Sydney was built on rum. In our early colonial days, rum was used as currency. When Governor Bligh, under instruction from the Colonial Office, tried to prohibit the use of spirits as payment, he was overthrown in an 1808 military coup known as the Rum Rebellion. While the coup was about more than just grog, it certainly centralised the spirit in our history. So, if we’ve been drinking rum since 1788, how is it that Sydney only has one craft rum distillery? Brix Distillery is located in the heart of Surry Hills, just a few hundred metres from Taylor Square, Oxford Street. Whilst Sydney pretty much had rum as a currency in the 1800’s, it fell out of favour for a while. Despite this, Australia is known for producing some of the best. Brix is a bar and distillery, aiming to share their knowledge and passion about Rum, whilst educating and exciting patrons about this spirit.
I love that there’s a moody little rum distillery in Surry Hills. Who doesn’t need a rum distillery, after all?. I met up with my old flatmate for a drink, and the menu almost tempted us into dinner: another night. But the Caribbean and Latin American-inspired dishes look awfully tasty. The menu of drinks is extensive, with cocktails and wine and flights of rum and then pages and pages of rum choices.
