There are so many elements that make up every single one of these dishes. The oysters were amazing and so was the bread. The trout and pork were also very enjoyable. Staff were attentive and service was amazing just as you’d expect. The interior of the restaurant seems kind of dated to be honest. Could do with a furniture/interior revamp. Also there is parking available for customers at the restaurant if you plan to drive in.

Fantastic food, definitely lived up to the reputation. The confit trout and scrolls (with truffle butter) were a highlight for me. Service was very friendly and welcoming, we were well looked after and managed to secure a private room by coincidence. Overall amazing experience and can’t wait to go back!

Had a lovely dining experience today, had the 8 course and each dish was interesting, beautifully presented and most importantly, delicious. The service was prompt and friendly, couldn't fault it. The dining room felt intimate and cosy, it was decorated with different wares which is a nice change from the grandeur of other fine dining restaurants. The view of the zen garden just outside was a nice touch.

Fantastic service. Third time here and still as enjoyable as the first time. Great ambience as usual and the seasonal menu is better than I remembered. A very long and relaxing dining experience. We were here from 6-10pm but didn’t realise at all because time went by very quickly.

The experience at Tetsuya's was absolutely amazing and worthy of the two chef's hats. Presentation, quality of food, decor, service and waiting times were excellent. Wow wow wow Tetsuyas has always been on my list of places to go to but the waiting list has always been so long so my friend surprised me for my bday today and it was definitely worth the wait. We had the 8 course menu, everything was amazing, every dish was flavoured just right and finished off with a hazelnut chocolate cake with candle in it. Will definitely be back, booking from now. Highly recommended 10 out of 10 for me.

Great classic Japanese and western fine dining restaurant. Been meaning to go for years and finally secured a booking. The confit trout is amazing and I can see why it's their signature dish. The seaweed salt crust goes perfectly with the fish. All other dishes were amazing too.

Celebrated our first wedding anniversary at Tetsuya’s and was not disappointed at all. Staff’s attention to detail is impressive with one hiccup, asked for some more bread and it came about half an hour after the request whilst others were served bread. Staff apologised and was not bothered by the situation at all after that. Very good of them to acknowledge the small hiccup. Food is amazing. Freshest of fresh produce sourced from all around Australia and presented beautifully with care and respect. Flavours are present from the fresh produce. Confit of ocean trout is still the signature dish. We were taken to places that we never knew existed before by that dish. Other dishes were great as well but was not new to our palate. My wagyu oyster blade was cooked to perfection, melted in my mouth. While my wife’s however, was a bit borderline overdone. Hers was probably on the outer side of the steak and cooked faster hence the “bit” toughness. But again flavour was present, specially the thick caramelised sauce. Palate cleanser was good too. Ice cream on the dessert was amazing. Kept raving to my wife that it tasted extremely fresh like the cream was milked straight out a cow even before the cow could finish mooing, made into ice cream and served fresh straight to our table. Nice gesture of meeting the man Mr. Tetsuya Wakuda and my wife getting the chance to interview him about what inspired him to create the Confit ocean trout dish. Mr. Tetsuya was a graceful and humble host and that speaks volume in our books. Mentioned that we’ll be visiting Waku Ghin next year for our Singaporean trip and looking forward to that as well. Overall great experience, great ambience, good attention to detail by the staff, food was respected and flavour was extracted from the fresh produce. Keep up the good work! Cheers.

Our experience was nothing more than magical from the time we arrived at the gates, arriving 30 minutes early, to when valet staff opened the gates for us to come in and we were greeted by staff at the doors having let us in before opening hours and were immediately seated then having to wait outside. The staff that looked after us on the night were all professional and detailed with the menu and provided us with options for any dietary requirements and beverage options to match the degustation. Where I opted for the tea degustation. The degustation menu prepared and served that night was beautiful, delicious and delightful to eat. Surprising our taste buds and taking us on a wonderful journey. The produce was so delicate and creatively plated, with a variety of unique flavours. Each dish were taken with care and precision. The manager on the night took the time to show my husband and I around especially the kitchen and the cellar, that was such an amazing surprise and made my night especially as being a massive foodie and love for creating and capturing such creativity of pure, fresh and rich in flavours, completing our memorable food journey experience. Having visited other hatted / Michelin star restaurants around the world and in Australia, Tetsuya has definitely met our expectations and its well known history of being one of the prestigious, elegant restaurants in Australia, with 5 star service, and seeing the amount of effort the chefs put in the kitchen to providing creative and quality produce.

I have been a regular patron at Tetsuya’s and it has been my favourite restaurant until today. The meal started off great, however after our meal ended we were hinted a few times to leave (it was before 4pm at the time and there were many other patrons still on site) and one gentleman (we think he’s the floor manager) very rudely told us we need to remove our car by 5pm (this was after we called ahead of our lunch to confirm we can leave the car on the premise for longer). We tried to explain to him we made prior arrangements, however, he was rude and arrogant and walked off in mid conversation. For such a high quality restaurant, this behaviour is absolutely appalling. If we were told nicely we needed to remove the car by 5pm that would have been absolutely fine. It’s extremely disappointing because we have always recommended Tetsuya’s as one of the best restaurants in Sydney. I can confidently say I will never again return and will never again recommend the restaurant.

Went there for my wife's birthday. Mostly alright except that the signature confit trout that my wife had was undercooked compared to mine. Was also a bit disappointed with the wagyu cheek with black truffle. It was cooked perfectly but the taste of the kale and wagyu with the sauce didn't go well for us. Best dish was actually the kingfish with daikon radish which was one of the starters.

Exceptional food and fantastic staff. We celebrated my partners birthday and were looked after beyond expectation. As soon as they knew it was his birthday he received a cake with a candle, such a lovely gesture. They also catered for my dietary needs. I highly recommend this experience to everyone. Staff were very friendly, attentive and knowledgeable of each dish and wine. Very clean and lovely plating of each dish. The atmosphere was nice. The spotted grouper with squid and trout with salad were a bit too salty. I liked the fresh ocean trout, duck and desserts. <br/>Would recommend and would go back to try other dishes. However, it is on a high end of the price scale.

Each dish in the course is quite delicious, especially the ocean trout and duck breast. The taste of ingredients is fresh and rich, however, I believe the creativity of food, such as method of cooking, side dish matching, can be improved in future. Also, the price is a bit higher in two hats restaurant, even in three hats.

Went here for Valentine’s Day/birthday dinner and I can honestly say that this is by far one of the best restaurants I’ve been to. Although it did take us 3 hours+ to get through dinner but completely understandable because it was a full house. <br/><br/>My partner is not a huge fan of raw food so most of the sashimi dish I usually have two servings and I got a little too much for me. Still enjoyed it very much! <br/><br/>Highlight of the night was definitely the signature trout and wagyu sirloin with mushroom & eggplant. The meat literally melts in your mouth. <br/><br/>I also still think about their bread and truffle butter and wish I could take some home because it was AMAZING!!<br/><br/>Would definitely come back to celebrate another special occasion!

The photos and reviews of this restaurant have caught my interest and attention, so I booked a seat for myself for dinner.<br/><br/>I have ordered a 10 course dégustation and all of the dishes are beautifully plated. The most outstanding savoury dish of my choice would be their confit ocean trout as I really love the sashimi-like buttery texture while the trout is fresh and delicious. I also love their hiramasa kingfish as sashimi are usually served with soy sauce, and I really love their idea of serving it with dashi cream and shishito peppers, which tastes unexpectedly well. My favourite dessert is their Petites Fours, and the black dessert with black sesame is really lovely. The Petites Fours is served with a cup of exquisite Japanese green tea, which suits the desserts well.<br/><br/>Staffs are friendly and they've brought me to visit their kitchens and we've took a several photos there:) The service out there is astonishing! Would definitely visit again!

So for my 25th birthday this year, decided to book the most expensive degustation dinner in Sydney (thanks Blair for the birthday dinner). I've been to a lot of food places in the past year, from fine dining (Bennelong, Catalina, O Bar and Dining, and more)/restaurants/local eats/cafes etc in Sydney, from East Coast to West Coast in America, and throughout Europe as well. Just haven't had time to do food reviews (last one was in Aug 2018 which was a backlog from March 2018), but had to do a post about Tetsuya's.

Lovely fine dining experience. I wish I had known about private rooms to book for a more intimate experience. The bread selection was amazing - go for the scroll that I initially was hesitant about. Absolutely loved the truffle butter! Stand outs were the ocean trout and dory fish I believe. Dessert was amazing!!!! Lovely service but expected due to the cost per person.

I first dined at Tetsuya’s about 16 years ago, this was my fifth trip. It was pretty dreadful. Each previous experience was outstanding on every level, something has gone very wrong. The degustation at the moment is primarily raw and barely cooked, the scampi arrived looking like a split piece of bait and the texture was gluey, we all struggled to finish the tiny portion. The tuna was served cold and primarily raw, as a dish among others this would usually be fine but it was the first in a series of 5/6 undercooked dishes. The signature dish was lovely (as always) and was followed by a perfectly roasted slice of Murray cod, sadly that was followed by really bloody duck and cold raw wagyu. The texture of these undercooked courses was pasty, the small amounts of sauce or dressing were overcome by the raw food. The food, I felt, lacked finesse, care and flavour - things I never thought I’d say about Tetsuya’s. The dessert course was just embarrassing, a disc of chocolate. <br/><br/>The service, previously impeccable yet friendly, was rushed and a bit rude. We had multiple waitstaff arrive with various dishes and each time the explanation of the dish was so rushed and dismissive we wondered if we were being pranked. One lady plonked our plates in front of us as we were talking, allowed no time for us to pause to listen to her, and spoke over the top of us, such was her haste to get the “spiel” out and leave. The sommelier chose not to conceal his irritation when we politely declined his offer to assist with our wine choices. The decor has not been updated or freshened up it does not feel elegant. The garden is truly lovely though. The sourdough and truffle parmesan butter was perfection! At $240 per head plus drinks I should have more to rave about, my friends who had never been to Tetsuya’s before were so disappointed and they felt it was an enormous con. I feel there was no value for us, the food and service was awful. I hope the team at Tetsuya’s understands I’m not trying to troll them, this is simply an honest review of our recent experience - as I mentioned earlier, no one is more surprised and upset that I am providing this feedback than me.

With Tetsuya being so expensive, I was genuinely quite disappointed. The place was beautiful and staff were amazing but I was not blown away by this. The famous salmon was definitely delicious but I just don’t think the dishes are worth the price, as with many fine dining places. However, I’m glad I was able to tick this place off the lost.

Tetsuya’s is an institution and every international or interstate visitor I know has been there. It’s reputation and the reputation of Tetsuya himself is second to none, even in our age of Attica and Brae. Once you step inside the restaurant, you are treated like a VIP guest. The white tablecloths, the heritage building and the artwork are the perfect ingredients for an enchanting atmosphere. The signature dish, the Confit of Petuna Ocean Trout (pictured) is nothing short of wonderful as is the rest of the degustation menu. If your budget allows, the wine pairings is a must. It’s a restaurant that must be on your bucket list. #tetsuya

I came to Tetsuya’s to finally cross it off my food bucket list and I came away a little underwhelmed. On arrival I was seated right next to the window with the perfect view of the Japanese garden on a beautiful sunny day. What detracted from the ambience were the horizontal blinds that brought me back to the 90’s. What was the point of sitting next to the window if I couldn’t even see outside and could only get very limited natural light? <br/>The food was good, but nothing incredibly memorable to justify the price we paid ($600 for the two of us). The highlights were the Hiramasa Kingfish and the Chocolate stone desert. I found the Confit Of Ocean Trout (signature dish) to be a little too salty. Otherwise, although overall a pleasant meal, I probably won’t claim this as the best restaurant I’ve been to or even the best Japanese I’ve had.

