Have not been back over one year so took the advantage of weekday off work to explore it again.
I was not a busy day at 10:00am. After I looked at the available bean at the counter , I decided to have the Colombian bean for my flat white then took a seat outside to enjoy it.
Although the latte art was slightly let down, the strength was no doubt satisfied my palate. Being a layman, I could taste the raspberry taste but the fruity acidity was certainly there.

Went here for a coffee with a friend wanting to test out all of the local spots (just a tip, the counter is to the left through a door as soon as you walk in)
the ambience here was great, there were enough fans and an air curtain to keep the tempreture comfortable on a warm day and the service was great.
My first round included a Nitro, Honduras bean Latte and a mini quiche, the Nitro was a perfect strength and hte Late was very smooth and easy to drink which caused me to go back for more. the second round included an espresso (I believe was Brazilian bean) which was a little more bitter than I would have wanted and another latte (signature blend) again, this was very easy to drink and if I wasn't already over caffinated I would have gone back for more

The smell of the fresh coffee is all over the place.
Very good coffee, and coffee mixes.
The ambience is very nice, the energy of the place is positive enough to make me go every day.

This was the best cup I've had in a while. Dad and I had the supremo, which is a medium roast. It was bright, nutty, caramelly and with a lovely, smooth, full coffee flavour.
We also had a spinach and fetta tart each, which was reheated but remained crispy and creamy.
Coffees were also reasonably priced.

Google helped me find this boutique coffee roaster. I was looking for someome who roast beans in this area and I was fortunate to have found one.
Simply Beans in nestled in the Southpark Complex and I would have never known about them; unless i was told or in this case, searched it online.
Walking inside the large orange roller door, I was confronted by tables and coffee equiptment. What a pleasant scene.
This business would satisfy a coffee connoisseur. Inside where they make the coffees, the shelves are filled with coffee makimg accessories. I really like how they offere five different grinds at any one time. I went for a single origin bean from Guatamala (medium roast). I had this as a Long Black ($5). The coffee was smooth and bold.
I enjoyed this experience so much, I came back the next day with a friend. We ordered a Long Black using their multi-award winning blend Davero (dark roast). This was a full and clean tasting coffee-very good. We also had a Long Black with a single origin Mexican (medium roast) bean.
I'm looking forward to coming back and trying other blends and maybe take a coffee making class as well.
I highly recommend this place for a great coffee.
The staff here are very friendly and informative about the multiple coffee beans that are on offer. Would recommend coming here for the good coffee, cosy setting and easy parking. A little expensive in my opinion as the 4 things we ordered came to around $18.

Thanks to Tomcat's review, I have found a new cafe favourite to enjoy my morning brew. Situated inside Southpark Complex is Simply Beans Boutique Coffee Roasters. You wouldn't realise this place existed (least I didn't, despite the number of times I've driven past here) until you actually drive into the complex, that's where you'll see the huge sign above the building.
Behind the burnt orange coloured roller doors, you are confronted (surprisingly) with the overwhelming amount of barista equipment and the different types of coffee machines displayed. My eyes widened with excitement, it felt as if I entered a coffee museum (where great things happen) ☕️
As I walked into the little room on the left, my attention was drawn towards the 5 operating grinders next to the counter area. Each grinder has its own name card on the front to inform customers the type of blend it withholds, which I found very helpful. I was soon acknowledged by a friendly staff who greeted me and asked what I'd like to order. I decided to go with a Flat White coffee and an Almond Croissant.
Coffee - Presented with a beautiful golden brown colour, the flat white tasted smooth and full-bodied with hints of sweet caramel. Leaving a pleasant aftertaste on the palate. (Davero Blend - Dark Roast)
Food - Perfectly toasted, with a flaky and crispy exterior. The croissant contained an adequate amount of almond filling that wasn't overly sweet. Crunchy pieces of almonds were sprinkled on top and coated with icing sugar.
One cuppa wasn't enough for me and I was more than keen to try the other popular blends, so I ordered another Flat White but this time using their signature blend, Supremo.
Coffee - Served with smooth froth, the coffee consisted hints of sweetness and spiciness. Very well-balanced with a beautiful aroma. (Supremo Blend - Medium Roast)
All in all, a much enjoyed experience. Staff were friendly and knowledgeable about their products. Will definitely be back for more coffee hits! Thank you, Shane and Allison, for your service.

Simply Beans is a cafe hidden away near Compton and Kingston Rd intersection. Legends say, caffeine junkies north of the river would venture deep south just for a brew and bag of beans (a big ask). Considering its 5 min drive from my place, how can I not check it out?
The establishment is located in a light industrial area with orange roller doors and a big sign board. A peek inside and you will realize the cafe houses a large selection of coffee machines, all types of brew making kits (Yes, i did say ALL) and over a dozen in house roasted bean selections. I was there for weekday breakfast and ordered a latte and ham & aged cheddar croissant.
The coffee arrived within 10min with an heart shape latte art. A dark roasted Davero blend was selected and presents big bold flavours with hints of molasses and sweetness. As a latte its smooth yet packs a big caffeine hit. A new Tomcat fav without doubt. Bravo! 4.5/5
The heated croissant was next with slice of ham and semi melted chedder. The croissant was crispy, flaky and presents a strong buttery scent. The ham and cheese on the other hand was a tad cold and tastes mass produced. As an overall package its a good 3.5/5
Post croissant, I had a single origin itch that had to be scratched. Mexican Finca Kassandra caught my attention so here I am on coffee number two...As a espresso shot, the brew presents a strong floral scent with hints of citrus. A taste and I was blown way with big fragrant citrus flavours. So ""refreshing", it made perfect sense to finish with this special blend. Not for everyone this is, but for the few who appreciate an acidic brew, it's one not to be missed. 4/5
Overall service for a cafe was very friendly and attentive. Manageress Alison showed great knowledge towards menu items and can recommend several brew blends based on preferred tastes. A follow up on customer feedback demonstrates the focus on continuous improvement. 5/5
Hint: Focus on coffee and bean selections. They always have five grinders ready to go with single origins rotating on a regular basis. All beans are roasted on premise.

I ordered a small 2 shot latte on soy. I opted for the Mexican coffee beans with notes of citrus from the 5 that were available.
Absolutely beautiful you must come and try the coffee.
I like how this place offers different beans for our coffee and when i was unsure what bean for mine, the staff explained and recommended for me. This place also have bigger range of coffee to choose from, which is awesome. The seating area was comfortable too. Will definitely go for a cup again.
