I’m not always in the CBD, but when I am- a visit to Sensory Lab is a must for me. The coffee is divine and the perfect pick me up for a cold Melbourne morning!
The Lt Collins st venue has a window in the side for street ordering, and service is always relatively quick, if not varied depending on whom you get in the window.
But if you’re here to grab and go- what you’re really looking for is good quality coffee; and Sensory Lab has delivered that every time I’ve visited.
Extra bonus if you’re running late in the mornings - apps like Skip are very useful to pick up your hot drink/brekky!
The smoothest coffee ever! Like the mild taste...not over roasted, not too sour. There’s no significant difference between the layer of coffee and the layer of milk, which means they mixed so well together (never got anywhere else done this well). Cool place! Will come back.
P.s. don’t like the butter cup donuts though, looks good but a bit plain in flavor and don’t feel it worth the calories😅
A cute little coffee shop tucked in David Jones on Little Collins. They’re like coffee experts - with so many different types of coffee to choose from, as well as selling coffee beans and coffee-making equipment. It almost looks like a coffee lab!
The coffee is quite good here, but to be honest I prefer their coffee beans to take home. Their coffee beans are one of the best I’ve tried! Also, their croissants ($5) are amazing too.
Mondays can be such a drag, knowing that the week would be challenging and potentially taxing considering the amount of late shifts I have lined up for the week. Which brings us to my dependence on caffeine as a mood lifter when the need for brain power kicks in. The aroma of freshly roasted and grounded coffee appeases me in the wake of the rush hour despite the frequent whiff of exhaust fumes from vehicles bypassing the narrow Little Collins street. Muffed in my sweater, I made my order at the counter and stole a few glances at the rather tempting plate of glistening, golden pastries that heavily reminded me of my travelling days in Paris.
Points for: clean layout
Sensory Lab is another of coffee mongul Salvatore Malatesta's ventures.
The interior is nice and clean, and the layout allows your to discover the styles of coffee on offer - if you so desire.
For me, I get a strong skinny latte - it has a slighty bitter, slightly earthy taste. Not crazy strong so will be ok for most people.
It's a bit pointless taking a photo of a takeaway coffee so no pic this time.
Came here today for a post-lunch coffee with my sister. We both got long blacks and we shared a pistachio tea cake from the cabinet. Service was quite good- friendly and quite quick. The atmosphere of the cafe is quite clinical though and does not feel like a place you would sit and enjoy your time. I think it's best suited to takeaway. Coffee was excellent.
The coffee here was very nice, I like how they had a very flexible menu. Their cakes and biscuits were also very nice, I had the salted caramel brownie and it was one of the best I'd ever had. However, after we were given a table it took 15 minutes to try to get the waitress to take our order, and people who arrived after us were prioritised before us. However the ambience of the cafe was very nice 💗

Cool place with good coffee! I had a chai latte there that was gorgeous as well. The staff is really friendly and helpful!
My only complaint is about the available space, there should be room for more people to hang out :)
Very tucked away coffee place and it's quite nice to chill out in between shopping as it is just located at the back of David jones. The coffee is good and service is prompt and friendly.
Found this hidden gem along little Collins, with not a lot of signs but a very nice artsy decor inside that matches the unique and strong coffee they produce.
They serve lots of different types of coffee variants but even a standard cappuccino tastes amazing. Very keen to try a different coffee and even one of their cakes.
One annoying thing about this place is to order a takeaway coffee, you must order from the little window on the street however if you want to sit inside you can order from inside, it's not a big issue but it is annoying trying to wait along a small footpath with other people which can be busy as it is little Collins st!
I just had a good old long black. The coffee tasted really good and I enjoyed every sip. The long black also comes with a cute tiny little piece of short bread 🍪 cookie as well! How thoughtful 😍.
Would love to come back to try their delicious looking toasties and baked goods next time.
One of the most famous roastery cafe.
Good location in a famous department store.
You can enjoy good coffee during shopping!
Beautiful coffee and fantastic baristas! Bought two pack of beans and see how it works with my espresso machine at home! :)
Wow, this place has it right. All of the baristas know what they're doing and the coffee will indicate that. A great scene, the cafe is a nice place to hang for a bit or very easy to get take away. More shops should be like this!! Lovely piccolo
Sensational Sensory Lab! Was passing by and decided to stop of a quick coffee. Wow, what a gorgeous little spot! Loved the space, lots of seating, and buzzing.
The coffee was absolutely wonderful, one of the best I’ve had in Melbourne- definitely one of my top 3 coffees. Service was great and the food looked amazing- next time I’ll definitely stop for longer and have something to eat.
Thank you Sensory Lab - you made my day!