An institution and one of the priciest eats in Sydney, Tetsuya's is on many people's list of special occasion/bucket list. Prestige location with a private low set property amongst the high rise of the CBD, it already extrude an exclusive & premium feel as you approach. The interior was a little of a let down, feels a little cold & clinical, it was night time, so not much of the view of the Japanese garden outside.<br/><br/>The degustation menu itself was 8 courses of nicely designed dishes, nothing particularly innovative, but just good classic ingredients & flavours very well combined and executed. My favourite for the night were the confit octopus, murray cod & the pearl meat with chicken wing. The fame confit trout I found a bit too salty & bit put off by an odd taste (think it might be goat cheese).<br/><br/>The service was bit hit & miss. Generally attentive, but one of our friend had a requirement of no raw meat/protein. This was expressed at the time of booking & the waitstaff acknowledged it at the start asking to confirm, even asked whether sashimi was ok, which we said not ok. Yet my friend was served the tuna sashimi course with no warning or explanations. This is just not good enough when you're paying $300 for a meal.

Tetsuya designed his own on-site "test kitchen" within the restaurant to enable him to create the constantly evolving and inspiring dishes on which he has built his esteemed international reputation. Tetsuya's offers one of Sydney's most comprehensive wine lists and our sommeliers will, upon request, match the dishes with wine available by the glass. Tetsuya's does not accept or allow the service of BYO Wine, Beer or Spirits.

Such an iconic venue, I hope this place stays here forever. The venue itself is peaceful in such a chaotic area of the CBD. The confit ocean trout blows my mind, so does the duck and beef. The matching wines are epic, the sommelier really knows what he is doing. Can't wait to go back.

Tetsuya’s Restaurant is simply amazing. It has a reputation for being the best restaurant in Sydney and deserved so. There is only one option: a multi course tasting menu that is out of this world... the best dishes are always the seafood - culminating with the amazing salmon dish. There is the option of matching wine - which I recommend - and the service is perfect. Tetsuya transports you to a different place in the world - and while expensive, as a way to celebrate a special occasion, no place is better.

I celebrated a birthday here and the food was impeccable. The truffle butter was so good and paired perfectly with the bread (I would come back just for the butter 😅). My favourite dishes of the night included the scampi and of course the ocean trout. The atmosphere of the whole restaurant was private and intimate, perfect for a romantic date for two. Service was perfect and the quality of food was amazing. My friend wanted tissues or napkins and we got served a whole packet of fresh tissues on a plate, this just added to the high standards of service.

My dining experience with Tetsuya’s was amazing !! From the setting, service & quality. I loved everything bit of it. it was a short walk from townhall station and the minute we got there, the staff had kindly waited for us with the doors opened. It was very welcoming !! <br/>Their truffle butter is Amazing I had two servings of their bread on top of the 7 course degustation. There was not a dish I liked better than the other. All dishes equally exquisite. And our waiter made our dining experience even better, joking around and making sure we had what we needed. <br/>The only disappointment were their desserts. Although still good, it wasn’t anything special. <br/>Will still give 5 star because I heard there was a long waiting list to dine here but I was lucky enough to try this place on the day of my birthday 🥰 <br/><br/>those eating here, MUST TAKE ADVANTAGE OF THEIR TRUFFLE BUTTER AND BREAD REFILLS !!!!

This place is famous for its Japanese cuisines but it is also famous for its chinese items and mocktails.we had some different type of snacks and some mocktails ,snacks were good but I didn't like the mocktails much since they were bit sour but overall it was a good experience.

Came here with my hubs for celebrating our first wedding anniversary and it turned out to be a perfect choice. Both of us just simply love the dining experience in Tetsuya's! The food are so delicious and the ambience is so homey. The waiters are very professional as well. It roughly take us around 4 hours to finish the whole course, so you'd better go with the right companion 😂

Have finally gotten around to trying the one and only Tetsuya's. We asked for the vegan menu and it truly felt like the chefs had put a lot of thought into it. Each dish was delicious (especially the desserts which is new because usually I don't care much for desserts) but I was disappointed to see the lack of Japanese influence. I understand the standard menu has Jap influences but was hoping they would have incorporated into the vegan one as well. Still, thought it was tasty and also had the most amazing cocktail in quite some time. Can't say overall it was worth the price but it was still an enjoyable experience nonetheless. Oh and service was really top notch!

I finally got to eat at Tetsuyas after a near miss 9 years ago, and it didn't disappoint. The surroundings are relaxed with a background Japanese influence, the service was very good for the most part, but of course it's all about the food. The great man doesn't work on the pass much anymore but his team maintain his high reputation. Everything I ate, from the main dishes to the bread and the amuse bouche was delicious. So many highlights but the signature confit trout, the cod with garlic emulsion and the duck breast were spectacularly delicious. The desserts were absolute decadence. The impossibly beautiful chocolate cake was so light and rich, there was a salted milk ice cream with "rock", a dessert lover's dream. The meal is not cheap but totally worth it

Took my boyfriend here for his birthday. The place has a nice ambiance, hidden away from the streets. The service was very attentive - definitely 5/5. We had the degustation menu and everything was hands down, on point. Everything was soo fresh and tasty! I don’t think i could flaw any of the dishes. My favourite was definitely the ocean trout and the wagyu! It was honestly soo fresh and soft! The ingredients all completely complemented each other! The desserts were also very good! I really enjoyed the refreshing taste of the yuzu sorbet. The chocolate stone was out of this world! I’ve never had such a rich piece of cake - definitely savoured every moment of it! The petit fours were standard. I am definitely coming back and highly recommend this place. Absolutely a gem!

What a disappointment!!! I was so looking forward to trying Tetsuya's after all I heard and all that happened was a Macca's run at the end of the night to fill up. I mean what is with the portion sizes when your spending an average of 300 a head. We went in a group of 5 and our bill cracked just over 1500 including drinks. The whole experience was just fakeness. Wait staff speaking with posh accents, the patrons even worse. I felt like punching on after 30mins in the room. The feeling we got as western Sydney folk is that we weren't welcome amongst the Point Piper and Mosman type. I swear to god Hacksaw and I were so close to getting up half way through the night to start fights with other tables. If it wasn't for Moolah cooling us down we probably would have KO'd a few yuppies. Best part of the night was my Big Mac meal and cheeseburger at Auburn Macca's car park on the way home.

Best meal I ever had. Great service, excellent atmosphere! The oysters were to die for, the signature fish was amazing. The price is pretty high but really worth it because it is almost 10 dishes over a few hours and you do get really full in the end.

Came in for my birthday with girlfriend. Fresh seafood, with every bite makes me want to have more of what they had served us. Even though the dishes was small portions, i guess the set menu was perfect due to end of the night, I was full even was given a mini chocolate birthday cake after deserts. Fine Dining at its best.

I hate to say it bit this was an extremely disappointing dining experience. We had not been to Tetsuya for over a decade but have been just about everywhere else in the interim. We were eagerly looking forward to it.<br/><br/>First, the food. It was pretty good. The oysters were fantastic, the tuna very good and the beef was exceptional. Everything else was just ‘pretty good’ as you would expect from a restaurant with this reputation and with these alarmingly high prices. The signature dish, a fillet of salmon was also ‘ pretty good’… but a signiture dish? Pretty underwhelming under that lofty boast. The cod was outright dull.<br/><br/>Moving to the ambiance, it could only described as morbid. This whisper quiet, stuffy establishment had more the feel of a funeral home rather than a vibrant restaurant. Not even a hint a background music means you can hear every private secret from the tables all around you, every clink of cuttlery and you feel you are actually sitting on the lap of every loud or bad mannered eater. Do not go here on business unless you are comfortable with your competitors knowing your business plans.<br/><br/>To further aggravate matters, the air-conditioning was seriously dysfunctional; swinging from arctic cold to to balmy humidity every 15 minutes or so. Women in cocktail dresses were given pashmenas to stop them shivering and men’s jackets were quickly retrieved from the cloak room, only to be removed again as the seasons varied. No apologies.. Suck it up.<br/><br/>Then there is the service. Apart from one charming Portuguese Australian waiter who excelled at his job, the rest of the evening was a shambles. Wine matching is pretty ineffective when the wine never accompanies the food. In other words there was virtually no co-ordination between the food and wine service which meant that by the time the food arrived (up to 30 mins between courses) the wine was gone or we were on to the next one which was not meant to match the food. Speaking of wine, on three occasions different species of insects bathed in our glasses. When this was brought to the attention of the man who held himself out as the sommelier, he seemed amused, no apologies, again; the smirk on his face said ‘suck it up’ which really is the overall theme of the evening spent of this largely rrelevant relic of a fine dining institution. <br/><br/>And then the wine matching; either a selection of Aust/NZ wines OR a selection of obscure European wines (Austria/Serbia etc). Why one or the other? Why not permit the customers to have a foot in each Continent? Who is coming up these antiquated ideas? We had the former and would rate the selection as just ok. It would have been interesting to try it with the food but instead we had to suck it up on its own.<br/><br/>And the price, for two people (only one with wine matching), $675 plus tip. Rarely have I experienced such poor value for money. There are so many excellent restaurants in the Eastern seaboard. This is one to be avoided.<br/><br/>Oh, one more thing…it is not a Japanese restaurant as advertised. 'Modern Australian' perhaps but apart from the sashimi, Japanese any suggestion of Japanese cuisine was barely noticeable.

Spend our night with family dine in one of OZ best fine dining restaurant. <br/><br/>Foods were cooked perfectly and presented very well. Although I could not feel the wow factor for 2 hats restaurant, the foods were delicious 👍 with perfect pairing wine.<br/><br/>Love the ambience and service. Couldn’t asked for more. Their service was very attentive and excellent. <br/>They even cooked special meal for my 5 years old son.<br/><br/>Price is affordable for 2 🎩🎩<br/>Overall was good and enjoyable.

Finally headed to Tetsuya for their degustation. I loved it but hubby thought it was so so (disclaimer - he's not really into fine dining). My favorite was probably the desert, presented so exquisitely, actually all dishes seemed to be prepared with great care. Price is a but steep, wait for the special occasion!

Had a 10 course degustation menu here. Scallop like Oysters appetizer was memorable as it was creative and original. Had a very nice salmon with kombu or seaweed seasonings on top. Tuna was wonderful. Dessert was refreshing. Overall, such a fine dining place focused on Japanese flavor and techniques that bring such clarity in flavor. I left satisfied feeling that my palate was so clean due to the subtle yet elegant flavors.

With an 8 course degustation menu, you have to go here with a good companion and a fair amount of time.<br/><br/>The restaurant is in a purpose built building that looks like a Japanese villa, with a view to a beautiful zen garden. <br/><br/>The food is brilliant, especially the trout, which is their signature dish. Each dish is explained as is the heritage of some. The ingredients seem to be perfect, each flower, leaf, vegetable or piece of flesh is perfect to look at and to taste. The food looks simple, but is a complex and sublime mix of flavours. <br/><br/>My wife is vegetarian, the return to built a vegetarian menu for her, this could have been a little more imaginative, and the vegetarian experience should be improved. <br/><br/>The staff were amazing, polite friendly and very very helpful.

