is probably just as big, if not bigger, than the main food buffet. Such a highlight.<br/><br/>The quality of the food was high, as expected in a hotel. I liked the variety of salads, which is suitable for lunch as they quite things light and could then enjoy multiple desserts. I think if you were expecting a more traditional buffet where there are lots of protein options and heavy food items, you would be fairly disappointed. <br/><br/>I liked that the food was situated under a glass panel.<br/>If you get a seat near the window, you may get to enjoy a view out toward the harbour. <br/><br/>Service was regimented but attentive.

Got a high tea deal on Groupon and spent a cozy afternoon here. The most remarkable thing was the warm and attentive service. Food was just what you'd expect from here. Probably wouldn't go without the deal really.

Came here for high tea with three other friends. The food and tea served was very mediocre - nothing special.<br/>The service however, needed improvement. After eating we ordered tea & coffee, waiting 30+ minutes. And not long after tea was finally served the staff told us we had to leave as dinner was starting soon.. I didn't even finish my tea ):<br/>Given hyatt is 5 atar hotel i was severely disappointed with my experience. I would not come here again.

Went for the seafood buffet for a friend’s birthday and it was absolutely worth it all! Shout out to our waiter Sunil for the birthday cake surprise and a topping to the white wine for the birthday girl. With the extraordinary amazing customer service, it was an absolutely joyful experience.<br/><br/>Ambient and toilet facility wise was also 5 stars.<br/><br/>The only thing lacking was the variation of seafood and also other hot foods. Dessert was actually amazing in terms of variety but ice cream ended up being melted as it wasn’t placed within a freezer. <br/><br/>I recommend the place for a calm night with deep sessions of talking with friends or family or even for a date. But if you are looking for a seafood buffet with variation and non stop delicious food, I don’t think it is the place. <br/><br/>

Seafood selection was limited. Whatever available was fresh and tasty. Loved juicy crabs and oysters. Fish of the day was baked perfectly but I would expect some dressing to be available. Biggest negative point of the buffet is hot dishes which are almost non existent.<br/><br/>Salad bar was normal and selection of desserts were also limited. Seafood chowder was a massive highlight. Highly recommend. <br/>You have to try the fish of the day - they’re juicy and tender! <br/>The seafood offered was all quite tender. I liked the prawns, but others also complimented the oyster. Also the salads were refreshing as a side.<br/>I also had slow cooked lamb accompanied with mango sauce. The sauce was a highlight - it refreshed and lightened the somewhat oily and lamb like taste of the lamb. <br/>The cake is goooood. So good. Especially the crumbly (ricotta?) cheesecake. <br/>Service also very nice

We came here on a Friday night (yesterday.) Dinner usually starts at 6pm but we lined up at 530pm. After 10 minutes they slowly let the people in which was good. I used my groupon voucher which was a plus it also included a glass of wine per person.<br/>We were seated near the soup & cheese area.<br/>I was hoping for Bay Bugs however they must have removed it from the menu. But I can't complain as I had paid approximately $45 per person. Whereas if I had full price I would have been disappointed. There was oysters, prawns, crabs, mussells and whole steamed salmon in the seafood section.<br/>Their salad bar was quite yummy especially if you really enjoy eating vegetables and lentils.<br/>I think their desserts could have been better but I was too full to try all the cakes.<br/>The wait staff are very attentive and friendly and keep filling up your glass with water. I had dropped my fork and the waitress quickly fetched me a new fork.<br/>The ambience is beautiful and they had a pianist playing the piano in the lobby area.<br/>For the price I paid I think I got a good deal.<br/>I parked across the street in Wilson Parking. It was $15 for the Friday night.<br/>

Had my husband late birthday dinner here using scoopon voucher deal $89 for two include wine. Compared with Windjammer in Novotel Wollongong we had a year ago, that deal was cheap even regular price cheaper than Windjammer (if i'm not wrong around 65pp, while in Windjammer costed us $78pp). Unfortunately, it had lack varieties of food (again, compared with Windjammer). Yes they added some hot food (unlike most zomato i read they just had baked salmon/barramundi), but still it really standard menu like soup&bisque, roasted beef, pasta and rice. In seafood department, i must say it was the best, all seafood were fresh, oyster, crab, king prawns, i, even didnt need to put much sauce (only lemon and soy sauce). In appetizer department, they have plenty varieties of salad which i didnt into it (cause i dont like veggies lol). And in dessert department also dont have many varieties, just cakes, pie, fresh fruits and cookies. I liked the passion fruit sauce it really kicked some too-sweet dessert. Wine just okay (i chose white wine for companion), my hubby ordered extra cappucino at cost $6.

Came here for the seafood buffet with the $89 Scoopon. Seafood was fresh but I wish they had some other variations of seafood, especially some more hot dishes. There was only the baked fish of the day (salmon and barramundi). I didn’t really like the salad bar, the seafood salad options here were sub par. They did have a good variety of cakes available though. Overall, for the price and experience it was ok but I would not pay full price for this buffet due to its lack of variety.

