Superb spread of seafood and other dishes. Had the valentines seafood buffet spread which was divine. Especially enjoyed the oysters 🦪 and the chowder soup 🥣. Sometimes the dishes aren’t as warm when it was laid out which was only in some cases. Could never have unlimited seafood this fresh this cheap.

we used a groupon - seafood buffet for a special dinner. we had a good meal, enjoyed the seafood and other dishes. the oysters are tiny but at least they have at that time. the ambience was cozy, dining there was a good experience.
A lazy Sydney Sunday Brunch, it’s how we Sydneysiders roll! Add in seafood, bubbles, an extensive dessert table and you have won me over. Sailmaker at Hyatt Regency Sydney has you covered with limitless Chandon and a dessert spread to make Willy Wonka jealous. Sunday brunch suits me down to the ground. It means I can sleep in and the first meal of the day can include alcohol without judgment.

Sailmaker Restaurant can found on the ground level of the Hyatt Regency Sydney. Pass through the grand lobby with marble floors and high ceilings past the bar and up the stairs. The Hyatt is an expansive hotel, just off Sussex Street on the CBD side of Darling Harbour. Under the Hyatt banner for over 3 years, it is a sophisticated hotel with amazing dining locations including Sailmaker restaurant and also Zephr rooftop bar. Sailmaker, named after the original purpose of the building, creating sails for boats in the 1800’s has a long history in the area and we love that whilst dining, you can look out over Darling harbour and all of the boats. Sailmaker restaurant has a large open dining area sectioned off into two areas.
My friend and I ate something light for lunch. I ordered the Korean chicken pop and vegetable tempura (fried eggplant, beans, squash) with dipping sauce. Then my friend ordered the fries and oysters. We shared everything. It was good! I enjoyed it!
Sailmaker at Hyatt Regency is one of my favourite places for seafood buffet, needless to say it’s food coma every time i go. Even the wait staff was impressed by how much food this little girl could eat haha!
Taken here for a work lunch meeting, the Sailmaker buffet offers a lighter style buffet compared to the traditional style buffet most people think of.
Focusing around salads, the buffet has a variety of salad choices, including a make your own salad section. There was also a few fruit base salads and others with protein. A chef manned a roast pork station for something a little heavier.
The dessert section is probably just as big, if not bigger, than the main food buffet. Such a highlight.
The quality of the food was high, as expected in a hotel. I liked the variety of salads, which is suitable for lunch as they quite things light and could then enjoy multiple desserts. I think if you were expecting a more traditional buffet where there are lots of protein options and heavy food items, you would be fairly disappointed.
I liked that the food was situated under a glass panel.
If you get a seat near the window, you may get to enjoy a view out toward the harbour.
Service was regimented but attentive.
Got a high tea deal on Groupon and spent a cozy afternoon here. The most remarkable thing was the warm and attentive service. Food was just what you'd expect from here. Probably wouldn't go without the deal really.
Amazing food, amazing service. Had Christmas lunch 2021, I am definitely going back for 2022. I can’t recommend enough.
Excellent environment and great customer service. We were served a three course meal with our weekend Seafood Table with free flowing sparkling wine. The Seafood tower was very impressive with half a lobster each and various seafood samplers.We had Squid ink Risotto and Baraumundi for main and a variety of cakes for dessert.We were allowed extra servings last time when I came in December 20 however no extra are allowed anymore as they advised it's no longer buffet style meal.However it's still a great place to dine for that special occasion.
Good food, friendly service. We went for the buffet breakfast, good range. Decor is a bit dated but it was still enjoyable.
Stayed at the hotel over the long Easter Weekend and had the chance to dine here a few times for these experiences:
1. Seafood Table Dinner $79pp
- 3 tiers of assorted cold seafood, salad, meat & cheese entree. Comes with oysters, cooked king prawns & 1 crab, plenty to share.
- 2 mains. Lamb Shank & Salmon were on the menu that night. The lamb shank was divine!
- Dessert Platter (Easter themed). We struggled to finish the mains & our lovely staff offered to send the dessert up to our room. Although it took a while for it to arrive.
- Pleasantly surprised to receive free flowing bubbles for the whole duration of our dinner because we thought that’s only available for lunch (lunch price is $95pp)
2. Breakfast Buffet - opted in with room booking
At the time of booking, we’re informed that breakfast was still table service due to covid. The morning we went down, it was back to buffet after the govt lifted covid restrictions before Easter weekend. They served typical western breakfast: eggs, bacon, mini sausages, baked beans, mushrooms, bread & pastries, cereal, fresh fruits, yoghurt & muesli, juices & coffee, even a gluten free corner. Although it was really busy, we got a table promptly on arrival. Dishes are regularly topped up & tasted good. It’s not as extensive as other buffet breakfast we’ve been to, but it covers the standards well.
Had the seafood buffet for dinner and it was overall a good experience. Each course was beautifully prepared, with a wide variety of fresh seafood; the starter in particular was outstanding. Each salad has a little surprise, a creative twist using seafood (no spoilers).
The salmon main was a little salty, but otherwise beautifully done, juicy, tender and perfectly cooked.
The cocktails however were a letdown, and I would strongly recommend sticking to the excellent whites on offer; the Sauvignon Blanc Semillon and Riesling were both excellent.
The food is awesome. Very generous portions to make me feel very full and I can eat alot 😂 I enjoyed every part of the courses 😍 the only let down was the crab, it was nice but I had better. The waitress is super friendly and lovely, she was amazing ❤️
Had the 3 course lunch set meal it was great. Seafood was fresh, main course was cooked perfect, dessert was enough to finish the meal. Unlimited sparkling wine for the 2 hours seating. The service was great no fault at all