I had very high expectations as did my Fiancee.<br/><br/>Service - The service was great, everything was well organised, dishes were explained as they arrived, we were cared for by all the staff perfectly. Their care was so much that when my fiancee didnt eat all of one dish they checked on why she didnt finish and brought us out a suitable alternative. The wrong knife was given with two of the dishes (marron and beef) as the knife was not sharp enough to properly cut the meat, the waiter assured me it was, however after trying I can assure you guys it was not. A<br/><br/>Ambiance - Very calm restaurant, traditional Japanese feel and mood. A perfect place for Tetusya to showcase his food and the garden is devine! Make sure to ask for a garden view seat if you book. A++<br/><br/>Food - Sadly for me this is the most important element of dining. I enjoyed eating everything that was brought out, however I was not wowed like I was expecting. I felt that Tetsuya has lost interest in creating and putting thought and feeling into each dish. The dishes felt a little mechanically made, lacking imagination and creativity and I feel this is at the heart of my disappointment from the experience. Possibly getting back to the restaurants Japanese roots could help them find that next level touch that they are missing with their food. Service was exceptional, there's an international wine choice or Australian wine choice to accompany the degustation, I opted for the Australian and was very impressed and satisfied with the quality. <br/>My favourite dish was the crab, melt in your mouth delicious. In saying that though the rest of the menu was just as good and the freshness was unquestionable with every mouthful.<br/>The atmosphere was a little bland for my liking, too quiet and bright, if people aren't talking just above whispers, you will hear the conversation. <br/>The garden view is gorgeous and lovely to look out to while eating, extremely well kept.

Was here a few weeks ago with my wife and oldest son.<br/><br/>I thought the service was immaculate and attentive. Worthy of their reputation of being one of the finest place in the city and a big plus for being so accomodating to our son's needs that night. <br/><br/>Ambience is serene and as advertised by many who recommended this place to us.<br/><br/>The food was cooked and prepared respectfully and with great care. Unfortunately, we did not quite feel the 'wow' factor and the surprise element that we were hoping to experience when you dine at this type of establishment. This is not a knock to Tetsuya though as the food was excellently cooked but being of an asian descent, the taste perhaps is too familiar to us and for this reason we did not quite appreciate the food that night as others would.<br/><br/>Overall, we enjoyed our time at Tetsuya but we will wine and dine at other fine dining establishments for now - perhaps then we will come to appreciate Tetsuya's food more :)

Finally trying Tetsuya, been wanting to try this restaurant for ages. Location is very convenient, few minutes from townhall but due to strong wind the whole day, decided to drive, love the valet service ($25) btw. Came in 15 mins early, so we sat down in small bar inside, all the staff are very professional. Dinner started with roasted scampi tail with vanilla 😍😍, kingfish with yuzu, pickled daikon and ice plant. Followed by confit of ocean trout with apple and witlof 😍, then bass groper with charred sugarloaf cabbage and black garlic. Mains are dry aged duck breast with turnip cream and jerusalem artichokes 10/10 (best duck ive ever tasted) and also wagyu beed cheeks with manjimup truffles & celeriac. Desserts are lemonade fruit sorbet with white choc & chartreuse and Tetsuya chocolate cake 😍😍. Very nice degustation.. very worth it.. highly recommended

Situated on a quiet street is the famous restaurant Tetsuya which i have been dying to try. The service was great and welcoming with all staff being experts on the palettes. Although the dinner service was long (3.5hrs) i had a great time celebrating my birthday here with my friend. There were 5 seafood dish 4 of which were expected to be raw (for people who were allergic to raw seafood you might keep this in mind) and the desserts were stunning too. Appearance wise all dishes were outstanding but palette wise only one dish really blown my mind aka the Ocean trout! It was a great experience but i would have to say if you're looking for something filling then Tetsuya might not make the cut i.e consider more food afterwards;)

I read through the reviews for tetsuya's before my visit and I have to say most of them are true! <br/><br/>In combination, atmosphere, foods, service and entertainment are not worth its price and its name. It could be me having an unlucky date, or maybe too much expectation, which leads to disappointment. <br/><br/>For example: customer service, all you get is the waiter or waitress reading to you what is on the menu. <br/>What do I expect ? Simply a little more than just reading the name of the courses. What you could do is? Tells me what I will be expecting on this course or what is the ingredient ? Or why did chef has chosen This? Just something would be better than reading the names !<br/><br/>Will I expect this from $20 restaurant of course not! But Tetsuya's is branded so you can consider to reach the standard for fine dining. <br/><br/>Overall, will I visit this restaurant again? Unfortunately no :(

I dined at Tetsuya last night for our wedding anniversary I had been looking forward to enjoying the same experiences I had found at the Waterside at Bray ,Le Manor aux quatres saison or The old.L'ortalan.<br/>For me it wasn't even close.I get the clean and sharp taste of the food itself but it was not for me as I strongly believe in flavour and seasoning .I must point out that I have some 36yrs experience as a chef and although I far from perfect I do have an opinion and a good palate .<br/>This is the first review I have ever written and Although my wife did not want me to mention anything last night, I slept on it and felt it was important to mention my thoughts.<br/>My wife had booked a pescatarian DEG then rang and changed it to a vegetarian option just in case there was something she couldn't eat. <br/>On arrival we were told that my wife's options were to be pescatarian? To which she replied no it was then obvious that her meal would likely be made up on the fly as they could not tell us the full menu at the beginning but as each course was served.<br/>We both felt that the general composition of the dishes lacked thought and substance and consisted mostly of vegetables with the first and second courses a bit of a joke.ie charred cucumber and carrot puree .<br/>I guess the real gripe for me was the cost for what amounted to mostly vegetables and a sous vide duck egg for $240.<br/>The service was good but still lacked the polish of similar establishments as when asked some questions re food content the question need to be referred to the chef <br/>We.dine out a fair bit and our no 1 question is would we return and on this occasion our answer was No.<br/>I needed to get that off my chest and please understand that it is totally constructive as I certainly understand the rigours of the trade <br/>

Service at Tetsuya's was excellent. The team was helpful, friendly and affable. Like Sepia & Bennelong, the food has hits and misses. <br/><br/>For Sepia, the starters and desserts were creative and full of positive surprises whereas the main course was nondescript. For Tetsuya's, the starters and main courses were excellent but the desserts were somehow underwhelming <br/><br/>The Good - You could literally taste the ocean with the roasted scampi and saltbush tuna. They were fresh. The confit of ocean trout is probably the best dish I have tried in Sydney. While the grilled toothfish, miso cured Duck breast and wagyu beef may look ordinary, each gave me a subtle surprise. The fragile and Roma tomatoes complement the toothfish and gave a wholesome texture to the dish. The leeks was covered with a layer of salt and nuts and the wasabi mustard for the wagyu was a pleasant surprise.<br/><br/>The OK - The rockmelon granita and chocolate cake gave an underwhelming conclusion to the degustation course and I felt Tetsuya should replace them. I would have given my first 5.0 rating if there were great desserts. The chocolate cake is not any better than those you find at Black Star or La Renaissance. The Rock melon granita was just average. Perhaps Tetsuya's should poach the dessert chefs from Sepia.

Tetsuya's - What an experience! <br/><br/>We called a few weeks ago and were advised that they were fully booked, to no surprise, but when they called and told us they had a cancellation that day and did we want to come, there was no doubt about it! <br/><br/>I loved everything about Tetsuya's. The setting of the restaurant is beautiful, inside a heritage listed site with Japanese styling in the heart of Sydney city. The building and the view of the Japanese garden as we dined took me back to Japan. <br/><br/>The staff were very friendly, attentive to our needs and dietary requirements. We went with the European wine pairings with our food which were perfect. The Sommelier was excellent and was able to sense my affinity for whites rather than reds and accommodated to this. <br/><br/>Can we just take a moment to talk about the truffle butter? Oh my god. We had the bread keep coming because the butter was that good. <br/><br/>But the food... the standard was next level. Each and every dish in the 8 course set degustation was amazing. The flavours worked together, and each element had a purpose. My favourite dishes of the night were the confit ocean trout which is Tetsuya's signature dish, as well as the quail. The chocolate cake was just divine and although it looks deceivingly simple, each bite revealed a different layer. <br/><br/>Although it's not somewhere I would dine regularly, I would definitely come back to Tetsuya's for a special occasion because it's truly a wonderful experience.

AMAZING!!!!!!!!!!!! From the greeting at valet, to welcoming us to our seats, to the fantastic food and of course the absolutely flawless service from the minute we arrived until the minute we were walked to our car. My favourite meal was the signature dish salmon and the chocolate cake! To die for! I highly highly recommend this place! My sister and I enjoyed it celebrating work success, but don't wait for a special occasion. Everyone should experience this amazing establishment once in their lives, at least!

I came here with a fellow foodie for no reason in particular, in full knowledge of the $400 price tag which, while it made me slightly uncomfortable ethically and financially, I was prepared to pay for this type of “once-in-a-lifetime” experience.<br/><br/>The adventure begins upon finding the restaurant. Walking in from the bustling CBD you encounter a driveway that winds its way towards a gorgeous Japanese-style house – the last thing you would expect to find on Kent Street! The dining room is elegant and spacious and features a full view of their beautifully-kept Japanese garden.<br/><br/>To start we ordered two cocktails, a dirty martini and the “cherry blossom” which were both excellent. ALMOND CURD, ROASTED SOBA ICE CREAM & 13-MICHEL ET MARIE BOTRYTIS SEMILLON, RIVERINA<br/>it just got better and better. The combination of flavours was nothing short of genius, and the dish was also playful in terms of texture and temperature. Wine was one of the best dessert wines I've had - owing to its lack of sweetness, instead it was rather tart.<br/><br/>ix) TETSUYA'S CHOCOLATE CAKE & 13-CHALMERS SAGRANTINO APPASSIMENTO, HEATHCOTE <br/>the best dish of the night. True, I have a chocolate bias but this cake was otherworldly. Constructed from four different valrhona chocolates that varied in consistency, intensity, colour and most importantly, savouriness, this was the ultimate chocolate cake, and somehow managed to not be overpoweringly rich. The wine, too, was incredible - similar to a berry-infused hot chocolate it was velvety with, intense, intense chocolate notes.  <br/><br/>x) PETIT FOURS, ESPRESSO<br/>I think by this point I was just drunk off the wine (which had accumulated to about 800mL worth). The cassis macaron didn't taste much like cassis though. Underwhelming on both occasions. My impression is that Tetsuya's was at the head of the pack when it opened nearly 20 years ago. But now the others have caught up, and even overtaken. The crystal bay prawns and the signature trout dish stand out. The rest is just very good Japanese

Tetsuyas is a lovely restaurant hidden away in the CBD. So many courses of divine Japanese food. Lots of seafood. You have the choice of ordering matching wines for each course too. The dessert was amazing and a perfect way to finish the courses. Pricey but a must try.

Strongly recommend this restaurant. All 10 courses were delicious! I personally love their seafood dishes more than the meat ones. Seafood dishes were well cooked particularly the scampi, tuna and ocean trout (signature dish)!! Desserts were very nice too. I'm not a dessert person, but I managed to finish all of their 3 desserts and my favourite was the rockmelon granite with almond custard & roasted soba ice cream. Wonderful combination. Definitely worth visiting, you won't regret.

World-class and well awarded Tetsuya’s is a benchmark of the Australia fine dining culture. Once reaching number 4 on Restaurant magazine’s list of The World’s 50 Best Restaurant, Tetsuya’s has been on my list for some time and a conveniently timed work trip to Sydney allowed me to finally visit. Known to be difficult to get a reservation at, I surprisingly managed to secure a table with less than a weeks notice.