Zomato doesn't seem to allow half-star ratings anymore so my rating of 3 is for the general experience but docking a 0.5 for service. Real score is 2.5<br/><br/>I've been here twice - once for the seafood buffet dinner and the other for high tea.<br/>The buffet had limited selection but quality was good and the food was always refilled. There were few hot food choices - mushroom soup, whole baked fish and fried seafood noodles. The highlights for me were the thick cut sashimi, whole baked fish (barramundi and salmon), prawns and oysters. Cold starters, salad bar and dessert were also well thought out. Overall, variety pales in comparison to Intercontinental and Shangri-la but if you're just interested in seafood, this is not a bad option.<br/><br/>High tea was a mixed experience. Food wasn't amazing but it was decent enough. The brioche sliders were quite dry but the other sandwiches were ok. Wish they'd given plain scones as I thought the white chocolate one was too sweet. My favourite morsel was the coffee eclair.<br/>Service (or the lack of it) was disappointing. The waitress took drink orders for half the table at the start but failed to ask the other half until we were nearly done. And only because we asked her about it. Drinks came out at different times even though they were ordered at the same time. Some came out 40 mins after the order. Likewise, it was a nightmare trying to get water refills. We were about 14 people but there wasn't many other tables occupied. And really, how long does it take to put a teabag into a teapot with hot water?? Such a shame as the restaurant is spacious and a pleasant place to be in.

Im not sure about normal food but I came to Sailmaker for high tea in the afternoon. <br/>Every single food on the plate was so delicious!! Staff are friendly and atmosphere is very nice. <br/>Strawberry tart& carrot cake are my favourite.<br/>I definitely recommend high tea!!

I usually stay here when I’m in Sydney for work. The breakfast buffet has plenty of variety and is much fresher than other hotels. Definitely recommend the freshly made omelettes.

Sip into the finery of Chandon Rosé. The three tier stand share platter is good enough for two people & makes for an ideal evening take out or date night. Make beautiful conversations happen over a plate of Angus beef brioche slider, mustard cress finger sandwiches & smoked salmon & chive cream cheese roulade. Wrap it up that special someone & classic sweet savouries white chocolate scones & crème brûlée.

I researched zomato hoping to find information about the high tea at the sailmaker which I found on Groupon but there wasn't much information. Despite this, I wanted to take my mum there for her birthday and she and I both really loved it.<br/><br/>The Hyatt Regency is very understated from the outside and inside it is just wonderfully open and relaxed in atmosphere. We were served a sparkling wine upon arrival.<br/><br/>Our high tea had 3 tiers which had a combination of sweet and savory items. I normally enjoy savory things more but the standouts were definitely their coffee eclair and their white chocolate scones. The eclair choux was just beautifully soft and airy, better than the eclairs at La Renaissance. Their scones were so fluffy and delicious.<br/><br/>The hotel does not provide valet parking for non hotel staying guests. However, there is a Wilson parking across the road. On the weekends, you can prebook your spot in the carpark and receive a discounted rate, however the cheapest would still be street parking if you expect to stay around 2 hours. Availability will very much depend on your luck.<br/><br/>Overall it was a lovely and enjoyable evening. I'm planning to keep an eye out for special offers for their dinner menu.

Fantastic food & value with Livingsocial deal. 🤩Paid $85 for 2 people with a glass of wine, normally $160. Although there were only two hot dishes (Baked barramundi & mushroom soup) in the whole selection, it was still enjoyable. <br/><br/>The seafood was fresh & good quality. The tiger prawns were sweet & meaty. The clams were plump and the mussels were fresh & sweet. 😋They also had a wide selection of salad. I also liked their cured raw fish and cold cuts & pate. Since it was close to Christmas when I went, they had all the Christmas themed desserts. I’d like to see some classic cakes next time. <br/><br/>It’ll be nice if they have more hot dishes but for around $40 per person with a glass of wine, I’ve no complaints at all. 😌
Food Is Really Great
The salad buffet is amazing value and quality. You can make a DIY salad or choose from the variety of pre-prepared salads- they all looked so fancy!! A wide variety of ingredients, and all vegetarian. There is a chart at the corner of each segment listing all the salads in order, so they are labelled. I can’t think of any flaws honestly, except that there’s a significant price jump between the “just salad” and “salad+meat” options.

great service, oysters were 10/10 quality (sydney rock ones shucked to order) - salty water from the oysters still preserved for both the sydney rock and pacific ones which gave it so much flavour, huge and flavoursome prawns, nice roasted salmon, pretty good dessert options although not the winner... con is the small selection of food compared to other places but for the seafood quality it's well worth it! If you're not intensely passionate about seafood (specifically oysters)... maybe it's not your thing :P

Bought seafood buffet on Groupon. It's such a nice place. The seafood is very fresh. Especially loved the oysters, they open them up right there!! Good variety of food, not a lot though. They should have a bit more hot food as well. And I gave 4 but 5 simply because the deserts are of poor quality, considering the high standard of the restaurant... Overall, loved it!

Bought a Groupon deal and works out to be $40 per person for seafood buffet including wine which Is extremely good value. Salmon was replaced every 20 minutes. There's also fresh salmon sashimi as well. The prawns, oysters, crabs and bugs are extremely fresh and one of the best I had. If I have to pay the full cost, I would expect their dessert to be better - some of them are quite heavy and not as delicate for a 5 star hotel standard, and more warm selection - like chips, rice, spring rolls, etc.

I came here with my family for the seafood buffet dinner (on a Groupon). The seafood is fresh, but you have to wait for it to be restocked as it runs out quite quickly. There isn't much in terms of variety, and the included glass of wine tastes like it came from a box, but the service is alright, and if you're a fan of Sydney rock oysters you can eat your money's worth.

Had christmas buffet here. Altho fairly pricey, @ $149pp it was nice with a good selection of fresh seafood including oysters amd sashimi, roasts including suckling pig and pretty desert selection. The deserts did look nicer than they tasted tho.