Astounding!!! We went for our anniversary and the ambience was serene!!! Staff that were human made us feel welcome and special, and the menu delivered!!! The degustation with matching world wines was fantastic.... hard to say what the highlight was, however right from the start with truffled butter on fresh bread, through the oysters, spanner crab, tuna and ultimately the tooth fish, my climax was the wagyu.... real wagyu!!!! Tetsuya's is perhaps one of the best fine dining restaurants in Australia. We managed to score a lunch reservation on a Saturday at the last minute, and we were expecting a great lunch, but what we got was just on a whole other level. The ocean trout was probably the best dish, not to mention best fish I've ever eaten - it was extremely moist and delicate, and an absolute delight to eat. All dishes here were beautifully presented, and full of flavour. A little pricey but worth it. Inside, you can sit overlooking the Japanese garden, but otherwise the restaurant itself could do with greater decor if it won't promise a view!

I have been going to Tets since his old days at Rozelle and his food has always been astounding.He has tried various additions to the garnishing of his signature ocean trout and it is always amazing (I once ate at Tets with two opera singers and they sounded as if they were warming up when the ocean trout was served...mmmmm, mmmmm).The present very upmarket restaurant with the Japanese garden is a magnificent place and a table at the long glass window in either of the serving rooms is the pick spot.Get the sommelier's matching wines with the long kaiseki style menu as they set off each course perfectly.Geniuses are those who think outside the box---Tet's taste buds are in this category.Is there a word better than wonderful ?If there is ,it applies to Tesuya's-- an exceptional experience !

Probably the greatest fine dining experience you can find in Sydney. They offer a set menu and indulge you with 10-course in 2-3 hours. The food is magnificent and the service is just abt perfect. Their signature salmon is a taste from heaven.

My friend and I walked out so full after a spectacular lunch degustation. The truffle butter and warm bread was amazing and I had wanted to eat all of it. The waiter must have noticed because he came back three times with a butter refill. Tetsuyas was a fresh, elegant and flavoursome menu that will definitely remain a memorable experience. My friend wasn't much of seafood person but she thoroughly enjoyed the dishes. The hype around the signature confit ocean trout is justified and I would recommend all to try it.

my dining experiences at high class restaurants are always fun because i always end up liking the weirdest things. what i really loved from the dining experience was the bread with truffle butter, devoured the entire butter by myself and wanted more (although didnt want to fil myself with bread... well i did but i had to remind myself i was here for other courses as well). the ocean trout is classic and taste amazing, highlight of the dish in terms of the "main menu". service is quite good and definitely recommend this resto. atmosphere is very good and unlike other "high class" restos its not pitch black and you can see which gives it many bonus points

From start to finish Tetsuya's was an exceptional experience. The menu had a definite rhythm of flavour which crescendoed at the final savory dish and beautifully mellowed as we approached the dessert courses. The flavours of each dish were gorgeous and delicate. Each course had distinct Japanese ingredients that were used to perfection. The staff were fantastic and attentive and made the whole experience exceptional.

I have many pleasant memories of birthdays, anniversaries and family gatherings celebrated at both its original and current locations.<br/><br/>My dining experiences at Tetsuya's have always ranged between very good and excellent, and I've only been disappointed once or twice, though mainly due to my own personal distaste for some of the game and poultry courses that have featured on their degustation menus over the years. Thank gosh they've gotten rid of the 'squab'.<br/><br/>Service is very attentive and I've noticed that in recent years the waitstaff have dialed down the pomp while still maintaining an air of formality - a very welcome change.<br/><br/>The May 2016 degustation menu appears to be a simpler, perhaps more Japanese approach than usual. At a time when many other fine dining restaurants seem to have lost the plot with their increasingly stranger gastronomic concoctions, I appreciated Tetsuya's return to simpler flavours - an almost back to basics approach. <br/><br/>The first half of the menu featured Tetsuya's knock-out signature dish, the confit of ocean trout, supported by three delicate and predominantly raw seafood courses. All were quintessentially Japanese in flavour and presentation. These were followed by a French-influenced orange duck and Ranger's Valley beef cheek.<br/><br/>The dessert courses (poached pear and chocolate cake) were satisfactory, but left me longing for his previous desserts, like the magnificent liquid strawberry shortcake.<br/><br/>I highly recommend Tetsuya's to anyone with a fondness for Japanese cuisine. The experience is top notch and the food is always masterfully prepared, even if some of the degustation courses occasionally involve ingredients that aren't always to my individual liking. The degustation is a great experience. It's like dining in a museum with beautiful art pieces that you can eat. All the courses are of such high quality and that ocean trout is amazing. Meh. Had been wanting to go here for years so finally we went for an anniversary dinner a couple of weeks ago. I booked the week before, however was mid week. After all the hype, honestly I was disappointed. Service was weird - regular people trying to sound posh, plus they would forget about us from time to time. Decor needs a bit of an update but no biggy. On to the food, the bread and truffle butter was really delicious, would buy the truffle butter if I could. The infamous ocean trout was melt in your mouth and top quality, though kinda tasted like chicken noodle seasoning (I guess the seaweed) and not enough like the natural trout flavour. Cocktails were pretty good though. Everything else was not memorable except for the huge arse bill.<br/>Giving in 2.5 because I would say for it's fine dining category Tetsuya's is not above average.

The dish that I’ve seen on TV so many times is finally in front of my eyes! Just like the previous octopus, the trout was so easy to cut into. The umami from konbi was simply amazing and it was perfectly married with the apple salad.

3.5 is probably due to the difference between actual experience and my high expectation. 9 courses in total. Optional choice-- Pacific oyster was great with ginger and rice vinegar. The first two fish: tuna sashimi and octopus were average. Signature dish: confit ocean trout was a disappointment, flavour overwhelmed by the Japanese seaweed. Toothfish was definitely outstanding. The best dish was wagyu sirloin. I can feel the wagyu melt in mouth. Coconut strawberry granite and chocolate mousse were so beautiful!!! <br/>Service was negative. Staff were professionally "trained": standard smile, standard talking.... You know my point. <br/>Overall, it's a good restaurant, but has a lot to improve.

We booked 4 months early for a special Saturday. No view but very nice atmosphere. Amazing food! Amazing staff! Only down sides are very expensive and horrible dessert! When we first entered, the glowing staff greeted us and brought us to our table. The service is impeccable and I could not complain even if I wanted to! The staff asked if we were celebrating anything, and at the end of the meal, they presented us with a card that had the menu, with the date and congratulations. Its just amazing how far they would go for something like this!<br/><br/>On to the food! Hands down, the ocean trout was the best dish of the night. It was so tender, and when topped off with the truffle, it tasted heavenly. The apple slices below were delicious too. In short, the dish was exquisite! <br/><br/>If you have a choice, agree to add the oysters as a starter for only 10$ per person, it comes with a ginger and rice vinegar sauce. This starts the journey off amazingly!<br/><br/>I could go on and on about how nice the food is or how nice the service is. In short, if you are able to spend abit, do not hesitate to head down to tetsuyas for an unforgettable journey!

Arrived at 7:15pm had the degustation with the extra oysters. Oysters were amazingly creamy. The chocolate cake was also really good. The truffle butter was great also!!! I went about a month ago for a conference dinner for 50+ people. Sat upstairs in the private dining area. I'd heard from several friends that the quality had dropped the last few years so was expecting about 7-8/10 range, however it was one of the best degustations I've ever had. Was impressed that every dish was a high standard and consistent averaging 9/10 to 10/10 in taste/presentation. I could not believe they maintained the high standard for the whole meal for 50+ people. Accompanying matched wines were beautiful and high quality - no hang over the next morning!

For $235 per person or so I would expect amazing food, however flavours didn't work, Some elements on the dishes didn't work well together. The only thing I really liked were the dessert, delicious. His menu has evolved continuously over those 17 years and it just gets better each time and never disappoints. We were lucky enough to be invited to a very special dinner last week to celebrate 10 of the worlds best Sake makers who were in town to promote the worlds best Sake. Outstanding sake and an outstanding menu please see the attached menu.It is no wonder that Tetsuya is considered to be a great mentor by his peers such as Ferran Adria, Alain Ducasse, Charlie Trotter and Heston Blumenthal...who all regard Tetsuya as friend mentor and aesthete.

90's Nouveau Fine Dining. Back in the 90's and this may have been quite trendy. However in the 21st century it seems some element of textural excitement is required to compete with the fine dining elite and tetsuyas likes to be unique in this area. The service is mechanical as always, possibly not as refined as yesteryears and lacking that touch of personality. Looking at Martin Benns impact during his time here and the global recognition he is beginning to receive makes you wonder if it was him that made this restaurant famous as it has never ranked as high globally since his departure and sepia is no doubt the face of francojapanese cusine in the country at present. <br/>The flavours are quite elegent and well thought out, with some highlights with the tuna, toothfish and duck although over all the flow of courses could be a little questionable. Over multiple visits over time, it seems they like to serve one questionable dish per visit without a doubt.<br/>All said, the restaurant is definitely worthy of a visit if you've never been.

I went to Tetsuya's with my boyfriend for his graduation present, all the dishes were really nice especially the duck, which was my favourite. Because the portions were so small i was pretty worried that i was going to have to run to maccas after, but that surprisingly that wasnt the case. The only downside is the price, but the overall experience was definitely worth it.

With the current trend of a more casual approach to dining out, with a "hipster" flair, and delving into normally lesser known cuisines and fusions, Tetsuya remains one of the Go To restaurants to celebrate a special occasion such as a birthday or anniversary.<br/><br/>Service is exceptional. It is what you would expect (and more) at a fine dining restaurant. Staff are professional, and never snobby nor pretentious. They are welcoming and friendly, even cracking jokes that are never inappropriate or cringeworthy. They explain the dishes clearly, present and take away plates at the right time and are methodical in what they do, that you would not need to constantly search around for service. Because of this, you will just need to sit back, relax and enjoy the meal.<br/><br/>We ordered a bottle of wine and our glasses were topped up, always in a timely manner, never waiting with an empty glass, throughout the night. The 10 course degustation was lovely. Presentation of each dish was beautifully elegant and the flavours were fresh and delicate. Highlights for me, were the hiramasa kingfish sashimi, the highly anticipated signature dish - the confit ocean trout, the grilled toothfish and the chocolate cake at the end of the meal. All the portions look tiny at first, but at the end of our 3 hour plus meal, we left extremely full.<br/><br/>It is a very expensive meal, no doubt about it. If you are here just for the degustation, no wine, it will set you back $440 for 2 (they also offer a valet service for an extra $20). It is definitely worth a visit. Food is good and service is great. Not many places have staff holding open your coats, ready for you to slip in, before walking you to the front to your awaiting car.

Having now experienced Tetsuya’s for myself though, I can understand why you could justify returning repeatedly. It’s a very different style of meal to what we had just a few weeks earlier at the Fat Duck – it’s much more understated and elegant without that element of showmanship. I believe this is the best restaurant in Sydney. About $650 for two people including two glasses of wine in 2014. The signature dish was so beautiful. Ive tried similar dish at Doyle (i think they might tried to replicate the dish. Maybe) but cant compare the two! I am so happy to go back to Tetsuya's!

This was one of the first high end degustation places I have been to. I took my girlfriend at the time to celebrate an anniversary and was blown away by it’s class and form. The restaurant is essentially a house with a beautiful garden in the middle of Sydney…. There’s plenty of parking on the street and a parking complex right next door. The great thing about their menu is its ever changing so even if you revisit, you would get to try something new. I’m a massive fan of their truffle butter… we demolished the whole serving on two pieces of home-made bread.. and realised we were more pig than humans at that point. The negatives on this place is their price tag… and that the food itself was quite forgettable. Yes it was small servings of well-cooked food but nothing super creative that was mind blowing. I’d still recommend it as a place to go to if you want to celebrate a special occasion but Sydney now has a lot more to offer that wont cost nearly as much.

I've been to Tetsuya's many times... and it was my favourite restaurant in Sydney. Perfect elegant friendly but unobtrusive service, a gorgeous setting with wonderful art, and flow, and most of all the food. AMAZING. And considering how many courses you have, and how long the night is if you take your time, it's incredible value. It's more like going to a great performance than just dinner somewhere. <br/><br/>But it also seems to represent an older style of cuisine in Sydney, and these days folks want something a bit different, a bit more casual, and with challenging flavours. Still, I'll always remember my meals here.

Entering the grounds of Tetsuya, it’s like stepping into a haven from the hustle and bustle of Sydney city. The Japanese zen garden surroundings create a peaceful atmosphere, as soon as we reach the entrance, we are greeted by a suited waiter and taken inside the actual restaurant, there are dishes being distributed to tables and the rooms are abuzz with free flowing conversation. There’s also the sound of porcelain plates on bench tops travelling from the kitchen to the hallway and hearing this makes me feel like I’m coming home after a long day at work, ready to relax, in my case, that involves eating heaps of delicious food. Our 10-course degustation for the evening is explained, we chuckled after being told ‘there will be two protein dishes, the beef is from the fillet and the quail is from the breast…’ Complimentary champagne ensues and bread and butter follows shortly after. Ricotta and truffle butter Testuya’s butter has added ricotta and black truffle, it’s like cheesy mousse heavily perfumed with that distinguishable truffle aroma. Ate all of it and I’m not the slightest bit ashamed because you do not want to leave any of this behind, why would you?

We had 10 courses which were all absolutely amazing (apart from the fig dessert which my husband described as having a toothpaste flavour! ) Apart from that we enjoyed every dish especially the trout and tuna! It's been the longest of times that I have wanted to dine at Tetsuya's but never got the chance till my recent trip to Sydney. Initially, I wanted to make a dinner reservation but it was fully booked, luckily enough, they had an opening for lunch which I happily snapped up! :) Tetsuya's is no stranger to controversy; losing its third chef's hat in 2011 and unable to regain it's "glory" since. That may be the case but it didn't stop me from wanting to visit the place. According to John Lethlean's article in 2013, "risk is not on the menu", I understand why some people may think that but to an extent, I think "if the man himself has perfected what he has created, why mess with it?". My dining experience at Tetsuya's was nothing short of amazing, the food was delicious and the service was impeccable. Tetsuya’s signature dish looked magnificent on the plate. What a perfect cut and that colour! (which has not been modified by me). The crust is made of dried seaweed, soy and coriander seeds which had a saltiness to it that my partner describes as 2 minute noodle chicken salt. A thin line of salt sits on top of the crust. The ocean trout was of such high quality and so soft it was like cutting through butter. I tried to savour every mouthful. Beautiful flavours with a simple salad underneath. Understated elegance.

As soon as we entered Tetsuya’s we felt looked after, from the moment we pulled up at valet till the moment we were helped with our coats and walked out to our car. Our waitress was fantastic, she knew we were foodies so explained every element of each dish with such passion and detail. The most impeccable service, when anyone left the table, a waiter would come over to straighten up the napkin each and every time. I would recommend Tetsuya’s for a very special occasion. This is definitely #1 restaurant i’ve experienced in Sydney.

Oh my.... the number of times I have walked past Tetsuya's trying to make up an occasion of sorts to dine there. I mean, how does one justify blowing more than half of what most people earn (in Malaysia, that is) in a month on ONE meal?  All I can say in answer to that is, thank goodness for mightily persuasive friends. (I'm looking at you Andrew!). And thank goodness for truffle butter on a piece of wholemeal bread. The butter was so good that le hubby just did away with the bread and ate it as it was. The first dish to arrive was the savory custard with avruga; to be known hereby as the smoothest, most luxurious chawan mushi I'd ever tasted to date. It quite literally melted completely in my mouth. I believe I also speak for both my dining companions when I said that. We had the carpaccio of snapper with umeboshi next. My sister and I had the delight of spending a rainy afternoon at Tetsuya’s last Saturday. We chose to have the degustation menu, which consisted of ten different courses.   Little did we know what an unexpected treat we were in for.   The heritage-listed restaurant premises are stylish but very low key.   The north side of the dining room is made up of glass windows that overlook a peaceful Japanese style garden including a little waterfall.   The atmosphere is very tranquil. Tetsuya’s is housed in a refurbished heritage-listed site with a Japanese-styled garden to gaze upon while enjoying your meal. Ceramic and porcelain sculptures are boldly studded amongst the surprisingly large dining rooms. Although the restaurant is located in the busy CBD, the interior design seems to give an insulated bubble from the chaos of the city, and transports diners into a zen, tranquil space.

Tetsuya’s is a great spot if you are wanting an elegant dinner with all the trimmings. We were satisfied with the food, the service was excellent, and the location was convenient too (except for the no signage issue). If I have something to quibble about, it will be that they made the mistake of double-charging us for the beer we ordered. But human error happens, it wasn’t too much of a big deal for me to lose sleep over. Mark, on the other hand, still cries himself to sleep at night, thinking about his 9 dollars lost.

In terms of presentation I believe Salad of the Sea wins. This was a very beautiful and refreshing salad with some extremely good sashimi. Famous for its delicate food, classic presentation, and calibre of chefs, this restaurant offers a splendid degustation menu, which allows diners to sample many signature dishes of the restaurant. Tetsuyas degustation menu has a diverse selection on offer, and is known to change from time to time. Have a look at the photos, although unfortunately, not all dishes had on the day were photographed. On this occasion, the following were served: chilled pea soup with bitter chocolate sorbet; savory custard with avruga; NZ scampi with chicken liver parfait and walnut vinaigrette; confit ocean trout; steamed tian of spammer crab; seated fillet of grass fed Cape Grim beef; a sashimi kingfish dish, a chocolate cake-esque dessert, amongst others. Tetsuya Wakuda has created something special in this restaurant to still be successful, even after 20 years of trading. In this day and age where it is not uncommon to hear of great restaurants closing after only a few years, this is a great achievement in itself. The cynics may have moved on, but looking around the restaurant that night, it was clear that not everyone would be classified as falling into the ‘wealthy’ bracket. Many of the customers were like myself – of a healthy disposable income – but still the opportunity to eat at Tetsuya’s was a treat; a special occasion. Awards, accolades and world rankings are all very nice, but to charge $210 per person and have ordinary folk eat at your restaurant and still be fully booked on a weeknight, after 20 years is perhaps accomplishment enough for a humble Japanese cook.

At times the presentation of the food was not perfect, a little update is needed – perfection is expected at these prices and from this quality of fine dining. However, it is good to see Tetsuya has stuck to his principles of pureness of flavours and simplicity in the look of the food. Having rang up to book about two weeks in advance, we were pretty fortunate to land ourselves a table considering it was a last minute thought. I came across Tetsuya via Masterchef and since then, have been pondering on the likes of dining at his restaurant. It is fascinating to learn about an individual's life journey, both the bitter and sweet experiences. The entire restaurant was beautifully decorated with a few paintings on the wall and sufficient space for diners and waiters to whiz past. The third dish was my FAVOURITE of all! Yes that includes their world famous signature and the most photographed dish - Ocean Trout, sue me. Again they use the savoury dessert concept for starters. Weird combination of savoury custard (think miso flavoured egg custard) with sea urchin. Wacky right??? But it unexpectedly worked so well and is out of this world delicious. The signature confit of Petuna ocean trout arrives, but is sadly without its usual lustre. The portion size is noticeably reduced from my three previous visits, and the texture on this particular occasion is extremely disappointing in comparison. The bed of celery and apple is an underwhelming variation, with the accompanying salad far too acidic, and the sum of the dishes’ various parts not sufficiently cohesive. In perhaps a symbolic epitaph, the matching wine arrives conservatively five minutes later, similar to the much earlier request for more bread, which belatedly arrives with no butter on the table some fifteen minutes later. A combined 30th birthday for me and another friend provided the excuse to head to Sydney with a handful of friends and treat ourselves to an amazing night. The dinner costs $210 for an 11 course degustation, and many of us also chose the matched wine option for an extra $95. I've included the wine names with the dish descriptions below. I'm not at all experienced enough to comment about the wines, except that the combination of the food and wine was superb and enhanced the dishes. The second dish to arrive was the ‘Chawanmushi’ – a savoury egg custard. Silky smooth, the egg custard was warming and comforting. The avruga brought a slight salty component to the custard, with a little less of a pop than cold avruga. Onions brought sweetness and texture, which rounded off the dish beautifully.

However when we arrived they said the booking was not for another half hour, which was a blatant lie given that they had confirmed an earlier time slot but clearly current patrons were yet to move on from the restaurant. Boring and expensive... Per.... Boring and expensive...<br/>Perhaps I've been spoilt by restaurants like Vue De Monde and Ezards to name just a few, but this was really boring. The atmosphere was odd and dated. The food was clean, fresh and nice but just not memorable and the signature dish was pretty ordinary. I had high expectations and Tetsuyas unfortunately they just did not deliver. Service was polite and courteous but not outstanding and just met the standard expected for a $600 meal. A word to the wise, do not let the waiter "suggest" a champagne cocktail for you unless you want to pay $35.

Expensive and underwhelming. It wasnt all bad. As interesting experiences go I would say that the food was of a reasonable quality. Service was a little on the average side but no matter. I just think that Tetsuya's has been built up so much over the years by the bull**it foodie writers that the poor bugger is going to struggle to compete with the image and reputation that has been created. I dont know what planet these people live on but stop making out this is culinary Valhalla already. We are grown ups and make our minds up ourselves. There is this lemming like zeal displayed by critics who want to classify Asian and Asian fusion food tas the second coming. I just find this ridiculously childish in its slavishness to fashion. Its not that fantastic - honest. Tetsuyas is certainly better than most of the fusion styles in my view. Overall i found the experience was OK but i'd give Tetsuya's a 7.5 tops and not a 9 like some foodie writers and these irritating food bloggers will have you believe. The priciness really marks the whole thing down when combined with the average service.

Not enjoyable at all whatsoever, the wait staff were not attentive at all, we waited up to 30 minutes for drink orders, then there is the wait for food, we all had the degustation menu and it was disappointing, not only was there large amounts of time between dishes, everything took so long to arrive, each dish was tiny, although you expect that with degustation, maybe if there was not so much time between dishes we would have not been so hungry, not one dish was outstanding at such a high price you would expect more, the restaurant is out dated, as well as the menu and drinks menu. <br/>We do not care to come back.

4 and half hours far too long. Lets start with the decor, outdated. All the textures of the food were the same. We had to wait at least half an hour between each course , we got there at 630 and didn't leave until 1045, it was exhausting. Another table complained and walked out, we perservered. The scampi tail was tough and flavourless, the chicken liver parfait was overpowering and I left it as it gave me a terrible taste in my mouth. The signature ocean trout was way to large a serve for a degustation menu. It had no flavour and wasn't accompanied by anything other than a small salad of fennel and roe. I left half of it too. It was really a disappointment. The quail breast was also chewy and tough, I left it as well. Basil soup granita was lovely but my goodness we didn't receive that until so late, we waited 40 minutes for that, ridiculous. Chocolate cake very good but again that was served so late by then we were over the whole experience. We had matching wine pairings. Unfortunately the wine waiter would bring them way too early, as in half an hour before we even received the course it was to go with. In the past few months we have been to 4 up and coming restaurants serving a degustation menu in Sydney. They were so delicious and innovative that it was very hard for us not compare to our experience at Tetsuyas. I think Mr Tetsuya has been left behind and needs to up his game. I recommend Sepia, Ossilate Wildly, Marque or Cafe Paci. Mr Tetsuya needs to be as inventive as those four restaurants above to stay in the game.

Lovely Visit. My fiancee and I wanted to go for a while, and when we finally did, the food was divine and came out rather quickly, we were expecting a 4 hour dining session we spent a total of 2 hours 50 minutes there. The atmosphere was nice and the wait staff attentive.<br/><br/>I also ordered the matching wine list which was exquisite.<br/><br/>My only issue was with the sommelier. Couldn't get the order straight after repeating myself 4! times.<br/>I wanted the matching wines, my partner wanted the mocktails. Four of them to be precise one of each. I was going to help him finnish them to help sober me up.<br/><br/>So the sommelier asks over and over if I wanted matching wines for 2 people, when I clarify it, he brings out x2 sets of mocktails of the same type. Besides that guy, the visit was lovely.

I guess Australia lacks a lot of these high end restaurants which give those that are an opportunity to get away with an average experience. The food is innovative however the whole experience is lacking in sensation. No music, outdated settings and a general uncomfortable feeling for yourself and possibly your guest. Won't be back. I sure you can do better tetsuya - don't get complacent.

Delicious and dissapointing. Over two days we (there were three of us) decided to visit both Quay and Tetsuya. Both we agreed were dissapointing. At Tetsuya the food was delicious, although we all agreed that some hit the mark others didnt and a couple were wonderful, especially the trout. When i mentioned my trout eating pleasure to the waiter she almost sniffed at me with the retort "it must be, it is our signature dish". There was a tone to her comment which bordered on pretension. It was not said with a friendly interested helpful tone it was at best unnecessary, at worst rude,<br/><br/> I enjoyed a glass of champagne and another companion enjoyed a glass of wine. When we were greeted initially by the waiter he proclaimed "i will be looking after you tonight". He then disappeared never to return to us, when he realised we were not there for the alcohol, and he was replaced with our less than friendly waiter. This may absolutely not be the case, but perception is important and that is certainly how it appeared to us, especially as other diners who were drinking copious amounts of alcohol seemed to be receiving much attention. In line with this lack of care 'atmosphere' the goodbyes we received at the end of the evening were significantly less effusive than our welcome had been.

An amazing experience on the whole.<br/>Each dish celebrates the fresh produce and a twist on the modern Japanese and Australian cuisine really shines through in the dishes. Confused...but still brilliant!. I have been fortunate enough to go a few times now and I think the more you go back the more it loses its appeal on me. However, I will admit that it is an extraordinary experience and definitely one worth trying. Making a reservation at Tetsuya’s is not an easily accomplished feat – it is one of the few top-end restaurants in town that is constantly packed night in, night out. Sure enough, we arrived to a chatter filled restaurant. <br/><br/>We had a good table at the back of the restaurant, which overlooks the beautiful Japanese garden. The service was prompt, welcoming and efficient throughout. The highlight was the food, every course was of a very high standard with fresh ingredients and beautifully presented. <br/><br/>The stand out dish, apart from the cake, was the confit of ocean trout, which is Tetsuya’s signature dish, and to die for. The venue may be swish, the fixtures and fittings expensive, but when it comes to the food, much of the wow factor is down to high-class ingredients that haven’t been messed around with too much – well in some cases. <br/><br/>As you can appreciate, Tetsuya’s comes with a steep price tag; you are looking at $220 per person without the matching wines. I actually really love this place. I love the concept of it and I think the food is lip smacking brilliant. Aside from a few duds on the menu it is a truly a great experience.

UNFORGETTABLE. Having been aware of the reputation of this Sydney landmark for many years, I planned that on a trip to that city for my husbands 40th we would be sure to include a dinner booking. The night turned out to be the most memorable of any restaurant experience we have enjoyed in 10 years of marriage and after dining out in many different countries. It was not just the extraordinary food which delighted us but also the amazing but not over the top service and attention, particularly from our waiter Adam - a consummate professional who also had a lovely manner and an innate ability to know just when to revisit our table and how to make us feel truly special. It was not an inexpensive evening but worth every cent in our opinion.

Great degustation!. After 6 years, I made another visit to a Tetsuyas to celebrate a friends bday but this time we went during lunch time. As the restaurant wasn't busy, the diners were seated in one room and as there was a small group of diners to look after, I felt service was even better! Staff were professional and friendly and the degustation was again very good, every course beautifully presented and delicious. I enjoyed their salad of the sea, marinated scampi and of course his signature dish of the confit ocean trout. I really enjoyed the lychee granita with strawberries and coconut which was a refreshing dessert and Tetsuyas chocolate cake was a sweet way to finish the meal.

Spectacular. An extraordinary experience. Intricate dining is one way to describe it. Not a thing on your plate doesn't deserve to be there; flavours work in perfect symmetry. Attention to detail is everywhere at Tetsuya's, from the plate to the staff - everything you come in to contact with. This is the near perfect dining experience! We enjoyed the 10-course degustation menu, not a flaw at any course.

Hmmm.... chocolate cake..... My wife and I had a Saturday night dinner here in November for our 10 year wedding annivesrary. Two words - chocolate cake. I am not much of a dessert person but this was the best chocolate cake I have ever had! <br/><br/>Pleasingly we sat away from the larger tables as per the request I had made.<br/><br/>The food and service, as you would expect, was fantastic. The stand out dish, apart from the cake, was the confit of ocean trout and my wife really liked the truffle butter that came with the bread!<br/><br/>The service was really nice and warm and not at all pretentious or mechanical like some other fine dining restaurants.<br/><br/>I wasn't entirely convinced the matching wines matched that well but then again, I am no food-wine expert.<br/><br/>Many would say this is a must-try place and while I agree, the main difference between here and other places of this ilk is I would go back.

Incredibly special and deserving of their reputation - from the location, to the food, to the service. Anything with seafood is a real standout and the matching wines are well worth the investment. But what made it really special was the gift of the Parmesan truffle butter as we were leaving (which is jaw droppingly good and I may have inhaled) along with the recipe for making it.

Visited Sydney and had to try the legendary Tetsuya's.<br/>Could only get booking for Sat lunch - which turned out great as with lunch one can enjoy the Japanese garden outside and be more relaxed.<br/>4 hour lunch from 12-4, and time passed quickly. Every dish excellent, and there never seemed to be any long wait between courses. <br/>Wait staff very friendly and not stand-offish. Got chance to look around the restaurant, visit main and pastry kitchens as well admire the show kitchen.<br/>5 stars, but of course at a 5 star price. Well worth it and a special experience

Expected More. Took my wife here for our anniversary. Admit that the place is amazing and really enjoyed the Japanese garden outside. The food was good, but I'm not convinced that it was worth the price. Signature dish (Atlantic trout) was overly salty and the dessert (Floating Island with Praline & Crème Anglaise) looked like a pile of mush. It felt like Tetsuya had his mind on his other restaurant in Singapore. For the price you'd get much better quality food elsewhere.

A "must do" - but only once!. Have been looking forward to this experience for many years - 50th birthday seemed like the right occasion so off we went. Unfortunately like so many things you look forward to for a long time the actual experience was a bit of a let down. Could not fault any one dish - all were beautifully presented and delightful to eat - but when put together they did not take you on the culinary journey you might expect. The service was efficient but we felt like we had been "processed" rather than served - the only positive interaction was with the wine waiter, who else, who managed a few lines of non rehearsed conversation. Unfortunately we had a table in the corner that meant one person looked at the wall all night and the other had cool air blowing down their back - why overlook a beautiful garden and keep the wooden blinds down to obscure the view?<br/>Glad to have ticked this off the "to do" list, but will not be back for seconds.

It's good but not that amazing. Tetsuya's was constantly ranked no.1 in sydney for years but I just wasn't as crazy as everyone else. But for that price, and the hours of efforts of sitting down, you deserve better! Presentation is important, but cross the fine line you would get to pretentiousness. <br/><br/>I swear one of the courses I could cook at home using less than one dollar ingredients with little effort (the steamed egg thingy). It's amazing to see everyday asian food get prettied up, presented in tiny portions, and served in a restaurant with white table cloth to Australians and suddenly cost 50 times of what it's worth. Unique in Australia. My wife and I used to live in the city (King St) and have no kids and hate cooking. One year we decided to eat at every 3 hat/2 hat and even most of the 1 hat restaurants. (Yes it cost us a fortune and a large amount of travel ie to Selkirks in Orange etc etc!). <br/><br/>In my (less than) humble opinion Tetsuya is literally in a class of its own. Quay, Rockpool, all the rest are merely ok in comparison. 4 times we have been not once have we been disappointed. One time was his old place in Balmain that was much cosier. I have dragged non-foodie friends there. Who have never spent real money on food and they have come away impressed. I'm not saying they would give it a 10 for value. But I bet you they still happily remember being and eating there. If you love food do it once at least.

I commend a restaurant that takes feedback seriously, rather than go all prima-donna defensive. Kudos to Tetsuya for being in the pinnacle of their art, yet not acting beyond reproach.<br/><br/><br/>-----03 Mar, 2013-----<br/><br/>Good on the whole. It was exciting to sample Tetsuya's after hearing and reading so much about the legend. Service was on the whole top notch but for one wait staff who was just slightly curt (and I have notified Tetsuya about this). The confit of ocean trout had a konbu coating that reminded me of the flavour/aroma of Indomie's mie goreng. And I say this in a good way. It can't be bad that the world's largest noodle manufacturer also uses konbu in their flavouring. All in all, superb service and a degustation most pleasant. Yes, it was good on the whole.

Was it worth the wait?. Like everybody else on the planet I've been wanting to go to Tetsuya's forever. Finally got to go and I'm sill trying to decide if I loved it, or, dare I say, felt completely let down and disappointed? I loved the atmosphere, although it is a little like a museum or a gallery or a church or.....something. But I liked the zen calmness of that feeling and we had a lovely table looking out onto the beautiful garden. <br/>The waiters - we had soooo many of them so it was hard to build a rapport. They sort of wafted up and gave a commentary on what they were serving (half the time at a church-goer volume so we only picked up every third word and guessed the rest). <br/>The sommelier? Obviously very knowledgable but just delivered the script about each wine with no personal touches or feeling - we felt like we were on a very expensive conveyer belt going through the Tetsuya's experience. It goes without saying the wines themselves and the pairing was divine. <br/>And the food -? Honestly am still trying to decide if I liked it or not. No doubt perfectly presented and visually astounding. Definitely fresh, innovative. But I expected that, didn't I? I was expecting corresponding flavours and I dammit didn't find that! I also felt the texture of everything was a little too - dare I say it? - slimy, or too soft, too poached or something. And everything was just a little (oh the horror!) bland -? <br/>I feel ashamed to have come away from what was such an exciting event feeling this way and I did enjoy the experience overall, but I'm honestly not sure if it was worth it. I've been to other multi-hatted restaurants and never come away feeling so ambivalent. <br/>Will I try again -? Maybe. Maybe not.

Massive fail. Have been wanting to eat here for years, the staff that they train are the best in Sydney.... However, was so disappointed!<br/>Only 4/10 dishes pleased me, huge waits between the last few courses for no reason other than... waiter forgot to call away repeatedly! Then try to blame it on the Sommelier, who was the only redeeming factor! Lacking the natural spark with us, made up for it with his knowledge, and all the drinks were exquisite!<br/>Venue was a little sterile despite the lovely outside garden, an oasis in the city and I did like the artworks, a especially intriguing sculpture alog the walls.<br/>All in all, feel almost guilty our friend had to foot the bill as a treat as it was not a satisfying experience, and from what I've heard of the gold standard of the "old days"... obviously Tet is no longer in the kitchen.

Overpriced & underwhelmed.... I've tried desgustations in a number of restaurants but I can't claim to be a connoisseur. I also generally go into the experience with high expectations and almost everytime I have found myself wonderfully surprised. However, Tetsuya has by far been the most overpriced and underwhelming culinary experience. It was good but there was no WOW factor, no flavouring surprises, no "Goodness! How did they make this?" or "What is this flavour?" etc. The ironic thing was, when we asked the staff who served our food what the components on the plates were, they could not answer... There was only one staff who serviced the entire floor, Tricia, who could actually tell us what it was that we were eating... <br/><br/>Honestly, Tetsuya made me think of perfectly cooked high-end pub food, served in small and tiny portions with an exacerbated bill. <br/><br/>It wasn't bad. It was "good". But it wasn't amazing or even "awesomely good" to justify the price, the hype, and befit the occasion we especially booked Tetsuya for... Our table of 6 were sorely disappointed. <br/><br/>Also, we found the atmosphere lacking. We were seated upstairs in the corner and there was not much of a view or mood lighting. The chairs were a slight upgrade from the highschool classroom plastic chairs... Sorry, not worth $250 per person experience... Definitely do not want to go back. Pity.

Wow - can't believe we got a table! With a last minute trip to Sydney booked we knew it was impossible to get a table at Tetsuya's on a Friday or Saturday night - and there was a scoff down the phone when I asked. But then I nearly fell off my chair when they confirmed a booking for Saturday lunch! So come Saturday our long awaited desires were fulfilled. The moment we stepped in to the domain of Tetsuya's we knew we were in for something special. The atmosphere is a bit museum-like and the service is very attentive - perhaps a bit too so for my liking but still excellent. The lunch menu is the same as the dinner menu - 10 course degustation for $210. And I think the whole Tetsuya's experience justifies the price. For another $90 we could've matched wines with each course but we chose to do our own thing. And it's a good wine list - ie there's a good price range so you don't have to blow your booze budget. The dishes were very good - not Michelin starred but the best that I've had in Australia. What a great way to spend an afternoon! Would I eat here again? If budget wasn't an issue - yes.

Hands down the best and most memorable dining experience of my life! I ate here a year or so ago, and I still dream of going back. From the moment you arrived you feel special, and the waiters and sommelier were so friendly and attentive.We started with a cocktail in the lounge, then moved to our tables with a beautiful view of the Japanese garden. The degustation with matched wines was heaven and I could not have asked for anything more. As we were not dessert lovers we were treated to a beautiful cheese platter instead. Worth the price, the journey from Melbourne and would love to go back and sample another menu! BIG thumbs up Tetsuya's!!! Perfection.

Tetsuya's is a much lauded restuarant but I have to say, I don't think it lived up to the hype. It is in a beautiful setting and the atmosphere is good but surprisingly it was the food that let this experience down. The first two courses of warm soup of celeriac and savoury custard were good but not spectacular. Most of the courses in between were similar in that they were good but not life changing or revolutionary. The confit of petuna ocean trout was excellent though and was definitely worth the wait. We were supremely disappointed with the steamed spanner crab and thoroughly unimpressed with floating island dessert. The petit fours were sublime and did perk up the end of the meal. All in all the food was good but for the cost I dont think this degustation was worth it. An experience but not one we will do again.

Bliss, thy name is Tetsuya!. We booked for a Friday lunch, three adults and two kids and were treated fantastically! Proving that a five star, fine-dining rating doesn't require you to look down your nose at families. Personalised service from Hugh was faultless, as was the food which goes without saying. We chose the full performance with 12 courses accompanied by wines and sake and what followed was a well paced, knowledgably heralded, delightfully presented afternoon of indulgence that we will never forget. Four hours later we emerged stunned at the quality of the entire experience with the staff going that extra mile at every turn. Worth every cent!

Another must miss for such name and reputation it was one of the biggest let downs... The food was cheap and unsophisticated it had no hidden subtle flavor no delicate aroma and no fine dining feel about it whatsoever.. If anything you get the feeling that you had your food prepared by a cook not a trained chef, the fish cuts are substandard the quality of roe in the signiture dish was poor. Their meats are of standard quality.... The wines were not matching... And there own wine label is rubish 5 dollar per bottle wine. For the price they are charging you feel like you've been ripped of such low quality food at such a high price... Clearly they are milking a dying reputation doesn't deserve a chef hat cause no chef will put their name in food we got served last night.

I went for a surprise for my girlfriend and to be honest it was very average. The oysters and trout dishes were amazing but the other 8 or so dishes were hardly rememberable. The cocktails menu is basic when considering you are there for 4+ hours they could make something a bit more daring. Very disappointed not sure what all the fuss is about?

Good? Yes. Spectacular? No. The atmosphere and the service was good. But was definitely expecting a lot more wow factor for the price paid. The food was good, but not for the price. There are so many other restaurants which serve better and creative dishes for less. so nothing spectacular. Disappointed because it fell shorter than expectations.

Divine. I absolutely enjoyed my Tetsuya's "experience" - because let's face it, that's what it is right? I'm not going back every week because of the cost and booking period. Booked it for a date with my man and it was exquisite. We enjoyed the food, the small portions, the attention to detail and freshness - and left full (yes full), happy and satisfied. Thoroughly enjoyed it and would recommend a Tetsuya's experience for those who are still sitting on it! Bon appetit!

Getting boring. I have been quite a few times to Testsuya's from when they first opened... if you go often enough, the menu starts to get boring and it's not too special. The taste is good. But for price, you can get more elsewhere. Lately it's starting to get a little boring.... As with all degustation, they cook in big quantities and give you and the other 100 guests a little, but try to decorate it so that it is presented well. The bread is good. But again, individually you can get the same quality elsewhere for less. Likewise with wine. For deserts, it's probably more worthwhile to go to a specialist desert shop. It used to be good for a special occasion. But over the years it's just got boring. Hope he opens a new restaurant and goes a different direction. He surely can with all the money he makes cooking mass quantities of food and taking a fraction of what is cooked to separate it on your plate. Less is more =)

Service was attentive and interesting, the food simply amazing,vino generous, timing perfect, decor and Art beautiful but more importantly we were made to feel so incredibly welcome.<br/>Afterwards we progressed into the bar overlooking the Japanese gardens and pond and simply reflected on the truly incredible dining experience we had enjoyed....so, so much.

Its quite clear if this restaurant is top 5 in the world the guy from my hole in wall Chinese in Balmain deserves a free trip to the moon and a spot on Iron Chef.. Beautiful setting but the food just did not bite.. Taking price out of it.. Which is very hard to do .. The menu needs a rethink... May be I'm missing it. And it is that good.. Don't know..

By chance we got a booking. Well worth the cost. The food was out of this world and nothing else compares. The service was remarkable and friendly. If you're looking for a cheap or quick meal this isnt the place for you. If you can appreciate good food and can spend an evening enjoying food, dont miss out on tetsuya's!!

Four Hours +. Tetsuya's... hmm where to start....<br/><br/>The good:- The presentation of the food was AMAZING, the service was out of this world the waiters were super friendly, warm, accommodating, funny couldn't ask for more... (maybe Rockpool should send their staff to Tetsuyas for training) <br/>The Ok:- The food was good but for the price I expected more... The best three courses were the kingfish sashimi, the wagu and the chocolate fondant dessert was out of this world.<br/>The Bad:- The room was freezing we asked four times for the aircon to be turned up or off we noticed everyone in the room putting their jackets on which doesn't make for a comfortable meal. The setting was ordinary. We were sat upstairs in what felt like a conference room it even had a projector on the ceiling... And the worst part of the whole day! The waiting time between courses 30 minutes WAY to long from start to finish it took four hours... I love a long lunch but four hours is ridiculous... I was over it by 3pm...<br/><br/>If they speed up the meal service it would be great!

Very good, very expensive. Probably would never have gone if we didn't have a gift certificate as it's pretty expensive (understatement), but we are glad we have good friends, and it was well worth spending the extra to do the wine progression.<br/><br/>Hope to go again one day when we're earning seven figures!

Beats the heck out of Waku Ghin. I last dined at Tetsuya's in 2006 and have good memory of the enjoyable evening with paired wines, even whilst under the influence. However, my last encounter at Waku Ghin in Singapore's Marina Bay Sands casino complex left me with severe food poisoning even before I had started on my desert. And the staff stood-by non-responsive then. It completely shattered my faith in Tetsuya.<br/><br/>However, the beckoning of my dad's wish to dine at the Sydney establishment was one I couldn't deny. Furthermore, given the previous year's reason for Traveller's downgrade of this outlet 'boring compared to Singapore' was in fact a hint to me of consistency of the restaurant. <br/><br/>We had an early booking for 6.30pm with the expectation of leaving by 9.30.. how wrong I was.. the night ended at 11.30pm and I left in jolly spirits. The service is of high standard, our server Michael explained the design of the courses well, and I was very impressed with his attention to detail by swapping the cutlery position of Mum's to accommodate her left-handedness.<br/><br/>The wine list is compact but offers a well-represented range of wines, mainly Australian and French (of course). I would have liked it if the Sommelier had offered an explanation of the possible food and wine pairings. Or even made an attempt to suggest a bottle or two if variety was not sought for the evening. I think this can be improved upon. I ended up with a Pierro Chardonnay 2008 and a Torbreck Grenache shiraz 2004. Both are 'Made for Tetsuya's exclusives and the former matched the Kingfish sashimi very nicely.<br/><br/>The dishes were all nicely prepared, presentation has plenty of colour and texture. The spanner crab meat was probably the biggest let down of the night, and this was fed back to the kitchen, with an offer to provide us another dish (which we declined). The meats were all prepared to close-to-perfect levels. Lovely desserts to finish off the night.<br/><br/>There is nothing boring about Tetsuya's Sydney. If you want honest-to-goodness finer dining in Australia, this remains one of the consistently enjoyable venues without you feeling ripped off when it's time for the bill. <br/><br/>It's obviously one of the more expensive restaurants in Australia, but hey, what's a little luxurious splurge every now and then?! You're worth every penny of it.

We were so excited to dine finally at Tetsuya's after 6months waiting. Service was great and food was very nice, but I'm not sure if it's really worth $$$. We expected more total wow factor but desert was the only thing all of us were blown away.

An experience. Wow, I was blown away by the professional, clockwork like service of Tetsuya's. Within seconds of walking through the doorway we were sipping Bollinger and being walked through that nights special set menu.<br/><br/>We took a culinary rollercoaster ride from fresh oysters to ocean trout (omfg) and finished with 3 amazing dessert courses whilst enjoying matching wines, some of which are exclusively made for Chef Tetsuya's creations.<br/><br/>The only sour point of the night amusingly came once we arrived in front of our home after our 3.5 hr degustation adventure. Our taxi bill was over double the cost what it normally would be due to the "Silver Service" special order the restaurant made for us. If you are not fussed to walk out to the street and hail a cab yourself, I would recommend doing this!

Friendly, prompt, proffesional and still relaxed.<br/>The food was just sensational. We loved every course and the whole experience.<br/>Would I return??????Tomorrow if I could.<br/>FYI lunch went from 12-4:30 including bottles of wine, coffee etc.

Disappointed. Perhaps I had too high expectation, but when it claimed to be world class restaurant, shouldn't it deliver a breathe taking experience? It didn't. <br/><br/>The atmosphere was not glamorous but comfortable and homely, which I like. The marinated scampi, avocado and caviar was the highlight. While I was amazed with how delicate its signature dish was cooked, the confit ocean trout with conbu, I can't help to think the conbu taste a bit like the sachet in the Mamee monster snack. The desserts were disaster. Not much technique involved and I can easily get the desserts elsewhere with much cheaper price tag. I can see why it was a top restaurant many years ago and how impressive the dishes were. However, with so many new chefs springing out from the industry every year, Tetsuya really needs to revisit the menu and spend more time creating something new to maintain its world class fame. It didn't surprise me when it was downgraded to 2 hatted restaurant this year.<br/><br/>In summary, the ingredient quality was high and luxury, better than some 2-3 hatted restaurants but the technique and flavour was not mind blowing. With $280 per head and a plane ticket to visit, I did expect more.

Delicious experience!. What an absolutely fantastic experience. 12 courses spread across over 4 hours and a great selection of wines to match. Tetsuya's is definitely one of those places you have to go to once, just to experience the unique combinations of local produce and his own individual style.<br/><br/>The space was nice without being too pretentious and the staff were great; cheery, funny (yep...funny), very helpful when aksed questions about the food and the restaurant and attentive without being intrusive.<br/><br/>I was surprised to see a lot of the other tables using cameras with flash. I know the food is amazing and it's a long wait to get into the restaurant (almost 6 months for us) but taking multiple snaps of every dish that comes out from every angle is an annoying distraction to other guests who just want to enjoy their meal without having a flash go off in their eyes every five minutes.<br/><br/>Anyway, it's been a couple of weeks since we were there but thankfully one of the staff gave us a copy of the menu to help jog my memory.<br/><br/>The breads were great with a nice choice of sourdough and white that felt like they'd come fresh out of the oven. These rate a mention for the truffle butter they came with. Wow. Simply "wow". I wouldn't have thought a simple butter would stick in my head but I'd love to know what was in it (apart from the truffle that is!).<br/><br/>Anyway...first up was the warm chestnut soup with smoked cream served in little espresso style cups that was delicious with loads of flavour and a subtle smokiness that lingered.<br/><br/>This was followed by the pacific oysters in rice vinegar and ginger; a very nice combo that worked really well without ruining the fresh flavour of the oysters.<br/><br/>The sashimi of kingfish with blackbean and orange stuck out as a favourite for a couple of us and being one of my favourite raw fish this dish didn't last long on the plate.<br/><br/>We'd had fresh sea urchins recently in Vietnam in both a porridge and pretty much au naturel so having it as a custard was a real treat. Again, lots of subtle flavours that really worked without being too salty.<br/><br/>Next up was Tetsuya's signature confit petuna ocean trout with konbu, celery and apple. Absolutely brilliant. This has got to be one of the most photogenic dishes I have ever seen and almost too pretty to eat but eat it we did! The konbu is a fantastic savoury counterpoint to the sweetness of the trout but the celery/apple mix it sits on takes a few bites before it starts to work. This was close to being my highlight dish for the night.<br/><br/>The john dory with ajo blanco and pil pil was a bit of a mixed result for the group and not a dish that really stuck in my mind...more of a neutral dish before the next one.<br/><br/>Which was the braised ox tail with sea cucumber and lotus root; very sticky meat which pulled apart with the slightest pressure and tasted fantastic. The sea cucumber was an intertesting texture and had almost no flavour (I think I'd have to eat a lot more to get a better handle on it) but the lotus root really made the dish work with the slightly crunchy texture and sweet flavour.<br/><br/>The next course was the roasted breast of quail with germinated seeds and lardo. I don't think many of us were too keen on the lardo as it's texture and flavour didn't seem to work with the breast. I guess it was there to help keep the meat moist but seemed to make the actual eating of it a bit on the "icky" side (okay...it's the best word I could come up with!).<br/><br/>The last main course of the night was the de-boned rack of lamb with eggplant and white miso. This was a bit hit and miss as some of us ended up with nice (almost) rare lamb and others with medium. Luckily mine was rare and sliced very well with little pressure and tasted fantastic. For me it's a toss-up between this and the confit of ocean trout as the best main dish of the night.<br/><br/>The desserts you could almost do without. The goats milk ice-cream with sorrel and granita was "nice" but the real kicker for me was the bread and butter pudin and tarte tatin which had loads of flavour and wasn't what I expected from a bread and butter pudding.<br/><br/>The spiced carrot cake with cream cheese ice-cream and salted peanuts was about the only dish that pretty much got a "thumbs down" from the group and was probably one dish too many.<br/><br/>Those of us who chose the coffee enjoyed it...nothing to write home about but it was a nice way to round off the meal and the macarons at the very end weren't anything to write home about either (I've had far better from "the patisserie down the road") but they filled in the last remaining empty pocket in the stomach.<br/><br/>At the start of the meal we decided to go with the matched wines which was a good decision. I'm not going to go into great detail on these as a couple of them almost felt like "fillers" but the Tamano Hikari Tokusen Junmai Ginjo Sake (there's a mouthful), the 2010 Skillogalee Gewurztraminer and the 2009 Bass Phillip Pinot Noir really stoood out for me.<br/><br/>Best advice? Order the matched wine, loosen the belt and enjoy the experience...oh, and don't look at the bill...don't look at the bill...don't look at the bill... ;)<br/><br/>Now...if I can just figure out how that truffle butter went together!

Restaurant Tetsuya's. 7/10 It was a fixed 12 course. Quite a lot! Same course as dinner, it was 210 AUD a head. Holy pebbs! I think they should cut some dishes for lunch and make it 150 with a glass of champagne inclusive. then id like to go there again. for now, i feel like this was another one of those "try once in your lifetime" experience. But the atmosphere is really modern with classic Japanese architect design. Really beautiful and some of the dishes were delicious. But nothing to be remembered of. Here are the dishes... 1.chiiled cucumber soup sour in a nice way, apples make a good punchline 2.yellowfin tuna sashimi interesting... 3. scampi tail with goat curd scampis sweet, not sure abt the goat curd... 4. confi ocean trout delicious, the sigmature dish was nothing disappointing, the conbu sprinkled on the raw fish is very tasty. a lot of meat! very tender 5. malloway smelld good, delicious,crunchy skin, probably my most favourite dish. very japanesy, compared to the rest. 6. oxtail sea cucumber wirh renkon eat separately better. ox tail was incredibly tender, very tasty. hint of yuzu was good. 7. roast duck wit eshalot n foie gras more yummy wen u mix everything together, tastes like ham with really milky after- taste. 8. lamb yum eggplant and white miso... thumbs up for the eggplants really. 9. melon sorbet just like real melon with some kind of honey jelly at the bottom... the sorbet bit was refreshing. 10. apple caramel tarte yum! yes, yum. 11. fig ice cream is yum... fig?? doesmt really go.., 12. chocolate cake and cream cheese ice cream good when mixed together, really rich and quite big! The white wine we had went well with the fish though. We shared a glass of white wine with tetsuyas name in it. We stayed there three hours... got sum macaroons to take home. should try at least once though, especially on a special occasion!

Tetsuya's is quite full of itself, as are<br/>the waiters who seem intent on teaching you how to eat your own meal, as if you'd never laid eyes on proper food before.<br/>And it seems like no one dares say anything bad about the place... But compared to other top class restaurants around the world-- and even around Sydney--- it is all in all a ho-hum experience. Only 2-3 really good dishes out of the ten or so placed before us amidst a whole mise-en-scene of haughty long-winded descriptions.<br/>Unless you are sucked in by all the self-promotion....

I felt it was too factory like and the only mouthful I truly enjoyed, apart from the copious amounts of wine that the waiters generously served as a part of the meal, was a single taste of white beans with caramel. This was our second dinner at Tetsuyas and the service and atmosphere remain world class. The staff make you feel like the most important person in the place. However the food was a little lackluster The dishes are great let down by the baramundi and the canoli bean creme anglais experiment thankfully dropped The problem is that not many dishes truly stand out And the desserts don't stack up with what else is available for less money in sydney nowadays

The only Sydney restaurant I've been to that feels truly world class. An amazing line up of dishes that are unique, well executed & memorable. A great venue for that special evening. Having said that, there were a couple of issues with service which really left a blemish. eg. forgetting to bring the wine to match one of the courses and forgetting to bring the macarons until after the bill was settled. We hope Tetsuya's can work hard in the coming months and regain it's Third Chef's Hat.

A master degustation worth the wait!. We dined here with friends last year and the whole experience is choreographed from the moment before they open the impressive double doors until you have left. We didn't eat in the big dining room (something for which I am glad - it was a bit noisy with so many people), but in a smaller, more intimate room with perhaps four other tables. I don't normally appreciate seafood very much, and it is a testament to the skill of Mr Tetsuya and his kitchen that I relished every mouthful of the evening's 13 courses. The waiting staff were impeccable; the decor and ambience exceptional. The dollar amount for a night like this shouldn't be a consideration, but it is what you might expect to pay for a restaurant with a 3-6 month waiting list. Oh, and there is off-street parking (I'm not sure if use must be pre-arranged).

Amazing!!!. This is one of Australia's top restaurants for very good reason...it's BRILLIANT. Every dish is unique, intelligently crafted and incredibly fabulous. The wines chosen by the Sommelier were just as incredible. The dining room overlooking the pond is bland but thats good once the food is served because all you can focus on is your plate. Not one step was out of line with this meal - dining perfection :-)

Unbelievable. There is a reason they are consistently ranked in the top restaurants in the world. You will need to book a long way in advance particularly for a Friday or Saturday seating, it's well worth the wait! The service is excellent and the food is sublime. You will be taken on a sensory journey that you will not forget. Each course will move your palate along in the perfect order. The wine package is a must (get someone else to drive) as they match them perfectly. If you don't enjoy wine chance are when they are selected correctly you will appreciate them better, I sure did. Treat yourself to the experience, you won't regret it.

A bit unpredictable. We decided to try this place after several mixed reviews. The food was good but the ambiance was terrible. We were stuck in the back room because we had a table of 6, and it was so loud back there that we could not hear what the waiter was saying! The lamb was also very rubbery, so much so that one person on our table had to spit it out. <br/>The stand out dish was the signature trout dish and the oyster. Tetsuya is good, but no way top 5 in the world.

Baramundi with seaweed and black bean and something sauce Eh Duck with beet purée It was a little gamey The cabbage was all wrong Veal with wasabi butter At first I thought the wasabi was overpowering but it worked in the end Transition course White beans caramel and creme frece Pineapple and armaretto sorbet Amazing!!! Thick Chai tea Yum and fun Raspberry bread pudding with white choco mouse and custard on the bottom Amazing!!!!! Chocolate cream in some white sauce with a hard Mocha stick It was ok.

An Absolute Perfect experience. I love this restaurant. Any celebration I have, this is the restaurant I want to have it in. My now 12 year old daughter celebrated her 8th and 10th here with us. She also loves all the meals that she can fit in of the 12 courses. The food has been perfect everytime i've been there in the last 6 years. The signature salmon dish is mouth watering. The menu changes from time to time, and the new dishes are the experiences i look forward to. i love how the ingredients are perfectly complemented with each other and the following dishes. Thank you for having an outstanding restaurant in Sydney

To die for. Tetsuya's is simply the best restaurant I've ever eaten at as I could not fault a thing. Each course (all nine) provided spectacularly unique tastes, were perfectly executed, and together provided a unique and decadent dining experience. The service is also impeccable and the restaurant is beautiful, providing the closest thing to dining perfection imaginable. It's pricey, but at over 4 hours it was an experience, not just a meal, and is worth every penny. Now if only I could afford to go more often!

Perfection. This is one of the best restaurants in the world. Whereas The Fat Duck seems like a (quite fantastically good) one trick pony, I would want to come back to Tetsuya's over and over again. Given the length of the meal, the quality and quantity of the food, the high price tag represents excellent value for money.
